CHERRY BOMB JELLO SHOTS
A friend and I were experimenting with cocktails we like to drink as jello shots. We came up with this recipe and served them at our Cinco de Mayo Party. They were a HIT!!! They went down WAY too easy!!! I try to watch my sugar intake, so we used sugar free jello and sugar free red bull!

Steps:
- Mix Jello with 2 cups boiling water. Once disolved set in fridge to cool for 10 minutes. Add red bull and vodka and stir until blended. We use the little paper dixie cups to pour into. Chill until firm and serve.

- Mix with beater.

BLACK CHERRY JELLO

Steps:
- Dissolve Jell-O in 2 cups hot water. Add 1 cup cold water and the juice from the cherries. Add cut up cherries and pour into 13"x9" glass pan. Chill until firm. Mix softened cream cheese with sour cream. Gradually add sugar and vanilla. Add pecans and marshmallows. Spoon on set Jell-O.

Sweet or sour cherries can be used. I used sour because that is what grows on our tree. Got this off the internet and altered it somewhat. No need to pit all those cherries. This one is easy! Time to make does not include time for water to boil in water bath canner.

- TO MAKE JUICE:
- Select fully ripe cherries.
- Softly wash. Remove stems. Do not pit!
- In large pot, crush cherries (I use a potato masher.).
- Add 1 cup water to crushed cherries.
- Bring to a boil over high heat.
- Reduce heat and simmer for 10 minutes.
- Strain juice through a jelly bag or cheesecloth. (I use a fine mesh "sifter" lined with a coffee filter.).
- Toss pits, pulp, and peels.
- TO MAKE JELLY:
- Measure 3 1/2 cups juice into large pot.
- Add pectin and stir.
- Place on high heat and stir constantly.
- Bring to a full rolling boil (that can't be stirred down).
- Add sugar, continue stirring and bring to a full rolling boil once more.
- Boil hard for 1 minute.
- Remove from heat.
- Skim off foam.
- Ladle into hot jelly jars leaving 1/4 inch headspace. Apply lids and rings.
- Process in hot water bath for 5 minutes.
- Note: I used 1 gallon of cherries and had a little more than 3 1/2 cups juice. Of course, it also depends on the quality of the fruit.

Steps:
- Bring water to a rolling boil, then remove from heat.
- Stir together boiling water and powdered gelatin in a mixing bowl. Stir constantly until gelatin is completely dissolved.
- Stir in cold water and alcohol.
- Pour mixture into ,individual shot-size (1oz-2oz) plastic or paper cups. ****To make the Jello easier to consume, buy plastic cups that also have lids. Pour the mix into the cup, add the lid, then turn it upside down prior to refrigeration.
- Place shots on a tray in refrigerator (not the freezer). Chill until firm (approximately 2-4 hours). Refrigerate until served.
BING CHERRY JELLO MOLD
My friend Naomi gave me this recipe some years a go. I love it and think it is the prettiest color for a Thanksgiving or Christmas dinner table. I've never added the pecans because my father will not eat nuts but I think they would be very good in it.( Cooking time includes refrigeration time)

Steps:
- Drain pineapple, drain cherries and save the cherry juice.
- In a saucepan combine the cherry juice with the cola. Heat until boiling, then stir in the gelatin. Mix until gelatin is dissolved.
- Remove from heat and stir in the drained pineapple, drained cherries and pecans if you are using them.
- Spray gelatin mold with cooking spray and pour in the gelatin mixture.
- Refrigerate at least 24 hours before unmolding.
