This is my very favorite squash and it is a complete meal! One hint may be to have help with cutting this one open. It is very hard shelled.

Time 2h

Number Of Ingredients 9

1 medium turban squash
1 lb seasoned pork sausage
1 1/2 c seasoned salad croutons
1 medium white onion
4 clove fresh chopped garlic
2 medium red and yellow peppers
1/3 c olive oil
4 dash(es) each salt and pepper to taste
1 can(s) 14.4 oz. can of stewed tomatoes

Steps:

  • 1. Pre-heat oven to 375. Wash and open the turban squash and clean out the seeds and loose pulp.
  • 2. In a heavy pan, season with olive oil and add onions, garlic and peppers (chopped) and tomatoes. When veggies are starting to cook add sausage and one can of seasoned tomatoes and cook on low for about 15 minutes. Salt and pepper. Put one cup of the croutoins on the base of the large end of the turban squash.
  • 3. Next, add sausage mixure in the squash over the crouton and add the rest of the croutons on top (what you can fit).
  • 4. Put top of turban on the larger portion and place in a large oven proof dish or bowl with about 2 cups of water at the bottom.
  • 5. Cover with foil and place in the oven for about 1 1/2- 2 1/2 hours.
  • 6. No need to check on it untill about 1 hour in. Its OK if water is gone but make sure it is cooking. Should be done in 1 1/2 hours depending on the size of the squash.
  • 7. Enjoy with fresh green salad and some french bread!

TURBAN SQUASH PIE RECIPE - (4.5/5)

Turban Squash Pie Recipe - (4.5/5) image

Provided by palmerinteractive

Number Of Ingredients 9

3 Cups Winter Squash Pulp
4 Eggs
1 Can Sweetened Condensed Milk
1 Cup Brown Sugar
1/2 Tsp. Salt
1/2 Tsp. Ginger
1 1/2 Tsp. Cinnamon
1 Tsp. Allspice
2 9" Grahm Cracker Pie Crusts

Steps:

  • Cut your winter squash (in this case, turban squash) in half and remove seeds and stringys with a spoon. Place squash, cut side down, into baking pan with enough water to cover bottom of pan. Bake at 425F for 45-60 minutes or until flesh is soft. Remove from oven, flip halves to allow to cool. (Keep Oven at 425F for later step) Prepare your filling by beating 4 eggs into sweetened condensed milk. Add in spices and beat until all spices are blended. When your squash is cooled enough to handle, scoop out the pulp into a separate bowl and beat using egg beater or potato mashing tool. (If you have a food processor or electric hand blender, use instead for this step) When pulp is smooth and more consistent, add to your filling mix and blend until consistent. Pour mixture into the two pie shells and place back into oven at 425F for 15 minutes. After 15 minutes are up, turn oven down to 350 and bake for an additional 30-45 minutes. Test doneness with a toothpick or knife. If inserted in middle and removed with little pie clinging to metal, pie is done. Now just set it on your counter and let it cool as it warms the room with delicious aroma! When it's cooled to a warm sensation, eat it with cool whip, ice cream or whatever you choose. Warm it up in the microwave if you choose! ENJOY!

SAUSAGE-STUFFED TURBAN SQUASH

Sausage-Stuffed Turban Squash image

Turban squash is a winter squash that looks like a pumpkin wearing a striped green turban. The texture is similar to pumpkin and butternut squash. This recipe has been a long time favorite at Thanksgiving with my family.

Provided by SaraShip

Categories     Side Dish     Vegetables     Squash

Time 2h

Yield 6

Number Of Ingredients 10

3 pounds turban squash
salt to taste
1 pound bulk pork sausage
1 cup chopped celery
½ cup sliced fresh mushrooms
¼ cup chopped onion
½ cup sour cream
¼ cup grated Parmesan cheese
1 egg, slightly beaten
¼ teaspoon salt

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Line a baking sheet with aluminum foil and lightly grease foil.
  • Cut the top off the squash using a serrated knife and scoop out seeds. Lightly salt the inside of squash. Place squash, cut-side down, onto the prepared baking sheet.
  • Bake in the preheated oven until tender, about 1 hour.
  • Cook and stir sausage, celery, mushrooms, and onion in a skillet over medium heat until sausage is browned and vegetables are tender, 10 to 15 minutes; drain excess grease.
  • Combine sour cream, Parmesan cheese, egg, and 1/4 teaspoon salt in a bowl. Stir sausage mixture into sour cream mixture.
  • Scoop the meat from the inside of squash, being careful not to tear the skin. Mash squash meat in a bowl.
  • Spoon some of the sausage mixture into the hollowed squash, making a ring. Spoon a ring of mashed squash over sausage mixture. Continue layering until all the sausage mixture and mashed squash are used.
  • Bake in the oven until heated through, 20 to 25 minutes.

TURBAN SQUASH SOUP

Turban Squash Soup image

Turban squash taste just like any other squash - but what an incredible visual effect! With dramatic orange-and-white stripes topping off a brilliant red bottom layer, the turban squash itself makes a stunning "bowl" for the soup, a simple way to bring photoshoot-worthy glamor to your own table. It's a recipe that kids are sure to appreciate, and even grown-ups can't resist the exotic beauty of such an unusual vegetable. If you're cooking for more than one, this can get a little tricky (since you only need one squash for the soup), but you could always just buy more than one squash and save the flesh from the extras for another recipe. Most squash recipes are pretty flexible and they'll turn out just fine whatever kind you use, so don't be afraid to sub in the turban squash for butternut or another variety where you need it. As well as being beautiful to look at, this soup is also rich and creamy from the addition of coconut milk and homemade chicken stock. The other vegetables - carrots, leeks, and sweet potato - complement the flavor of the squash without overwhelming it, so the star of the show gets its chance to shine. If you're cooking for a party or special occasion, this is a great crowd-pleaser dish, or just whip up a batch to treat yourself on a nippy afternoon.

Yield 2 serving(s)

Number Of Ingredients 8

1 turban squash, seeded
1 leek, thinly sliced
2 medium carrots, peeled and diced
1 sweet potato, peeled and diced
2 tablespoons coconut oil
3 1/2 cups chicken stock
1/2 cup coconut milk
1 sprig fresh dill

Steps:

  • emove the flesh from the squash. If you cut-off the top of the squash and then manually remove the seeds, it should then be easy to use a knife to remove most of the flesh from the squash.
  • Melt the cooking fat in a saucepan placed over a medium heat. Add the leek, carrots, sweet potato, and the flesh of the squash, and cook for about 5 minutes.
  • Add the chicken stock, cover, and let simmer until the vegetables are soft (about 30 min).
  • Transfer the vegetables and broth to a blender or food processor and purée.
  • Return to the pot and turn the heat down to low. Stir in the coconut milk and season to taste.
  • Serve with fresh dill to garnish.
