BABY OCTOPUS TOMATO SAUCE - ITALIAN "GUAZZETTO"
In this videorecipe I will show you how to cook baby octopus with a super-tasty tomato sauce, called "guazzetto" in Italian.

Steps:
- Make sure you clean your baby octopus first (ask your friendly fishmonger to remove eyes and gut/entrails);
- Try to cut each baby octopus in similarly sized pieces: head in half and body in quarters, depending on the size of the baby octopus you have;
- Heat a pan, pour some olive oil, a couple of cloves of garlic and some freshly chopped parsley (add also chili if you wish). When warm, add the baby octopus in there;
- Make sure you cover with a lid and let this cook at medium heat for 10 minutes;
- After 10 minutes, you can uncover the pan and let all that liquid evaporate slowly. Depending on how much is in the pan, this process can take even longer than 1 hour. Be patient, sit down and relax;
- You know that you are done when the liquid produced by the baby octopus is gone and the baby octopus is about to stick at the bottom of the pan. This is the moment to pour the glass of wine in;
- When the wine evaporates, you can add the tomato passata. Let everything cook for about 20 minutes at low-medium heat;
- Remove the garlic and add a bit of salt. Stir and plate;
- Serve with chopped parsley on top and a nice slice of grilled bread...

GRILLED BABY OCTOPUS

Steps:
- Boil octopus in salted water until cooked through (check inside with a paring knife), 15 to 20 minutes. To a metal bowl add oil, oregano, pepper flakes, garlic, lemon juice, parsley, salt and pepper, then add octopus and toss.
- Preheat a grill to high heat.
- Place octopus on the grill for 3 to 4 minutes, then transfer back to bowl and back to grill. Repeat this step a few times. Finally, put octopus back in bowl and add balsamic vinegar. Toss well, then serve over baby greens.

- Rinse octopuses under cold water, then cover with water by 2 inches in a 5- to 6-quart heavy pot. Bring to a boil with bay leaf, then reduce heat and simmer, covered, until octopuses are tender (tentacles can easily be pierced with a fork), about 45 minutes.
- Transfer octopuses to a colander with tongs, then discard cooking liquid and bay leaf. When cool enough to handle, cut off and discard heads and halve octopuses lengthwise. Cool to room temperature.
- Whisk together oil, lemon juice, sea salt, pepper, and oregano. Toss octopuses with dressing and marinate, stirring occasionally, 20 minutes at room temperature.
SAUTEED BABY OCTOPUS
My husband bought Baby Octopus on a whim and I couldn't find a recipe that I wanted to try. So, we tried sauteing them in garlic and herbs. They turned out really good, first time cooking the little suckers, so my technique might be weird. Also, next time I might try using white wine. NOTE: I didn't measure the garlic and herbs, so what I wrote down is a very loose calculation.

- Rinse octopi in running water. Cut head lengthwise and remove excess matter including the beak. **We separated the heads from the bodies on some of the octopi
- Add lemon juice to Octopi as they're waiting to be cooked.
- Heat olive oil in large skillet. Add minced garlic and cook until browned.
- Add Octopi and sprinkle with herbs and salt.
- Cook, stirring occasionally, over medium heat, until octopi is firm and turn purple. **I cooked mine for about 7 minute Like I said, I don't know if that was too long, since it was my first time, but better be safe than sorry when it comes to cooking seafood.
- Cover and cook the final minute if needed.

- Carefully wash the baby octopus under running water and dry them. Peel the garlic. Wash and chop the parsley. Rinse the capers well if they are salted.
- Put the extra virgin olive oil into a Dutch oven or deep skillet add the peeled garlic cloves. Soften the cloves over a medium heat. Then add the baby octopus and cook them for 5 minutes. Turn them so they start to brown on each side.
