MAKE AHEAD ITALIAN SAUSAGE AND PASTA BAKE
This wonderful hearty, make ahead casserole really hits the spot. full of flavor, easy to make (and freeze) for those hectic or lazy days ahead.

Steps:
- Cut sausage into 1/2 inch chunks. I large skillet, brown sausage over medium-high heat, in batches and adding oil if necessary. Transfer sausage to a bowl.
- Pour off any fat from pan. Add onions, garlic and red pepper, cook over medium heat, stirring occasionally, for about 5 minutes or until softened. Stir in pasta sauce, tomato sauce, basil, oregano and fennel seeds; bring to a boil, stirring and scraping up any brown bits from bottom of pan. Return sausage and any accumulated juices to pan; cover and simmer for 15 minutes or until sausage is firm throughout.
- Meanwhile, in a large pot of boiling salted water, cook pasta for 6 minutes, add spinach;cook for 1 minute. Drain well and return to pot. Add sausage mixture and provolone/mozzarella cheese; stir to combine well.
- Transfer to 2 greased 8-inch square baking dishes or 1 13x9-inch dish. Sprinkle with Asiago/parmesan cheese. Cover dish with greased foil, greased side down.
- To serve: Bake, covered with foil, in in 375 degree F. oven for 30 minutes or for 1 hour if from the refrigerator. This freezes beautifully (thaw in refrigerator before baking).

- Cook and slice Italian Sausage, set aside.
- Lightly sautee green onions, mushrooms and peppers in butter.
- In the meantime cook pasta in generous amount of salted water, drain.
- Prepare Sauce:.
- Melt butter on medium setting in a large pot.
- Slowly add flour to make a thin paste, stirring constantly.
- Slowly add milk.
- Add all cheeses, salt and black pepper.
- Simmer until partially thickened, adding more milk if neccessary.
- Transfer pasta, sliced sausages and mushroom/pepper mixture to the pot, mix.
- Transfer all to casserole dish.
- Top with bread crumbs.
- Bake at 350 degrees until heated through.
- Serve with side salad and garlic bread.

Steps:
- Preheat oven to 180°C.
- In a large pan, add water and heat until boiling.
- Add pasta and cook until just soft.
- Drain and place in heat proof oven dish.
- Fry sausages until cooked. Place on absorbent paper to soak up excess fat.
- Chop onions and bacon and fry over medium heat with garlic until onions are cooked (to liking).
- Cut sausages into bite sized pieces (remove skin if needed).
- Add sugar and canned tomatoes and sausage pieces to frying pan.
- Simmer for about 10 minutes.
- Add parsley.
- Pour over pasta.
- Grate cheddar and parmesan cheese over pasta dish.

- In a medum-sized sauce pan, brown sausage, bell pepper and onion. Make sure vegies are tender.
- Drain off grease.
- Add stewed tomatoes, green onion 1-2 Tbsp of flour (for thickening--I added this to the tomatoes in separate medium-sized bowl and mixed it vigorously with a whisk. Then I added it, along with the green onion to the pan. If you like a thin sauce, don't do this step).
- Bring to a boil over HIGH heat, stirring constantly.
- Reduce to low-med, simmer covered for 15 min and uncovered for 15 min, stirring occasionally.
- Serve over pasta or rice with a nice salad on the side with garlic bread.

- Heat oil in a 4- to 5-quart saucepan over medium-high heat. When oil shimmers, add sausages. Brown sausages, breaking them up into small pieces as they cook, just until sausages are cooked through, 5 minutes.
- Add tomato paste, onion, carrot, and garlic and continue cooking, stirring occasionally, until vegetables begin to soften, about 3 minutes.
- Stir in tomatoes and rosemary and break up tomatoes into pieces with the side of a spoon or scissors. Bring to a boil. Reduce heat, partially cover, and simmer, stirring occasionally, until sauce thickens and reduces slightly.
- Cool meat sauce to room temperature, then transfer to freezer-safe containers with tight-fitting lids and freeze until ready to use, up to 6 months.

I took a couple of the best rated Sloppy Joe recipe's here on Zaar and combined them and tweaked them to my families liking. My husband was very very pleased. The servings say 4-6, but I am also serving small children and one is enough for them as the bread fills them up too, so take that into consideration. Hope you enjoy!
