SWEET HOT FRIED CHICKEN AND WAFFLES

- For the glaze: Combine the honey, maple syrup, chili powder, paprika, black pepper, vinegar, cayenne and salt in a small saucepot. Bring just to a simmer. Remove from the heat and let steep for 20 minutes, then strain into a clean container.
- For the waffles: Preheat the oven to 250 degrees F and place a rack in the middle of the oven. Place a baking sheet fitted with a wire rack in the oven.
- Whisk together the flour, Cheddar, sugar, baking powder, hot sauce, scallion whites and salt in a large bowl and set aside.
- In another large bowl, whisk the eggs and a pinch of salt until just broken up, then add the milk and whisk. Pour in the melted butter and whisk until combined.
- Add the wet ingredients to the dry ingredients and stir with a rubber spatula until the flour is just incorporated and no streaks remain (the batter may have a few lumps).
- Preheat a Belgian waffle iron to medium heat according to the manufacturer's instructions. Spray with nonstick cooking spray, add some batter, close the lid, and cook until the steam starts to diminish (open the top and peek for doneness after a few minutes). Transfer the waffle to the wire rack in the oven to keep warm. Repeat with the remaining batter to make 8 waffles.
- For the chicken: Pour 5-inches of oil in a heavy-bottomed pot. Heat over medium-high heat until a deep-frying thermometer inserted in the oil reaches 360 degrees F.
- Place the chicken thighs and buttermilk in a bowl. In a separate bowl, add the flour, garlic powder, onion powder, paprika, pepper and salt, and mix to combine. Dredge each thigh in the flour mix, then shake off any excess flour and carefully place in the oil. Fry until golden, 7 to 8 minutes. Remove the chicken to a paper bag or paper towels to drain excess grease and immediately season with salt.
- Place each piece of fried chicken on top of a waffle and top each with some glaze and scallion greens to serve.

- Cut Chicken Breasts into @ 2" Pieces. Mix all Brine Ingredients in a bowl. Place Chicken pieces in Brine. Make sure all Chicken is covered in Brine, cover and Refrigerate for at least 2 Hours to Overnight.
- Mix all Chicken Breading Ingredients in a Mixing Bowl. Set aside.
- In a Large Mixing Bowl, add all Dry Waffle Ingredients. Melt Butter, then set aside to cool. In a Small Mixing Bowl, Crack all 4 Eggs over an Egg Separator, Leaving just the Whites. Place Yolks in a Separate Bowl. Whisk Egg Whites until stiff peaks are formed. In a Large Measuring Cup or Bowl, Add Milk, Vanilla, 2 Egg Yolks, and Cooled Melted Butter. Add this Liquid To the Dry Waffle Mix and stir until mostly combined. Fold in Egg Whites. Set aside.
- Heat Cooking Oil in a Large Cast Iron Skillet over Medium to Medium High Heat. Oil should be about 1" high and reach between 350° - 375°. Set up a dredging station. Pour a decent amount of the Dry Chicken Breading Mix onto a plate or in shallow bowl. Dredge each piece of Chicken in the Breading Mix, and set on a plate to rest for 5 Minutes. Dredge in the Mix again.
- Fry Chicken in small batches for about 7-8 Minutes, turning half way through. Don't overcrowd pan. Place cooked Chicken onto a wire cooling rack/sheet pan. Place in a low oven to keep warm.
- Heat Waffle Maker and cook Waffles. Top Waffles with Chicken and toppings or sauce of choice. A spicy honey butter sauce is often customary, and I might post a separate recipe for that one, at some point. Maple syrup or honey is fabulous too. Enjoy!

GORDON RAMSAY'S STICKY LEMON CHICKEN
I found this recipe on a youtube video of Gordon Ramsey making this on one of his British cooking shows. These turned out pretty good and the flavors are fantastic! You can watch the video if that would be helpful! In it, he used whole chicken legs/thighs still attached together. I only had Chicken legs and they turned out great! You could probably use the bone-in chicken thighs. This is very easy and the lemon aroma will make your home smell so heavenly!

- In a large skillet pan, add the oil to Med/High Heat. Season the chicken well with salt and pepper. Add the chicken to the skillet and cook for about 5-6 minutes, turning each piece.
- Add the garlic cloves, soy sauce, and honey to the pan, making sure to get all the chicken in the sauces. Coninue to cook for a 5 minutes.
- Add the water and lay the slices of lemon on top of the chicken in the pan. Put a lid on the pan and continue to cook for about 10-15 minutes.
- Season the chicken with thyme and parlsey. Continue to cook until the chicken cooked through and no longer pink.

GORDON RAMSAY'S MALAYSIAN CHICKEN CURRY
This recipe came highly recommended and intrigued me as the spice combination was different to any curry I have made. Which if I may say so myself, is a few. That and the fact our household loves a good Sunday afternoon curry.

Steps:
- To make the curry paste. Put the garlic, chillies, lemon grass, ginger and shallots in a food processor to form a paste. (Or you can use a pestle and mortar).
- Next, heat the oil in a large heavy-based pan. Tip in the curry paste with 1 tsp ground turmeric and stir over a medium heat for a few minutes. Add the onions and cook, stirring for 5 minutes.
- Season the chicken pieces with salt and pepper and add to the pan, stirring to coat in the paste. Add the lime leaves, cinnamon stick, star anise, coconut milk, stock, sugar, soy and fish sauces and bring to the boil. Reduce the heat to a simmer and cook gently for half an hour to an hour until the chicken is tender.
- Skim off any excess oil on the surface of the curry. Taste add salt and pepper if you think its needs. Add the beans and cover for another few minutes until the beans are tender.
- To serve, scatter the coriander leaves over the curry and serve with rice and roti.
