SIMPLE ALMOND SLICE RECIPE

This simple Almond Slice is made of three layers, a sweet shortcrust pastry, covered with raspberry jam, then a layer of light almond spongecake with a topped with a sprinkle of flaked almonds. It's a delicious flavour combination!

200g Butter
200g Caster Sugar
100g Self Raising Flour
100g Ground Almonds
1tsp Baking Powder
3 Eggs
A Handful of Flaked Almonds
1tsp Almond Essense *optional
200g Raspberry Jam (preferably Scottish & seedless)
200g Plain Flour
100g Cold Butter
30g Caster Sugar
4-5tbsp Cold Water

Steps:

  • First you need to mix the flour and the cold butter together for the pastry. If you have a mixer you can use that to mix the flour and butter. If not, put the flour in a bowl and then cut the butter into the flour using a pastry blender, two butter knives, or rub with fingertips to create a breadcrumb-like texture.
  • Add the caster sugar and stir through.
  • Next, slowly add the tablespoons of water and stir it with a butterknife to bring it together. How much water you need depends on the flour so we suggest starting with 2-3 tablespoons and then adding more as needed.
  • Tip out the pastry onto a floured surface and gently bring together the pastry with your hands. Try not to knead it and handle it as little as possible. Then cover with cling film and rest in the fridge for 15 minutes. It can last up to 2 days if you want to make it in advance.
  • Meanwhile preheat the oven to 180C or 350F.
  • Lightly grease the tin with butter, taking care not to add too much. You want to grease rather than using baking paper to line it. The pastry has enough butter not to stick but you want to ensure the sides of the sponge don't stick.
  • Take the pastry from the fridge and roll it out on a floured surface until it is about 0.5cm (1/4 of an inch) thick. You want the shape to roughly fit your tin. Carefully lift the pastry and press into the bottom of the tin, cutting any excess so it's only covering the bottom and not stretching up the slides.
  • Prick the pastry with a fork, place baking paper over it and blind baking beans, or uncooked rice if you don't have any.
  • Bake in the oven for 8-10 minutes, until lightly golden brown.
  • Meanwhile, loosen up the jam by stirring it in a bowl so it'll be easy to spread onto the pastry. We used approximately 200g or 8 tablespoons but you may want a little more or less. Be generous! The jam layer really adds to the flavour.
  • Remove the pastry from the oven and allow to cool for 5 minutes, then add the jam layer. Set aside.
  • Cream the butter and the sugar for the sponge in a large bowl.
  • Add the essence if using, and beat in the eggs.
  • Add the flour, baking powder, and ground almond and gently mix together.
  • Pour or spoon over the jam-covered pastry, trying not to disturb your jam layer too much.
  • Top with a handful of flaked almonds (not toasted) and then put in the oven for 30-35 minutes. Keep checking it and once the sponge layer has risen and cooked through it's ready!
  • Take out an allow to cool, before removing from the tin to slice it, or slice in the tin and remove individual pieces if you find the easier.

1/2 pound (2 sticks) unsalted butter, softened
3/4 cup caster sugar (superfine)
2 teaspoons vanilla extract
7 ounces flaked or slivered almonds
2 tablespoons milk
1 3/4 cups all-purpose flour
1/3 cup cornstarch
1/2 cup raspberry jam

Steps:

  • Preheat an oven to 350 degrees F. Lightly grease a 9 1/2 by 8-inch baking pan lined with parchment paper with 1 tablespoon of butter.
  • To make the almond topping, combine 5 tablespoons butter, 1/4 cup sugar, 1 teaspoon vanilla extract with the almonds and milk in a medium-sized saucepan. Cook over a low heat until the butter has melted, and then leave the mixture out to cool.
  • To make the slice, whip together the remaining 1 stick 3 tablespoons butter, 1/2 cup sugar and vanilla extract with an electric beater until pale and creamy. Sift the flour with cornstarch and add the dry ingredients to the butter mixture in 2 batches, beating on low speed until just mixed. Pour the batter into the baking pan and bake for 12 minutes, or until lightly golden brown. Remove the pastry from the oven and leave it out to cool for 10 minutes.
  • Carefully spread the raspberry jam over the pastry base, and then spread the cooled almond topping over the jam. Return the dessert to the oven and bake for an additional 25 minutes, or until golden.

110 g butter
150 g caster sugar
2 eggs (- beaten)
150 g plain flour
1/4 tsp baking powder
50 g ground almonds
25 g flaked almonds
splash milk or water (- I used 1 tablespoon)

Steps:

  • Preheat the oven to 200/220 fan/425/gas 7. Grease a baking tin that measures roughly 8" or 20cm squared.
  • Cream the butter and sugar together.
  • Stir in half the beaten eggs and half the flour. Mix well.
  • Add the remaining egg, flour and the baking powder. Lastly, add the ground almonds and a splash of milk to make the mixture soft.
  • Spread out evenly in the greased tin and top with the flaked almonds.Press them down gently with the back of a fork.
  • Pop in the oven and bake for 15 minutes.

1 cup almond meal
1/4 cup gluten-free plain flour
1 tsp baking powder
1 tsp vanilla extract
5 tbsp nuttelex margarine, or another butter substitute
3 x eggs
3 tbsp white sugar
7-8 tbsp almond milk
3/4 cup frozen raspberries

  • To make your Almond Meal Slice, preheat your oven to 160°C (fan-forced), and grease a slice pan. Then in a bowl beat together the nuttelex and sugar until light and creamy, then add the eggs, beating well after each addition.Pour in the vanilla extract and almond milk, combine, and add the baking powder, the gluten free flour and the almond meal and mix thoroughly again.Pour into your prepared slice pan and smooth out to the corners, then sprinkle with the frozen raspberries and bake for 15-20 minutes, or until a skewer inserted into the centre comes out clean and the top is lightly browned.Remove from the oven and allow to cool in slice pan before cutting and serving.

RASPBERRY BAKEWELL SLICE

375g pack sweet shortcrust pastry
5 tbsp thick seedless raspberry jam
100g frozen raspberries, just thawed
25g flaked almonds
4 tbsp apricot jam
200g butter, very soft, plus a little extra for the tin
200g golden caster sugar
100g ground almonds
100g self-raising flour
1 tsp baking powder
½ tsp almond extract
4 eggs, beaten

Steps:

  • Heat oven to 200C/180C fan/gas 6. Line the base and sides of a buttered traybake tin, about 18-20cm x 30cm, with baking parchment. Roll out the pastry to line. Lift into the tin and evenly press right into the corners. Prick with a fork and chill for 20 mins.
  • Bake the pastry for 8-10 mins until it's cooked but not too coloured. Cool for a few mins and turn down the oven to 180C/160C fan/gas 4. Dot the raspberry jam over the pastry (there's no need to spread) and scatter over the raspberries.
  • For the sponge, put all the ingredients into a large bowl and beat with an electric whisk until soft and very well mixed. Spoon this over the raspberry layer, then smooth evenly. Scatter over the flaked almonds and bake for 35-40 mins until golden and firm. Cool completely in the tin. Will freeze for up to 3 months - overwrap the tin with baking parchment and foil beforehand.
  • To serve, thaw for 4 hrs at room temperature, then reheat in a low oven. Melt the apricot jam with 1 tbsp water and brush over the top of the sponge just before serving.

75g whole almonds
5 egg whites (use the yolks to make ice-cream)
275g caster sugar
handfuls of raspberries , at room temperature (about 200g)
2 x 284ml cartons double cream
about 250g strawberries , also at room temperature, hulled
icing sugar for sifting

Steps:

  • Heat oven to 190C/170C fan/gas 5. Scatter the almonds on a baking sheet and roast for 6-8 mins until golden. Very coarsely grind them in a small food processor, then set aside. Lower oven to 160C/fan 140C/gas 3. Line a baking sheet with non-stick baking parchment.
  • Beat the egg whites in a scrupulously clean mixing bowl until stiff peaks have formed. Tip in half the sugar and beat again until stiff peaks are formed once more. Using a metal spoon, deftly fold in the remaining sugar a spoonful at a time, followed by most of the almonds (keep a small handful back). Tip the meringue onto the lined sheet and spread it out quite roughly to a 20cm circle. Scatter over the reserved almonds. Bake for 20 mins, reduce the temperature to 140C/120C fan/gas 1, then bake for a further 40 mins. Let meringue cool in the oven with the door ajar or on the side as you wish.
  • While the meringue is baking, and if you wish to add the glamour of a raspberry ripple to the cream, make a few spoonfuls of purée by pressing 125g of the raspberries through a sieve.
  • When nearing the moment for assembly, whip the cream until soft and cloudy. Lightly ripple through about half, or more, of the raspberry purée through the cream. You can serve the rest separately on the side. Place the meringue upon a handsome dish. Spoon the whipped cream liberally over the meringue. Slice the strawberries in a random manner. Heap the berries atop the cream, and offer any remaining fruit separately. Sift over the icing sugar. Take to the table and take a bow.

250g self-raising flour
50g ground almonds
200g butter , diced
280g golden granulated sugar
50g desiccated coconut
2 medium eggs
350-450g/12oz-1lb fresh or frozen raspberries

Steps:

  • Heat the oven to 180C/fan160C/gas 4. Butter an oblong cake tin (about 31 x 17 x 3cm). Tip the flour, ground almonds, butter and sugar into a food processor and whizz just until the butter is evenly distributed - or rub together by hand. Remove 85g/3oz of the mix, stir in the coconut and put to one side. Add the eggs to the remaining mixture in the food processor and whizz quickly - or mix with a wooden spoon. It doesn't need to be very smooth.
  • Spread this mixture over the base of the tin, then scatter half the raspberries over the top. Sprinkle with the coconut mixture and bake for 45 mins. Dot the remaining fruit over the surface and cook for a further 15 mins, until firm to the touch. Cool in the tin and cut into slices, squares, whichever shape you want. They will keep for up to 2 days in the fridge.

2 cups all-purpose flour
⅔ cup white sugar
2 teaspoons baking powder
¼ teaspoon baking soda
1 teaspoon salt
¾ cup warm water
2 teaspoons almond extract
½ cup butter
2 eggs, beaten
1 ½ cups frozen raspberries

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Arrange almonds in a single layer on a medium baking sheet, and bake in the preheated oven 5 to 10 minutes, until lightly toasted.
  • Reduce oven temperature to 350 degrees F (175 degrees C). Lightly grease a 6 cup jumbo muffin pan.
  • In a medium bowl, mix flour, sugar, 3/4 cup almonds, baking powder, baking soda, and salt.
  • In a separate medium bowl, mix water, almond extract, butter, and eggs. Blend into the flour mixture. Fold raspberries into batter. Spoon into the prepared muffin pan. Sprinkle with remaining almonds.
  • Bake 25 minutes in the 350 degrees F (175 degrees C) oven, until a knife inserted in the center of a muffin comes out clean.

200g plain flour
175g ground almonds
175g golden caster sugar
200g cold butter , diced
1 egg yolk
200ml tub crème fraîche
85g golden caster sugar
½ tsp vanilla essence
juice and zest of ½ lemon
about raspberries
5 tbsp raspberry jam

Steps:

  • Make the pastry by tipping all the ingredients, except the yolk, into a food processor and pulsing to the texture of breadcrumbs. Add the yolk, then pulse until it all comes together to form a soft pastry. The pastry will be too soft to roll out, so press it evenly into a loose-based 25cm tart tin until the pastry comes up above the edges of the tin. Rest in the freezer for at least 20 mins.
  • Heat oven to 190C/fan 170C/gas 5. Line the tart case with baking parchment and baking beans, then place on a baking sheet and bake for 20 mins until the edges are starting to brown. Remove the beans and paper, then continue to cook for 10 mins until biscuity. Leave to cool, trim the edges with a knife, then carefully remove from the tart tin.
  • To make the filling, whisk the crème fraîche with the sugar, vanilla, lemon juice and zest until thick. Spread over the bottom of the tart case, then meticulously place the raspberries on top in concentric circles. Meanwhile, heat up jam in the microwave or in a pan with 2tbsp water until bubbling. Push the glaze through a sieve into a bowl, then paint it over the raspberries with a pasty brush. Bring the whole tart to the table and serve in slices.
