TRADITIONAL TAMALES (PORK)

Traditional Tamales (Pork) image

This tamale recipe is about as traditional as you can get, although I use a roast instead of the whole pig head that many Mexican women use. I have also used beef, but they just do not taste quite the same. These take about all day to make and are a lot of work, but they are so worth the time and the effort. Not for the faint-hearted cook for sure. They are a huge hit here in the West. For added flavor, top with either some of the red sauce used to prepare this recipe, or with my favorite, green chili sauce with pork, recipe #20574. Serve with sides of Spanish rice, refried beans topped with cheese and frosty margaritas for a delicious authentic Mexican meal. For an online tamale-making tutorial, including pictures, please see http://www.recipezaar.com/bb/viewtopic.zsp?t=188623 posted in the Mexican cooking forum.

Time 6h

Yield 50 Tamales

Number Of Ingredients 10

3 1/2 lbs pork shoulder or 3 1/2 lbs pork butt, trimmed of fat and cut up
10 cups water
1 medium onion, quartered
3 garlic cloves, minced
3 1/2 teaspoons salt
4 cups red chili sauce (see Red Chili Sauce (To Be Used With Traditional Tamales) for red chili sauce)
3/4 cup shortening
6 cups masa harina
1 1/2 teaspoons baking powder
50 dried corn husks (about 8 inches long)

Steps:

  • In a 5 qt Dutch oven, bring pork, water, onion, garlic and 1 1/2 salt to boil.
  • Simmer covered, about 2 1/2 hours or until meat is very tender.
  • Remove meat from broth and allow both meat and broth to cool. (Chilling the broth will allow you to easily remove the fat if you desire to do so).
  • Shred the meat using 2 forks, discarding fat.
  • Strain the broth and reserve 6 cups.
  • In a large sauce pan, heat the red chili sauce and add meat; simmer, covered for 10 minutes.
  • To make masa beat shortening on medium speed in a large bowl for 1 minute.
  • In a separate bowl, stir together masa harina, baking powder and 2 teaspoons salt.
  • Alternately add masa harina mixture and broth to shortening, beating well after each addition. (Add just enough broth to make a thick, creamy paste).
  • In the mean time, soak corn husks in warm water for at least 20 minutes; rinse to remove any corn silk and drain well.
  • To assemble each tamale, spread 2 tablespoons of the masa mixture on the center of the corn husk (each husk should be 8 inches long and 6 inches wide at the top. If husks are small, overlap 2 small ones to form one. If it is large, tear a strip from the side).
  • Place about 1 tablespoon meat and sauce mixture in the middle of the masa.
  • Fold in sides of husk and fold up the bottom.
  • Place a mound of extra husks or a foil ball in the center of a steamer basket placed in a Dutch oven.
  • Lean the tamales in the basket, open side up.
  • Add water to Dutch oven just below the basket.
  • Bring water to boil and reduce heat.
  • Cover and steam 40 minutes, adding water when necessary.
  • To freeze these for future meals, leave them in the husks and place them in freezer bags. To reheat, thaw and wrap in a wet paper towel and reheat in the microwave for 2 minutes for one or two or re-steam them just until hot.

TRADITIONAL CORN HUSK TAMALES

Traditional Corn Husk Tamales image

A very popular dish in the Mexican/Spanish Culture. Recipe from recipegoldmine. I guessed on the time here. Sorry not sure how long from start to finish. NOTE: The chiles are the dried ones that you see hanging outside doors or under ramadas in the Southwest and can be purchased at any grocery store in the Southwest or packaged in the ethnic foods section of many grocery stores elsewhere. * Masa can be purchased at any tortilla factory or grocery store in the Southwest or in the refrigerated section of the grocery store in many other areas of the country.

Time 4h

Yield 4-6 serving(s)

Number Of Ingredients 11

1 (6 lb) rump roast
1 (6 lb) pork roast
12 lbs masa harina flour
1 lb whole red chile (mild or hot)
2/3 cup lard or 2/3 cup Crisco
6 -12 garlic, cloves
1 tablespoon cumin
2/3 cup flour
2 -3 tablespoons salt and pepper
2 tablespoons baking powder
1 lb dried corn husk

Steps:

  • To prepare chile paste:.
  • Break caps off all red chiles and shake seeds out. Soak red chiles in hot water until soft. Blend or process chiles into a paste using a small amount of water in which they were soaked to help it move in the food processor or blender. Put paste through a sieve to remove the skins. Throw skins away. This may be made way ahead of time and refrigerated until you make the tamales.
  • To prepare meat:.
  • Use the cheapest roasts you can find! Try to cook the meat the day before assembling tamales, keeping it in the refrigerator until tamale-making time. Cut meat into large chunks. Cover meat with water in a very large pot. Add 6 to 12 garlic cloves and 2 or 3 tablespoons salt. Cook meat, covered, for 3 hours or until meat is tender and falling apart. Remove meat from juice and shred. SAVE THE JUICE. Mix meat sauce with the meat.
  • To prepare meat sauce:.
  • Melt 2/3 cup lard or Crisco and add 2/3 cup flour. Boil for 2 minutes. Pour over shredded meat and mix. Add chili paste, one cup at a time, to taste. Add 1 tablespoon of cumin. Add salt and pepper to taste.
  • To mix masa:.
  • Place 12 pounds masa (room temperature) in a very large pan and mix with 1 1/4 cups lard or Crisco, 2 tablespoons salt, 2 tablespoons baking powder, 1 cup chile paste and 2 cups meat broth.
  • Mix with hands. Add more meat broth (about 1 cup). Add more chile paste for color if desired. Work all ingredients together with hands for about 10 minutes. The dough is ready when a small lump floats slowly to the bottom of a glass of water.
  • To assemble tamales:.
  • Soak corn husks in hot water until soft. Using the larger husks, place each husk waxy side up (ribbed side down). Spread masa onto each husk out to the wide edge. Place a small portion of meat in the center of masa. (You may place a stuffed green olive on the meat if you care to.) Roll husks and fold back, wide sides to center, then tapered flap up.
  • Set a wire rack or vegetable steamer in the bottom of a large kettle. Put water in kettle just up to the bottom of the rack or steamer. Set tamales in kettle standing on end. Pack them in, allowing room for expansion of masa as they cook. Steam for about 20 to 40 minutes, or until masa pulls away from corn husk easily.

REAL HOMEMADE TAMALES

Real Homemade Tamales image

I had been looking for a Tamale recipe for years. One day I went to the international market and stood in the Mexican aisle till a woman with a full cart came by. I just asked her if she knew how to make Tamales. This is her recipe with a few additions from me. The pork can be substituted with either chicken or beef. This is great served with refried beans and a salad.

Categories     World Cuisine Recipes     Latin American     Mexican

Time 3h35m

Yield 16

Number Of Ingredients 13

1 ¼ pounds pork loin
1 large onion, halved
1 clove garlic
4 dried California chile pods
2 cups water
1 ½ teaspoons salt
2 cups masa harina
1 (10.5 ounce) can beef broth
1 teaspoon baking powder
½ teaspoon salt
⅔ cup lard
1 (8 ounce) package dried corn husks
1 cup sour cream

Steps:

  • Place pork into a Dutch oven with onion and garlic, and add water to cover. Bring to a boil, then reduce heat to low and simmer until the meat is cooked through, about 2 hours.
  • Use rubber gloves to remove stems and seeds from the chile pods. Place chiles in a saucepan with 2 cups of water. Simmer, uncovered, for 20 minutes, then remove from heat to cool. Transfer the chiles and water to a blender and blend until smooth. Strain the mixture, stir in salt, and set aside. Shred the cooked meat and mix in one cup of the chile sauce.
  • Soak the corn husks in a bowl of warm water. In a large bowl, beat the lard with a tablespoon of the broth until fluffy. Combine the masa harina, baking powder and salt; stir into the lard mixture, adding more broth as necessary to form a spongy dough.
  • Spread the dough out over the corn husks to 1/4 to 1/2 inch thickness. Place one tablespoon of the meat filling into the center. Fold the sides of the husks in toward the center and place in a steamer. Steam for 1 hour.
  • Remove tamales from husks and drizzle remaining chile sauce over. Top with sour cream. For a creamy sauce, mix sour cream into the chile sauce.

RED TAMALE SAUCE RECIPE (+VIDEO)

Red Tamale Sauce Recipe (+video) image

Red tamale sauce is an essential recipe for your traditional Mexican pork or beef tamales. When you're ready to make a tamale commitment, be sure to use an outstanding homemade sauce like this one.

Provided by Christian Guzman

Categories     Sauce

Time 1h25m

Number Of Ingredients 8

8 Red Anaheim Peppers (dried (see notes))
2 Arbol peppers (dried)
2 medium Tomatoes (quartered)
4 Garlic Cloves
3 cups Chicken Stock (divided (or up to 6 cups for desired consistency))
1 tablespoon Ground Cumin*
1 tablespoon Salt*
1 tablespoon Onion Powder*

Steps:

  • Carefully split the peppers and remove seeds and membranes. Cut peppers into 1-2 inch pieces. Arbol peppers are small so no need to cut those.
  • Using a firm bristle brush, wash peppers.
  • Place peppers, tomatoes and garlic in pan with 2 cups chicken stock (or enough to cover). Heat on medium and bring to boil, then reduce to low and simmer for 20-30 minutes until soft.
  • Remove all vegetables and remaining spices to blender and blend until smooth. Note: If water has turned too dark, you may want to strain the vegetables to the blender then discard the liquid and replace with fresh chicken stock. Return all to the same pan.
  • Simmer for 15 minutes to thicken slightly. Add more spices or salt to taste, if desired.

In response to a request. I have not made these myself...but have had many a happy New Years eating them when received from a neighbor! I have no idea how long this takes. Seems like the family all got together before the holiday and spent the day cooking various amazing Mexican delights.

Categories     Chicken

Time 4h

Yield 20 serving(s)

Number Of Ingredients 8

1 kg lard
1 kg cornflour (white corn Mexican)
4 chicken breasts
5 jalapenos
1/2 onion
8 small green tomatoes or 3 red tomatoes
20 corn husks, dry (if you cant find any dry youll have to get them in the market with the corn and let them dry)
25 g chopped parsley

Steps:

  • You have to beat the lard, (I use a machine), beat it until it gets soft, and fluffy.
  • Add the flour, and keep beating it.
  • Into a blender put the jalapenos, onion, tomatoes, salt, and the peregil. Add some water, you are making a salsa.
  • In another pot, put some water and the chicken, and boil them.
  • Take a big spoon of the mixture of the lard and spread it on the corn leaves, add a spoon of salsa, and a piece of chicken in it. Wrap the husk so the flour mixture seals around the meat and salsa
  • Keep doing this until the mixture is gone
  • Steam them in an oversized pot.
  • In mexico we use special pots, you can use any but be sure to cook them in the vapor.
  • Let it cook, you'll know when its ready when you touch the tamale and its not fluffy any more, it gets solid.
  • When you eat it put the leaf into the trash can, you won't eat the leaf, in mexico people add some cream over it and thats good.

  • 1. In the bowl of a stand mixer fitted with the paddle attachment, cream lard and butter together until light and fluffy, about 2 minutes. (Alternatively, use a hand mixer or whisk.) 2. In a separate bowl, mix masa harina, baking powder, and kosher salt together until well combined. Add dry ingredients to the whipped lard and mix until a shaggy dough forms. 3. Add broth one cup at a time, mixing after every addition, until a light, spongy dough forms. (You may not need to use all of the broth.) Test the masa by pressing a little into the palm of your hand. If it holds its shape and doesn’t crack, and is able to be easily removed from your palm without sticking, the dough is ready. If not, add more liquid and continue to mix.
  • 1. In a large bowl or stockpot, soak corn husks in warm water and cover. (If the corn husks rise to the surface, cover with a clean plate or other weight.) Soak until softened, about 30 minutes and up to overnight, then drain and pat dry with a clean kitchen towel. 2. Line a large strainer or steamer basket with corn husks (this is a good use for any extra-large or extra-small husks) and place a ball of foil in the center. Place tamales against the ball, open side up, leaning them against each other. 3. Set a softened corn husk on a flat surface smooth side up, with the wide end facing you and the tapered end pointing away from you. Starting from the wide end of the husk, spread 2 tablespoons masa with your fingers or an offset spatula from edge to edge and about ⅔ of the way up the husk. You should have a rectangle about a ¼ inch thick. Repeat with remaining husks. 4. Add 2 tablespoons of chilled filling to the center of the masa-covered husk. Fold one side of the husk over the fillin

  • Put the masa harina in a large bowl and reconstitute by adding warm chicken stock. Beat with a wooden spoon until the dough is stiff, but smooth. Add a little more stock if necessary, but be sure to keep the mixture firm.
  • In another large bowl, beat the lard with a mixer fitted with a paddle until it is very fluffy, about 3 minutes. Continue to beat at medium speed and add the masa a little at a time until well combined. The texture should be light and fluffy. To see if the mixture is blended well enough, drop a teaspoon of the dough into a glass of water. If it floats, it's mixed well. If not, keep beating. Set aside.
  • Heat the oil in a large skillet over high heat and cook the bell peppers, jalapenos and onion for 4-5 minutes or until the mixture begins to soften. Add the corn and cilantro, season with salt and remove the pan from the heat. Gently fold the mixture into the prepared masa until well combined, being careful not to overwork. Choose several softened corn husks and tear into 72 thin strips. These will be used to tie the tamales.
  • On a clean, dry surface, spread out 42 softened corn husks and spoon approximately 2-3 tablespoons of the prepared masa into the middle of each husk. Roll each tamale lengthwise, tightly, then twist at both ends, much like the wrapper of a Tootsie Roll. Securely tie each end with a strip of the corn husk or butcher twine. Set aside.

  • Salsa and Eggs. Some families enjoy eating tamales for breakfast. You could lay a nice fried egg over your dish for this meal. You will immediately notice the umami flavor that will result from the combination of the yolk and the cornmeal.
  • Black Bean Soup. Black bean soup is one of the easiest side dishes you can make for your tamales. You only have to cook the beans, salsa, allspice, and chicken brother together.
  • Tropical Fruit. Fresh tropical fruit will take your meal to a new level, even though tamales are a savory dish. When you take a bite of one of the berries or pineapple chunks, for instance, you will cleanse your palate.
  • Jicama Slaw. Jicama is a root vegetable native to Mexico, and it is similar to the turnip. Make a delicious slaw out of this ingredient when mixing it with carrots, cabbage, honey, lime juice, ancho peppers, and vinegar.
  • Cornbread. You may wonder how cornbread goes with tamales when thinking of the typical southern side. The Mexican version of this side uses cheese, chili peppers, and corn.
  • Avocado Soup. Avocado soup is a cold dish that will pair well with your tamales. It is similar to guacamole, but it has a more creamy consistency. Begin by pureeing avocados, chicken brother, water, cilantro, garlic, onions, and chili powder to make this side dish.
  • Street Corn. Remember, tamales come from cornmeal, so that you may want something different than corn for your side dish. The street food version of this vegetable can bring an exciting level of flavors to your meal.
  • Mexican Rice. Rice is one of the most common side dishes for any Latin dish. The Mexican variant specifically is full of flavor due to the many ingredients in the food.
  • Fried Plantains. The flavors of the plantains and the cornmeal complement each other. You will get a savory taste from the tamales and sweetness from the fruit.
  • Frijoles Negros. Though this article mentioned serving black bean soup as a side for your tamales, you should also consider frijoles negros. The latter has a salty and spicy taste that will complement the savoriness of the tamales.

THE ANCIENT HISTORY OF THE TAMALE ... - MESA MEXICAN CUISINE
Tamales are not easily replicated by outsiders and non-indigenous cooks. Some recipes involve over 100 steps and hours of preparation before taking hours to cook. The biggest obstacles are grinding the corn from scratch, adding the right spices, and cooking times. This is why most pre-made tamales lack any real definition or texture.
