This is a traditional potato pancake recipe, and is a wonderful comfort food. Serve with applesauce and sour cream for a light dinner, or with roast chicken for a hearty winter meal. You can use more flour if the mixture seems too wet.

4 large potatoes
1 yellow onion
1 egg, beaten
1 teaspoon salt
2 tablespoons all-purpose flour
ground black pepper to taste
2 cups vegetable oil for frying

Steps:

  • Finely grate potatoes with onion into a large bowl. Drain off any excess liquid.
  • Mix in egg, salt, and black pepper. Add enough flour to make mixture thick, about 2 to 4 tablespoons all together.
  • Turn oven to low, about 200 degrees F (95 degrees C).
  • Heat 1/4 inch oil in the bottom of a heavy skillet over medium high heat. Drop two or three 1/4 cup mounds into hot oil, and flatten to make 1/2 inch thick pancakes. Fry, turning once, until golden brown. Transfer to paper towel lined plates to drain, and keep warm in low oven until serving time. Repeat until all potato mixture is used.

8 Yukon gold potatoes
2 to 3 tablespoons white wine vinegar
1 clove garlic, smashed
Kosher salt
2 eggs
Extra-virgin olive oil

Steps:

  • Grate 5 of the potatoes on the largest holes of a box grater. Toss the potatoes with the vinegar and place in a mesh strainer. Place a couple plates on top of the potatoes and weigh the potatoes down to try and squeeze out the excess water. Let sit for at least 30 minutes.
  • Preheat the oven to 200 degrees F.
  • Cut the remaining 3 potatoes into 6 pieces each. Place them in a saucepan with the garlic. Cover the potatoes with water by about 1-inch. Season the water generously with salt. Bring to a boil, reduce to a simmer, and simmer until they are fork tender, 10 to 12 minutes. Strain and, while the potatoes are still hot, pass them through a food mill or mash with a potato masher.
  • Combine the grated potatoes and the mashed potatoes. In a small dish, beat the 2 eggs and add to the potato mixture. Season with salt.
  • Coat a large saute pan or cast iron pan with olive oil and bring to a medium high heat. Make a 3-inch patty with the potato mixture, cook it, and eat it to make sure that the potato mix is seasoned perfectly. Re-season if needed.
  • Working in batches, make and cook all the pancakes, until they are brown and crispy and cooked through, 3 to 4 minutes on each side. Blot the pancakes on paper towels and sprinkle with salt. Hold on a sheet tray to keep warm in the oven until serving.

1/2 onion
3/4 teaspoon kosher salt (plus more to taste)

1 large egg
1/4 cup vegetable oil (for frying)
Applesauce and sour cream (for serving)
Optional: parsley (garnish)

Steps:

  • Gather the ingredients.
  • Wash, peel, and coarsely grate the potatoes.
  • Place the grated potatoes in a clean dishcloth or cheesecloth and squeeze out as much of the liquid as you can into a bowl.
  • Let the liquid stand a few minutes, then carefully spoon out and discard the top layer of liquid, leaving the potato starch at the bottom of the bowl.
  • Add the potatoes back to the starch.
  • Grate the onion over the potatoes.
  • Add the salt, pepper, nutmeg, and egg. Mix thoroughly.
  • Heat the oil over medium-high heat in a large skillet, preferably nonstick, until it begins to shimmer.
  • Drop about 1/2 cup of potato mixture into the hot oil and flatten with the back of a spoon. Fry, undisturbed, 4 to 5 minutes on each side or until golden brown.
  • Drain on paper towels, and serve hot with applesauce and sour cream, if you like. Garnish with parsley, if desired.

5 medium size potatoes (about 1.5 lb)

3 Tbsp of all purpose flour
1 Tbsp of sour cream

Cooking oil

Steps:

  • Peel potatoes and onion:
  • Take big bowl, grate potatoes and onion (on the star shaped grater), taking turns and mixing grated mixture. Onion juice will keep potatoes from browning.
  • Add flour, egg, sour cream and mix it well, than add 1 tsp of salt and some black pepper, batter should be still liquid enough so you can easily ladle it.
  • Warm up a skillet with 2-3 Tbsp of cooking oil over medium/high heat. Add 1 heaping Tbsp of mixture at a time to the skillet fry on one side until golden brown in color, then flip to other side and fry for the same amount of time. Repeat the same procedure for the rest of the batter.

1 medium onion, peeled
4 large russet or Idaho potatoes (about 3 1/2 pounds), peeled
2 large eggs
2 tablespoons all-purpose flour
6 tablespoons vegetable oil
6 tablespoons unsalted butter
Applesauce and/or sour cream, for serving

Steps:

  • Preheat oven to 200°F. Place 2 nonstick baking sheets in oven.
  • Using box grater or food processor fitted with grating disc, coarsely grate onion and place in colander set in sink. Coarsely grate potatoes, add to colander, and set aside to drain.
  • In large mixing bowl, lightly beat eggs, then whisk in flour.
  • Press potatoes and onion to extract as much liquid as possible, then add to egg/flour mixture. Season with salt and freshly ground black pepper. Using wooden spoon or hands, mix well, but do not overwork.
  • In heavy-bottomed, 12-inch skillet over moderately high heat, heat 1 tablespoon oil and 1 tablespoon butter until hot but not smoking. Drop 4 scant 1/4-cup portions of potato mixture into pan and flatten with spatula to form four 3-inch pancakes.
  • Fry until bottoms are golden-brown, 4 to 5 minutes, then turn over and fry until golden-brown and crisp, an additional 4 to 5 minutes. Transfer to paper towels to drain; season immediately with salt and pepper. Keep warm on baking sheets in oven while making remaining pancakes.
  • Using paper towels, carefully wipe out pan. Add 1 tablespoon oil and 1 tablespoon butter and fry 4 more pancakes. Repeat with remaining batter, wiping out pan and adding 1 tablespoon oil and 1 tablespoon butter before each batch.
  • Serve pancakes hot with applesauce and/or sour cream.

2 eggs, separated
1 teaspoon salt
1 1/2 tablespoons flour
1/2 teaspoon baking powder
1/2 cup vegetable shortening, for frying

Steps:

  • Grate potatoes by hand, or process them in a food processor, and place in a large bowl.
  • Add beaten egg yolks to grated potatoes.
  • Stir in flour, salt, and baking powder, and mix well.
  • Beat egg whites until stiff, and fold into potato mixture.
  • On medium high heat, place enough shortening in a large skillet to have about 1/4" deep oil when melted.
  • Drop batter by large spoonfuls into hot oil.
  • Turn over when edges become a nice crispy brown, about 2 minutes.
  • Cook another minute or two on the other side.
  • Remove to a paper towel lined plate and sprinkle with salt, if desired.
  • Add shortening as needed to keep the oil level deep enough to fry the pancakes, but not deep enough to cover them.

2 lbs (900g) potatoes*
1 small/medium onion
1 large egg
salt and pepper (to taste)

Steps:

  • Grate the potatoes: Grate half of the potatoes and the onion on the big holes of a box grater, then grate the remaining potatoes on the small holes of a box grater. Mix together with 1 teaspoon of salt and let stand for 15 minutes.
  • Drain the potatoes: After this time squeeze out as much water as you can from the potatoes, reserving the water in another bowl (!) (I'm just taking a handful of grated potatoes and squeeze them out with my hands, but you can also use a fine mesh-strained and a spoon or wrap the potatoes in a clean kitchen cloth to do it). Discard the liquid from the bowl, leaving a thick white paste that will be at the bottom of the bowl (potato starch).
  • Combine with the other ingredients: Combine the grated and drained potatoes and onion with a lightly beaten egg, and potato starch together. Season lightly with salt (the mixture should be at this point lightly salty) and generously with black pepper.
  • Fry: Pour a couple of tablespoons of frying oil into the pan and warm it up over medium or medium-high heat (the amount of oil will depend on how big the pan is, there should be enough oil to cover a minimum of 1/3 of the thickness of the pancakes, and better would be at least 1/2 of their thickness). When the oil is hot, scoop 3-4 heaped tablespoons of batter onto the pan (or as many as will fit in your pan without overcrowding the pancakes, about 1 heaped tablespoon of batter per pancake), flatten it with a fork into rounds about 1/4 - 1/3 inch (1/2 - 3/4 cm) thick. Cook until golden then flip over and cook on the other side until golden. Transfer to a plate lined with paper towels to drain the excess fat.
  • Enjoy!

A wonderful and hearty Irish potato pancake recipe.

2 cups (9 oz) all-purpose flour
1 tsp baking powder
1 tsp Kosher or sea salt
1 cup (8 oz) mashed potatoes, boiled in salted water (I prefer Idaho© potatoes)
1 1/2 cups (8 oz) grated, raw potato
1 cup buttermilk (or more if needed)
butter for the griddle

Steps:

  • In a small bowl, place the flour, baking powder and salt; set aside.
  • In a large mixing bowl, combine the mashed potatoes with the grated raw potato, then add the flour and mix well.
  • Slowly add the buttermilk and stir gently (do not over mix).
  • The mixture should be like a very firm, thick batter; almost like a dough, so add more buttermilk if needed (I just used 1 cup/8 oz).
  • Heat a griddle or nonstick frying pan over medium-high heat, and add a pat of butter, just before scooping out some of the boxty batter onto the pan.
  • Flatten and shape into a nice, round pancake shape and fry until golden brown on the bottom.
  • Turn and continue to cook until golden brown on top too, turning the heat down if they are browning too quickly (remember there are raw potatoes which need to cook).
  • Continue to add a little butter and fry the boxty until all the batter is finished. Serve hot.

  • Cut the potatoes into chunks and cover with water. I fill my 5 quart pot about 1/2 - 3/4 full with potatoes if that helps. Boil till tender when poked with a fork. The time this takes will depend on how small you cut the potatoes. Drain. Meanwhile, melt the butter in the pot used for the potatoes and add the spinach. Add the green onions and cook till the spinach is wilted, stirring well. Add the potatoes back into the pot and mash with a potato masher. I usually leave mine with a few lumps, but mash till your heart's content. Add in the milk and salt and mix well. Taste and add salt and milk as needed. The potatoes shouldn't be too dry. Serve as is or cool before making pancakes.
  • To make pancakes, take about 4 - 5 cups of leftover cold or just cooled mashed potatoes and add two large eggs and 1/3 cup flour if desired. I forgot the flour this time but they would probably hold together better if they had it. Mix well. Also add a pinch more salt. Heat a skillet over medium heat and add a tiny bit of butter, about a teaspoon for the whole pan. Drop 1/3 - 1/2 cup at a time and then flatten to 1/2" with the back of a spoon or flipper. The mixture will be sticky and wet. Cook over medium for 7-9 minutes each side checking to see that the bottom is golden before flipping. Repeat with the remaining batter or save in the fridge for a couple days. Enjoy with ketchup, gravy or just plain.
