Easiest Fried Rice (Using Uncooked Rice) image

Found this on an Aussie Website and have used it ever since. It is the easiest fried rice I've ever made and it is so good. I have often wanted to cook fried rice and I have had no leftover cooked rice ready well you don't use leftover rice for this recipe so it is a very handy recipe.

1 cup rice, uncooked (I use Basmati)
1 -2 cup chicken stock
2 -3 slices bacon, cooked & chopped
2 tablespoons shallots (green onions)
1 cup prawns, cooked (or add chicken, pork or anything you like instead)
2 eggs
1 tablespoon lemon juice (if using prawns)
2 -3 tablespoons soy sauce, to taste

Steps:

  • Cook the eggs in a pan with a quick spray of olive oil. I break the yolks and run a knife through them and cook until just set then cut into small strips.
  • Fry rice until browned, add stock and cook until moisture is absorbed and rice is tender.
  • Add shallots, then egg and bacon pieces, cooked prawns and heat through.
  • Add lemon juice (if using prawns) and soy sauce to taste.

Steps:

  • Put cauliflower in food processor or blender and process until it looks like rice.
  • Chop the remaining vegetables and add to cauliflower.
  • In a separate dish stir tamari, sesame oil and ginger until blended and add to cauliflower mixture. Add sunflower and pumpkins seeds. Stir to coat the vegetables. Let the mixture sit covered for at least 4 hours so the flavors can develop.
  • When ready to serve, top with sesame seeds. Can be eaten cold or at room temperature.

This may not be the healthiest, but it is SO good!!! The original recipe came from a little hand-typed Amish cookbook. The only change I made was I added some onion...I love fried potatoes w/ onions!!! HINT: Never use "new" potatoes...they do not fry well...whites fry better then reds & golds.

6 medium russet potatoes, washed & unpeeled
1 medium onion, peeled (yellow or white)
ice water
salt & pepper, to taste, no other seasoning needed
3 -4 tablespoons lard (can use CRISCO, but it changes the taste)

Steps:

  • Wash the potatoes under cold water & pat dry -- cut away any bad spots You can peel them, but I prefer not to.
  • Peel the onion.
  • Thinly slice the potatoes & onion.
  • Add enough ice water to cover & let soak for about 15 minutes.
  • Over medium-high heat, melt the lard (or CRISCO) -- cast iron works best.
  • Drain the potatoes/onions & immediately add to the hot grease -- BE CAREFUL -- THE GREASE WILL SPLATTER!
  • Season as desired.
  • Cover & cook over med.-high heat until soft, stirring often.
  • If potatoes stick, add a little more lard/CRISCO.

This is the recipe of the basic Chinese fried rice.

500 g rice
3 medium size eggs
2 tablespoons chopped garlic
2 tablespoons scallions
½ teaspoon of salt
¼ teaspoon ground white pepper
2 tablespoons of premium grade light soy sauce
3 tablespoons vegetable oil

Steps:

  • Cut the scallion into thin rings. Soak a quarter of it in cold water for ten minutes, Remove and drained. Use the other three-quarters for frying the rice.
  • Mix the beaten eggs with the cooked rice.
  • Heat up the vegetable oil over low heat in the wok.
  • Saute the chopped garlic slowly. Once it starts to turn sticky and become light brown, remove it immediately from the oil. Set aside. Leave the garlic oil in the wok.
  • Add the rice to the oil. Stir-fry the rice over low heat slowly until the egg is cooked and form a thin layer on each grain of rice.
  • Add the fried garlic, the unsoaked scallions, salt, and pepper to the rice, stir-fry over high heat for about one minute.
  • Change to low heat, add the premium soy sauce, mix well and dish out.
  • Sprinkle the soaked, drained scallion on the fried rice. Serve.

A quick fried rice recipe like you get at your favorite Chinese restaurant. Leftover rice, plus a couple of eggs, baby carrots, peas, and soy sauce is all you need. Garnish with sliced green onions, if desired.

½ cup frozen green peas
2 tablespoons vegetable oil
1 clove garlic, minced, or to taste
2 large eggs
3 cups leftover cooked white rice
1 tablespoon soy sauce, or more to taste
2 teaspoons sesame oil, or to taste

Steps:

  • Place carrots in a small saucepan and cover with water. Bring to a low boil and cook for 3 to 5 minutes. Stir in peas, then immediately drain in a colander.
  • Heat a wok over high heat. Pour in vegetable oil, then stir in carrots, peas, and garlic; cook for about 30 seconds. Add eggs; stir quickly to scramble eggs with vegetables.
  • Stir in cooked rice. Add soy sauce and toss rice to coat. Drizzle with sesame oil and toss again.

2 teaspoons ground black pepper
sea salt to taste

Steps:

  • Grate celery root into a bowl.
  • Pulse pecans and garlic together in the bowl of a food processor until ground.
  • Stir pecan mixture into celery root. Add broccoli, Nama Shoyu, olive oil, sesame seeds, pepper, and salt; toss to combine.

1 clove garlic
1 teaspoon nama shoyu , or to taste
pinch sea salt
2 tablespoons fresh cilantro (minced)

Steps:

  • Place all of the ingredients except the cilantro in a food processor, and pulse chop about 10 times or until the cauliflower is ground up small. Be careful not to over-process, stop when it looks like rice, or you will have a pate on your hands.
  • Transfer the mixture to a bowl, and toss in the minced cilantro.
  • Enjoy your raw food "rice"!

  • In a medium sized pot, bring 3 cups of water to a boil with a 1 tsp of salt. Add the rinsed rice, cover, reduce to a light simmer and cook for 15-20 minutes until the rice is tender. You can use another method to cook the rice, such as an Instant Pot or rice cooker if you prefer.
  • In a large frying pan over medium heat, heat half of the sesame oil then add half of the mushrooms and cook for 3-5 minutes until mushrooms are browned and crisp. Transfer to a plate and do the following with the remainder of the sesame oil and mushrooms.
