Elegant enough for a Dinner Party or Holiday Meal yet simple and quick to put together ahead of time. Recipe can easily be doubled or tripled as needed.

Steps:
- Rinse chicken and dust with flour.
- Brown chicken in a little oil.
- Spray a casserole dish lightly with Pam or cooking oil.
- Put in rice, salt and pepper to taste, and strew onion about.
- Add mushrooms, juice and all.
- Arrange chicken artfully on top, pour the chicken broth over all.
- Dot with butter.
- Cover and bake for 1 hour in a preheated 350 degree oven.

Steps:
- Preheat oven to 350°F.
- Place rice in a layer on the bottom of a 9x13" glass dish.
- Top with mushrooms and water chestnuts.
- Combine onion soup mix, cream of mushroom soup, and water in a separate bowl, mixing well.
- Place chicken in a layer on top of the rice and vegetables.
- Gently pour soup mixture over the chicken.
- Cook for 1 1/2 hours, or until the chicken is cooked through and rice is ready.

- Flour and then brown the chicken in a little oil. While it browns, put the rice salt, and pepper in a greased casserole and strew the onion about. Put in the mushrooms, juice and all. Arrange the chicken artfully on top, pour the bouillion over it, and dot with the butter. Cover and bake at 350 degrees for an hour.
GOLDEN MUSHROOM CHICKEN AND RICE CASSEROLE
My parents have been making this recipe since I was little and I always loved it. It probably came form Campbell's. It uses Golden Mushroom Soup instead of Cream of Mushroom.

Steps:
- Preheat oven to 350° Fahrenheit.
- Grease 8x9 casserole dish (I spray mine w/Pam cooking spray).
- Finely chop onion and spread on bottom of casserole dish.
- Pour rice over onion.
- Mix golden mushroom soup with 1/2 can of water (it will be lumpy).
- Pour most of the soup mixture over the rice and onions but save some soup mixture for later.
- Season chicken with pepper.
- Place chicken over rice and pour the rest of the soup mixture on top.
- Cover with foil and bake for approximately 1 hour and 10 minutes or until chicken is done.
- You may need to stir the rice while cooking to make sure the soup mixture is distributed evenly.
