1 large egg white
3/4 teaspoon vanilla extract
2 cups walnut halves
1/2 cup sugar
DRESSING:
1/4 cup canola oil
2 tablespoons cider vinegar
1 tablespoon sugar
1-1/2 teaspoons light corn syrup
1 teaspoon poppy seeds
1/4 teaspoon salt
1/4 teaspoon ground mustard
SALAD:
8 ounces fresh baby spinach (about 10 cups)
1-1/2 cups fresh raspberries

Steps:

  • Preheat oven to 300°. In a small bowl, whisk egg white and vanilla until frothy. Stir in walnuts. Sprinkle with sugar; toss to coat evenly. Spread in a single layer in a greased 15x10x1-in. baking pan., Bake 25-30 minutes or until lightly browned, stirring every 10 minutes. Spread on waxed paper to cool completely., In a small bowl, whisk dressing ingredients until blended. Place spinach in a large bowl. Drizzle with dressing; toss to coat. Sprinkle with raspberries and 1 cup candied walnuts (save remaining walnuts for another use).

4 cups of baby spinach
4 cups of romaine, torn into bite size pieces
1 cup of walnuts, roasted and chopped
½ red onion, sliced into thin rings
1 cup feta cheese, crumbled
½ cup white wine vinegar
½ cup honey, sugar or the equivalent of stevia
2 cloves garlic
2 Tablespoons of grated onion
1 teaspoon kosher salt
¼ teaspoon cracker black pepper
1 cup raspberries
¾ cup oil
2 Tablespoons mayonaise

Steps:

  • Wash and drain the raspberries in a large colander. Allow them to dry on a clean towel.
  • Preheat oven to 350˚degrees. Arrange walnuts on a cookie sheet in a single layer. Bake 8-10 minutes, watching carefully.
  • While the walnuts are roasting, slice up the red onion, wash and spin the spinach and romaine, and crumble the feta cheese.
  • Combine the white wine vinegar, honey, garlic, onion, salt, pepper, and berries in the jar of a blender. Process until smooth and then with the motor running add the oil in a steady stream. Add the mayonnaise and refrigerate for at least 1 hour.

Raspberry Walnut Vinaigrette:
1/2 cup toasted walnuts, chopped
6 oz. baby spinach, rinsed and dried
1/2 cup dried cranberries
1/2 cup crumbled blue cheese or feta
2 tomatoes, chopped
1 avocado, peeled, pitted and diced
1/2 red onion, thinly sliced
2 Tbsp. red raspberry jam (with seeds)
2 Tbsp. red wine vinegar
1/4 cup walnut oil or extra virgin olive oil
salt and freshly ground black pepper, to taste

Steps:

  • 1. To toast the walnuts, preheat oven to 375 F. Arrange walnuts in a single layer on a baking sheet. Toast in the oven for 5 minutes, or until the walnuts begin to brown. 2. In a large bowl or separate serving bowls, toss together spinach, cranberries, cheese, tomato, avocado, and red onion. 3. Combine raspberry jam and red wine vinegar in a food processor. With the motor running slowly add in the oil. Season to taste with salt and pepper. (This can be done by hand with a whisk but the dressing will easily separate.) Drizzle dressing over the salad and serve.

1 small chunk Parmesan or pecorino

Steps:

  • For the dressing: Whisk together the vinegar, mustard, honey, jam, 1/2 teaspoon salt and 1/4 teaspoon pepper in a small bowl. Whisk in the oil in a slow stream and continue whisking until the dressing is emulsified.
  • For the salad: Toss together the spinach, blackberries, onions and Candied Walnuts in a large salad bowl. Drizzle with the dressing and toss. Using a vegetable peeler, shave some cheese over the top.
  • Line a baking sheet with parchment paper and set aside.
  • Melt the butter in a medium saucepan over low heat. Add the walnuts and stir to coat. Raise the heat to medium, add the sugar and cook until the sugar is dissolved and caramelized, stirring often, about 5 minutes. Stir in the cinnamon, 1/2 teaspoon salt and 1/4 teaspoon pepper, then transfer the mixture to the baking sheet. Spread the nuts in a single layer. Let the walnuts cool until hardened, about 15 minutes.
