My son, eat honey because it is good, and the honeycomb which is sweet to your taste. Proverbs 24:13 Talk about sweet to your taste! You will find it reeeallly hard not to eat the whole, big, bowl of this "goodness". All by your self. As soon as possible. But, you have to share, it's only right. This original recipe can be found here:inspiredreamer.com Great site. This wonderful dish is originally called, Raspberry Vanilla Jello Salad. Maybe calling it a "salad" WILL justify eating the whole bowl! Enjoy.

1 box(es) (5.1oz) instant vanilla pudding
32 ounce(s) container greek vanilla yogurt
8 ounce(s) continer cool whip (thawed)
1 package(s) frozen raspberries

Steps:

  • Combine (dry) pudding mix and the Greek vanilla yogurt, stirring until well mixed. (the original recipe says, "vanilla yogurt". I only had Greek so if you can't find Greek regular will do)
  • Fold in Cool Whip. (I had "Lite" Cool Whip and it was delicious)
  • Lastly, fold in the frozen raspberries. You can serve this right away, but the raspberries will be frozen. I waited about 2 hours to serve, and they were just right. Give it a gentle stir right before and it will look beautiful.

1/2 cup sugar
1/2 cup water
1 cup plain Greek yogurt
1 cup frozen raspberries
1/2 cup apple juice or cider
1 teaspoon vanilla extract
2 cups ice

Steps:

  • In a small saucepan, bring the sugar and water to a boil over medium-high heat. Simmer, stirring occasionally, until the sugar has dissolved, about 5 minutes. Cool for 20 minutes.
  • Pour the cooled syrup into a blender. Add the yogurt, raspberries, apple juice, vanilla, and ice. Blend until the mixture is smooth and thick.
  • Pour into glasses and serve.

HOMEMADE RASPBERRY VODKA

Number Of Ingredients 4

500g raspberries
250g white caster sugar
2 vanilla pods , split down the centre
1l vodka

Steps:

  • Sterilise a 1.5 litre preserving jar (see tip, left). Tip the raspberries, sugar and vanilla into the jar.
  • Pour half the vodka into the jar. Seal the lid, then turn the jar upside down and give it a good shake to evenly distribute the sugar. Remove the lid and add the remaining vodka.
  • Ensure the jar is sealed and store in a cool dark place, turning/shaking once a day for the first week. After 2-3 weeks you can strain the vodka through a sieve lined with coffee filter papers or a clean kitchen cloth. Pour the vodka back into mini bottles and label. The vodka will keep its pink colour for a few months, but will be drinkable for 2 years.
