Here are my simple raspberry streusel bars with four incredible flavors: a buttery shortbread crust, thick raspberry filling, brown sugar streusel, and a drizzle of sweet vanilla icing.

1/2 cup (115g) unsalted butter, melted
1/4 cup (50g) granulated sugar
1 teaspoon pure vanilla extract
1/4 teaspoon salt
1 cup (125g) all-purpose flour (spoon & leveled)
3/4 cup (240g) raspberry preserves*
12-16 fresh raspberries*
1/2 cup (40g) old-fashioned oats
1/3 cup (70g) packed light or dark brown sugar
1/4 teaspoon ground cinnamon
1/4 cup (31g) all-purpose flour (spoon & leveled)
1/4 cup (60g) unsalted butter, cold and cubed
optional (but encouraged!): vanilla icing for topping

Steps:

  • Preheat the oven to 300°F (149°C). Line the bottom and sides of an 8-inch square baking pan with parchment paper, leaving enough overhang on all sides. Set aside.
  • Stir the melted butter, granulated sugar, vanilla, and salt together in a medium bowl. Add the flour and stir until everything is combined. Press the mixture evenly into the prepared baking pan. Bake for 15 minutes.
  • Remove the crust from the oven, and turn the oven up to 350°F (177°C).
  • Spread preserves over warm crust. Dot the preserves with raspberries on top.
  • Whisk the oats, brown sugar, cinnamon, and flour together in a medium bowl. Cut in the chilled butter with a pastry blender or two forks (or even with your hands) until the mixture resembles coarse crumbs. Sprinkle the filling with streusel and bake for 30-35 minutes or until the streusel is golden brown. The raspberry filling should be bubbling on the edges.
  • Remove from the oven and allow to cool for at least 20 minutes at room temperature, then chill in the refrigerator for at least 2 hours (or overnight). Lift the foil or parchment out of the pan using the overhang on the sides and cut into bars. I usually cut them into 16 smaller bars, but you can cut them into 12 larger bars. Drizzle the bars with vanilla icing, if using. These raspberry bars can be enjoyed at room temperature or cold. I personally like them cold.

1/2 pound (2 sticks) unsalted butter, at room temperature
3/4 cup sugar
1 teaspoon pure vanilla extract
2-1/3 cups all-purpose flour
1/2 teaspoon kosher salt
10 to 12 ounces good raspberry jam, such as Hero
2/3 cup good granola without dried fruit
1/4 cup sliced almonds
Confectioners' sugar, for sprinkling

Steps:

  • Preheat the oven to 350 degrees.
  • Place the butter and sugar in the bowl of an electric mixer fitted with the paddle attachment and mix on medium speed just until combined. With the mixer on low, add the vanilla.
  • Sift the flour and salt together and, with the mixer on low, slowly add to the butter mixture, mixing until it almost comes together in a ball. Turn the dough out on a board. Lightly pat two-thirds of the dough evenly on the bottom of a 9-inch square baking pan and about 1/4-inch up the sides. Spread with the jam, leaving a 1/4-inch border. Mix the granola into the remaining dough with your hands. Break the dough into small bits and distribute it on top of the jam, covering most of the surface. Sprinkle the almonds on top. Bake the bars for 45 minutes, until lightly browned.
  • Cool completely and cut into 9 or 12 bars. Sprinkle lightly with confectioners' sugar.

6 tablespoons confectioners' sugar
1/8 teaspoon baking powder
1/4 cup finely chopped finely chopped roasted unsalted almonds
2/3 cup unsalted butter, cut into pieces
1 cup seedless raspberry jam, preferable home made
1 cup all-purpose flour
1/3 cup granulated sugar
1/4 teaspoon almond extract
1/3 cup unsalted butter, cut into pieces
3/4 cup confectioners' sugar
1 -2 tablespoon half-and-half cream (10 percent) or 1 -2 tablespoon milk

Steps:

  • Preheat oven to 350 degrees F.
  • Line a 9-inch square baking pan with foil, and grease with unsalted butter or nonstick vegetable spray.
  • Crust: In a bowl, whisk together flour, confectioner's sugar and baking powder until well combined.

  • Let cool completely in baking pan on a wire rack.
  • Using foil extensions, lift cooled squares from pan and place on a cutting board.
  • Fold down edges of foil away from sides.
  • If foil sticks, gently run knife blade between squares and foil to loosen.
  • Icing: In a small bowl, combine confectioner's sugar, 1 tablespoon of the cream and the almond extract.
  • Using a small whisk or a fork, blend until icing is smooth and thin enough to drizzle from a fork.
  • Add more cream as needed to achieve the right consistency.
  • Drizzle icing over cooled squares.
  • Let stand 20 minutes or until the icing is set.
  • Using a long serrated knife, cut into 1 1/2-inch squares.
  • Tip: Let icing set completely, then store squares between layers of wax paper in a tightly sealed container at room temperature for up to five days.

1 1/4 cups all-purpose flour
1/2 cup firmly packed brown sugar
1 teaspoon baking powder
1/4 teaspoon salt
7/8 cup margarine, melted
1 cup raspberry jam or 1 cup preserves
3/4 cup white chocolate chips, divided
1/4 cup toasted chopped almonds

Steps:

  • Preheat oven to 350°F.
  • Combine oats, flour brown sugar, baking powder and salt in large bowl.
  • Stir in margarine until mixture is crumbly (reserve 1 cup crumb mixture onto bottom of an 8" square pan). Bake 10 minutes.

2 tablespoons unsalted butter, cut into 1/2-inch pieces and softened to cool room temperature
1/4 cup packed brown sugar
1/2 cup old fashioned oats
1/2 cup pecans, chopped fine
3/4 cup raspberry preserves
3/4 cup fresh raspberry
1 tablespoon lemon juice

Steps:

  • Adjust oven rack to middle position; heat oven to 375 degrees. Cut 18-inch length foil and fold lengthwise to 8-inch width. Fit foil into length of 13 by 9-inch baking dish, pushing it into corners and up sides of pan; allow excess to overhang pan edges. Cut 14-inch length foil and fit into width of baking pan in same manner, perpendicular to first sheet. (If using extra-wide foil, fold second sheet lengthwise to 12-inch width.)   • While crust is baking, add brown sugar, oats, and nuts to reserved flour mixture; toss to combine. Work in remaining 2 tablespoons butter by rubbing mixture between fingers until butter is fully incorporated. Pinch mixture with fingers to create hazelnut-sized clumps; set streusel aside.
  • Combine preserves, raspberries, and lemon juice in small bowl; mash with fork until combined but some berry pieces remain.
  • Spread filling evenly over hot crust; sprinkle streusel topping evenly over filling (do not press streusel into filling). Return pan to oven and bake until topping is deep golden brown and filling is bubbling, 22 to 25 minutes. Cool to room temperature on wire rack, 1 to 2 hours; remove from baking pan by lifting foil extensions. Using chef's knife, cut into squares and serve.
