Raspberry Porter Trifle with Chocolate Ganache and Whipped Cream image

1 (3-ounce) package raspberry gelatin
1 to 2 tablespoons sugar
1 cup boiling water
1/4 cup ice water
1/2 cup porter
1/2 cup milk
1/2 cup heavy cream
1 vanilla bean, or vanilla extract, to taste (approximately 3 tablespoons)
1/4 cup sugar
4 egg yolks
1 (29 to 32-ounce) can fruit cocktail, drained
1 (12-ounce) pound cake, thawed and cut into 3/4-inch cubes (recommended: Sara Lee)
2 bananas, sliced and tossed with lemon juice
4 ounces semisweet chocolate pieces or chocolate squares, finely chopped
2/3 cup heavy cream
1/2 cup heavy cream whipped until light and fluffy with an electric beater

Steps:

  • 4 (16-ounce) or larger wine glasses or snifters (note that the idea of a trifle is to see the layers)
  • Dissolve gelatin and sugar in boiling water. Add cold water and porter. Cover and set aside at room temperature.
  • Pour the milk and heavy cream into a heavy bottomed saucepot and scrape the seeds from the vanilla bean into the pot (or add vanilla extract). (If using a vanilla bean, put the vanilla pod in the pot as well.) Add half the sugar to the pot and bring to a simmer (just below a boil). In a small bowl whisk together the egg yolks and the rest of the sugar and temper it by adding a small amount of the heated milk mixture to the bowl while whisking constantly (known as a liaison). Now pour the liaison (egg mixture) into the milk pot, stirring constantly. You are only heating it. Do not boil. Do not cook. The idea of a liaison is to incorporate the eggs and avoid making them into scrambled eggs! You want the mixture to begin to thicken so it will coat the back of a spoon. Remove from heat and allow to cool, then remove vanilla pod and discard, and refrigerate until chilled.
  • Spoon fruit cocktail into each glass as a base layer. Follow with a layer of cubed pound cake, then a layer of sliced bananas. Spoon about 1/3 cup gelatin/porter mixture on top of the fruit and refrigerate for 2 to 4 hours until the gelatin is set.
  • A few minutes before serving, make the ganache, place the chocolate in a small heatproof bowl. Bring the cream to just under a boil in a small saucepan. Pour the cream over the chocolate and let sit for about 1 to 2 minutes. Stir gently with a rubber spatula until the chocolate is melted and smooth. If the chocolate is not melting readily, nest the bowl in another bowl of very hot tap water.
  • Spoon creme anglaise over the chilled trifle and drizzle with ganache. Spoon whipped cream on top to finish.
  • Serve immediately.

MASHED POTATOES WITH PESTO AND WHIPPED CREAM

2 pounds medium russet potatoes
Kosher salt
1/2 cup heavy cream
1 cup whole milk, warmed
1/2 to 1 stick unsalted butter, at room temperature
1/2 cup pesto
Freshly ground black pepper

Steps:

  • Put the potatoes in a large saucepan and add enough cold water to cover. Season with salt and bring to a simmer; cook, uncovered, until the potatoes are fork-tender, about 45 minutes.
  • Meanwhile, pour the heavy cream into a bowl and whip with a whisk or hand mixer until soft peaks form. Set aside.
  • Drain the potatoes. Hold with an oven mitt or kitchen towel and peel off the skins, then transfer the potatoes to a bowl.
  • Add the warm milk and butter to the bowl and mash with a potato masher or fork (or pass the potatoes through a ricer or food mill for a smoother mash). Fold in the whipped cream and pesto. Season with salt and pepper.

1 vanilla bean (or vanilla extract to taste approximately 3 tablespoons)
1/4 cup sugar
4 egg yolks
1 (32 ounce) can fruit cocktail (drained)
1 frozen pound cake (12 oz, thawed and cut into 3/4-inch cubes)
2 bananas, sliced and tossed with lemon juice
4 ounces semisweet chocolate pieces (OR chocolate squares, finely chopped)
2/3 cup heavy cream
1/2 cup heavy cream (whipped until light and fluffy with an electric beater)

Steps:

  • Raspberry layer:.
  • Dissolve the gelatin and sugar in boiling water.
  • Add the cold water and porter.
  • Loosely cover with a clean paper towel and set aside at room temperature.
  • Crème Anglaise:.
  • Pour the milk and heavy cream into a heavy bottomed saucepot and scrape the seeds from the vanilla bean into the pot (or add vanilla extract). (If using a vanilla bean, put the vanilla pod in the pot as well.)
  • Add half the sugar to the pot and bring to a simmer (just below a boil).

2 packages ladyfingers
1/2 to 2/3 cup almond liqueur (recommended: Amaretto)
2 canisters store bought whipped cream
3 1/2 ounces bittersweet chocolate baking bar, finely chopped
1/4 cup slivered almonds
Cocoa powder, for dusting
1 pint raspberries

Steps:

  • Line an 8 to 9-inch square or round glass dish or bowl with ladyfingers. Douse with half of the liqueur, spray with a layer of whipped cream. Sprinkle with chocolate pieces and slivered almonds. Repeat this layering another time. After the second layering, spray a healthy shot of whipped cream on top. Dust with cocoa powder, garnish with raspberries and serve or chill until ready to serve.

1 can (14 ounces) sweetened condensed milk
1 cup cold water
1 teaspoon almond extract
1 package (3.4 ounces) instant vanilla pudding mix
2 cups heavy whipping cream, whipped
1 prepared angel food cake (8 to 10 ounces), cut into 1-inch cubes
2 tablespoons seedless raspberry jam
2 cups fresh raspberries
Chocolate curls and fresh mint

Steps:

  • In a large bowl, beat the milk, water and extract until blended. Add pudding mix; whisk for 2 minutes. Let stand for 2 minutes or until soft-set. Cover and chill until mixture is partially set. Fold in the whipped cream., Place half of the cake cubes in a 2-qt. glass serving bowl. Top with half of the cream mixture. Carefully spread with jam. Sprinkle with 1 cup raspberries. Layer with remaining cake cubes, cream mixture and raspberries. Garnish with chocolate curls and mint.
