Tasty meatballs in a light Japanese sweet and sour sauce.

1 lb ground pork
1 onion (diced)
1 inch ginger (grated)
1 tbsp sake
1 egg
2 tbsp corn starch
1 tsp salt
oil for frying
2 tbsp soy sauce
2 tbsp mirin
2 tbsp sake
2 tbsp seasoned rice vinegar
1 tbsp cornstarch mixed in 3 tbsp water

Steps:

  • Mix all the ingredients for the meatballs (minus the oil) in a bowl and mix well.
  • Take about 1 tbsp of the meat mixture and roll into a ball. Repeat until you use up all the meat (it will be about 24 meatballs). *TIP*: wet your hands periodically to keep the meat from sticking.
  • Heat oil in a deep frypan or pot to approximate 350° F.
  • Gently drop each meatball into the oil. Fry in batches (do not overcrowd( for about 3-4 minutes (or until browned and cooked through).
  • Transfer to a mesh tray or onto paper towels to drain excess oil.
  • For the sauce, add all the sauce ingredients (except the cornstarch/water combo) in a small saucepan and heat over medium-high heat.
  • When it starts boiling, reduce the heat on low and add the cornstarch/water mixture. Mix well until the sauce is thickened. Remove from heat.
  • Pour sauce over meatballs, toss, and serve!

The full name for this is 'niku-dango no amakara-ni'. This appetiser/side dish is very simple to make. The presentation is lovely since the sauce acts also as a glaze...and its sweet coating makes these meatballs a kid-pleaser too! For fans of Asian street food these meatballs can be presented 'yakitori-style' by putting them on wooden skewers, with 4-5 balls on each skewer.

8 ounces ground pork
2 ounces lettuce, finely chopped
3 ounces carrots, finely grated
1 tablespoon sake
1 pinch salt
1/2 beaten egg
1 tablespoon cornflour
1 teaspoon sesame oil (optional)
4 tablespoons water
1 tablespoon sake
1 tablespoon mirin
1 tablespoon caster sugar
1 tablespoon light soy sauce
2 tablespoons cornflour

Steps:

  • Mix together all the ingredients for the meatballs in a bowl. Knead the mixture until the ingredients are well combined. The beaten egg should give a stickiness to the rest of the mixture, holding it together.
  • Take a small amount of the mixture -slightly less than a tablespoon) in your hand and mould it into a ball. Continue until the meatball mixture is used up.
  • Fill a pan about one-third full of cooking oil. Heat oil to 350ºF and deep fry the meatballs until brown, about 5 minute (Turn meatballs halfway to ensure they are browned evenly.).
  • Remove meatballs to plate lined with absorbent paper, to drain off excess oil.
  • Combine all the ingredients for the sauce in a pan. Mix them together over a low heat, stirring until the sauce has thickened.
  • Add the meatballs to the pan and roll them around in the pan until they are all covered with the sauce.
  • Pour the meatballs with sauce onto a serving plate and serve!

2 1/2 lbs chicken thigh meat, ground
1 1/4 lbs pork, ground
10 ounces beef, ground
5 ounces panko Japanese-style bread crumbs (kikkoman brand is recommended)
1/3 cup sake
1/3 cup tamari soy sauce
1/3 cup green onion, chopped
3 shiitake mushroom caps, dried, soaked, stemmed and minced
2 1/2 tablespoons ginger juice
2 1/2 tablespoons mirin
1 tablespoon shiso leaves or 1 tablespoon basil leaves, chopped
2 1/2 teaspoons salt
2 1/2 teaspoons sugar
1 1/4 teaspoons red pepper seasoning (Ichimi, Japanese red pepper)
1 kombu seaweed (4-inch x 6-inch)
1 gln water
24 bamboo skewers (6 inch long)
1 1/2 cups soy sauce (kikkoman is recommended)
1 1/2 cups mirin
3/4 cup sake
3/4 cup sugar
1 1/2 tablespoons yuzu juice or 1 1/2 tablespoons tangerine juice

Steps:

  • In a large bowl, mix together chicken, pork, beef, panko, sake, soy sauce, green onion, shiitakes, ginger juice, mirin, shiso, salt, sugar, and ichimi, being careful not to overwork.
  • Form into 72 (1-ounce) meatballs. Refrigerate.
  • In large pot, combine kombu and water. Bring to just below a simmer; remove kombu. Bring to a simmer; add half of the meatballs. Simmer 8 to 10 minutes, or until cooked through.
  • Remove with slotted spoon. Poach remaining meatballs the same way. Cool.
  • When ready to assemble, thread 3 meatballs onto each skewer. Refrigerate until needed.
  • In a saucepan, bring soy sauce, mirin, sake, and sugar to a boil; reduce heat and simmer until thickened. Remove from heat; stir in yuzu juice.
  • Over charcoal, grill several skewers, turning frequently, about 5 minutes or until lightly browned. Brush with 1 tablespoon yuzu sauce for each skewer. Serve with 1½ tablespoons sauce per skewer on the side.

Dango, my favorite Anime food... Sailor Moon, Clannad, they all have it. I looked around the net and aggregated all the best bits i had tried into this recipe. A lot of it is similar to http://www.recipezaar.com/120390 , but i think this is better from experience. Dango are great for a party at your house, or bringing to peoples houses as a thoughtful gift, but i find they taste all the sweeter when you devour them yourself just after cooking :D Try to get Mochiko, it's the best! Alternatives for Katakuriko are listed in order of preference after it in the ingredients section. All of the ingredients are available at an Asian food store.

1 1/3 cups mochiko sweet rice flour
3/4 cup warm water
potato starch or cornstarch
3/4-1 cup water
1/2 cup sugar
2 tablespoons soy sauce
1 1/2 tablespoons katakuriko
1 1/2 tablespoons water

Steps:

  • Combine the Mochiko slowly and gradually with the water in the mixing bowl, trying to get a solid-but-squishy dough.
  • Knead the dough well.
  • Make small round dumplings (or Dango) with the dough, roughly 1 inch in diameter at the most.
  • Steam the dango for 10-15 mins in the steamer on medium or high heat, depending on your steamer.
  • When they are done (brownled slightly) take them off and let the cool on a wire rack.
  • Mix the sugar, water (Larger mesurement) and soysauce in the small pan over a medium heat.
  • Combine the Katakuriko with the small tablespoon and a half of water.
  • When the sauce starts to boil, add the mixture in the cup to it, mix and remove from heat.
  • Grill the dango slightly and add the sauce to taste.
  • YUM! Anime-licous!

Deliciously moist and flavoursome meatballs to add to soups or your favourite spaghetti sauce, or to eat with a salad in a pita bread wrap. To make these, I played around with another of my recipes - Recipe #119121 - when I recently made KelBel's Recipe #94089. Because I still haven't found a sausage that I really, really like - I'm still looking! - I decided to add meatballs rather than include the sausage in KelBel's Tuscan Soup. I've just this year discovered the most fabulous European butcher's where I am able to buy incredibly lean pork/veal mince, which I've been using in all the recipes including ground or minced meat I've made since I've become a member of Zaar. Because parking is always difficult on Saturdays when I tend to go there, I asked them once what time they opened, thinking that maybe they opened a bit earlier than nine o'clock. "We are here two, three..." "No," I said, "What time are you open to customers?" "If we're here, we'll serve you," I was told. "Sometimes when we get here, there's a queue outside." Well I've yet to go there at THAT time! Anyway, to make these meatballs, my guess is that if you can't get good ground pork or veal, make them with ground beef.

1 lb ground pork
1 lb ground veal
1 -2 tablespoon olive oil
1 medium yellow onion, very finely chopped
2 garlic cloves, very finely chopped
1 lb wild mushroom, for a really great flavour, include some Swiss Browns, very finely chopped
2 eggs, lightly beaten
1 1/2 cups soft stale bread crumbs
1 1/2 tablespoons low sodium soy sauce
1 teaspoon all purpose Greek seasoning
1/2 teaspoon ground ginger

Steps:

  • Preheat the oven to a moderate heat.
  • Heat the oil in a sauté pan (preferably non-stick), add the onion and garlic, and sauté, while stirring, until the onion and garlic are soft but not browned.
  • Add the chopped mushrooms and sauté, while stirring, until the mushrooms are just soft.
  • Allow the onion, garlic and mushrooms to cool. If you transfer the onion/garlic/mushroom mixture to a plate (which is at room temperature), 5-10 minutes cooling time is ample.
  • Combine the cooled mushroom mixture, minced veal/pork, egg, breadcrumbs, soy sauce, Greek seasoning and ground ginger in a bowl and mix until the ingredients are well-combined.
  • Roll the mixture into balls, slightly larger than a walnut and slightly smaller than a golf ball. You should get about 60 meatballs from the mixture.
  • Place the meatballs on lightly greased oven trays, turning them over once after you place them on the trays so that they are lightly oiled on the top.
  • Cover the trays loosely with aluminium foil and bake the meatballs in a moderate oven for about 45 minutes, or until they are cooked all the way through.
  • Add to soup or serve with your favourite spaghetti sauce over pasta.
  • Chef's Note: These meatballs can be frozen. And unless you have a super-large ravenous family or you're feeding half the neighbourhood, you may well want to freeze some of the meatballs.

Scoop 1 tbsp meat mixture to make 3.5cm meatballs and place on a cutting board or a large baking pan. Repeat. Roll each meatball with wet hands to form rounded meatballs. Heat oil to 170-180°C. The depth of oil should cover the meatballs. Place a few meatballs gently into the oil. Deep-fry for approximately 3-4 mins or until the meatballs are cooked through. Transfer to a tray lined with kitchen towels.
  • To Make the Sauce Excluding the cornflour, place the rests of the sauce ingredients with water into a small saucepan. Cook over medium-high heat. When the sauce starts boiling, reduce heat to low and add in the cornflour solution. Stir well until the sauce is thickened. Turn off the heat.
  • To Serve Place the meatballs on a serving plate and pour the sauce on top, covering all meatballs. Garnish with julienned spring onions.
