STRAWBERRY, POMEGRANATE, AND ROSE PETAL MESS



Strawberry, Pomegranate, and Rose Petal Mess image

Use store-bought meringues and skip the first step, if you prefer.

Number Of Ingredients 14

2 large egg whites
1/4 cup granulated sugar
1/4 cup powdered sugar
3/4 cup crème fraîche
1/2 cup mascarpone
2 tablespoons powdered sugar
1/2 teaspoon rose water (optional)
6 ounces strawberries, hulled, halved if large
1 pint strawberry or raspberry sorbet
1 tablespoon pomegranate molasses or 1 1/2 teaspoons honey
1/4 cup pomegranate seeds
1 teaspoon ground sumac
2 teaspoons dried rose petals (optional)
Sumac is available at specialty foods stores, and pomegranate molasses is available at some grocery stores. Both are available at Middle Eastern markets.

Steps:

  • Preheat oven to 200°. Using an electric mixer on medium-high speed, beat egg whites until foamy, about 1 minute. With mixer running, gradually add granulated sugar. Continue to beat until meringue triples in volume, is shiny, and holds medium-stiff peaks, 8-10 minutes. Add powdered sugar and beat just to blend.
  • Spoon 2 heaping tablespoonfuls of meringue onto a parchment-lined baking sheet; repeat to fill baking sheet, spacing 1" apart. Bake until dry, about 4 hours.
  • Do ahead: Meringues can be baked 5 days ahead. Keep airtight at room temperature.
  • Whisk crème fraîche, mascarpone, powdered sugar, and rose water, if using, in a medium bowl.
  • Arrange meringues, crème fraîche mixture, strawberries, and scoops of sorbet in a large bowl. Drizzle with pomegranate molasses and top with pomegranate seeds, sumac, and rose petals, if using.

6 (6-ounce) packages fresh raspberries, divided
1 1/2 cups plus 1/4 cup granulated sugar
2 tablespoons freshly squeezed lemon juice
1 1/2 tablespoons framboise liqueur
2 1/2 cups cold heavy cream
2 teaspoons pure vanilla extract
5 to 6 (3-inch) bakery meringue shells, broken in pieces

Steps:

  • Pour 3 packages of the raspberries, 1 1/2 cups of the sugar, and the lemon juice into a 10-inch saute pan. Crush the berries lightly with a fork and bring the mixture to a full boil over medium-high heat. Lower the heat and simmer for 10 minutes, stirring occasionally, until the mixture is syrupy. Fold the remaining 3 packages of raspberries and the framboise into the hot mixture and refrigerate until very cold.
  • In the bowl of an electric mixer fitted with the whisk attachment, beat the cream, the remaining 1/4 cup of sugar, and the vanilla together on medium-high speed until it forms firm peaks.
  • In decorative glasses, layer a spoonful of the whipped cream, a spoonful of the raspberry mixture, and then a few meringue pieces. Repeat once or twice, depending on the size of the glasses, until the glasses are full, ending with berries and a dollop of cream. Serve immediately or chill for an hour, until ready to serve.

8 shop-bought meringue nests
600ml pot double cream
2-4 tbsp rosewater , or to taste (it varies in strength so taste as you go)
500g strawberries , hulled and quartered
rose petals (from the garden, not the florist), to serve (optional)

Steps:

  • In a large bowl, break up the meringues into bite-size pieces.
  • Whip the cream until it holds its shape, but take care not to over-beat, then whisk in the rose water.
  • Just before serving, fold the crushed meringue and cream together. Stir through the strawberries, leaving a few to garnish. Alternatively, make layers of meringue mixture and strawberries in a tall glass bowl or in individual tall wine or dessert glasses. Finish with rose petals scattered on top, if you like.

This is a delicious version of Eton Mess with chopped Spanish persimmons, crushed raspberries and pomegranate seeds, whipped cream and broken meringues. Yum!

2 medium Spanish persimmons
2 cups fresh raspberries
½ cup pomegranate, seeds only, or more to taste
1 ¼ cups heavy cream
8 small plain meringue cookies, coarsely crushed

Steps:

  • Remove the leafy tops from the persimmons, slice the flesh, and add to a large bowl. Crush the raspberries lightly with a fork and add these to the bowl with the pomegranate seeds. Stir gently to combine.
  • Beat cream in a chilled glass or metal bowl with an electric mixer until firm peaks form. Fold in meringue and stir gently.
  • Spoon some of the fruit mixture into 4 decorative glasses. Layer the cream and meringue mixture on top, alternating with the fruit mixture. Make sure you reserve a little fruit for the top, then serve.

  • Place the cream, sugar and vanilla into a large bowl and whisk until you reach soft peak. You want it to be thick and when you pull the whisk out, it just about holds its shape. You'll be stirring it again in a minute, so it will get thicker. If you whisk to stiff peak and then add fruit and stir it, it will be over whipped. Leave to one side.
  • Place the raspberries in a blender and blitz until you have a smooth puree. Reserve 4tsp for garnish, but spoon the rest of the puree into the cream mixture.
  • Tip in 4 crushed meringue nests and gently fold into the cream mixture. I think it looks super pretty when the raspberry puree is swirled with the cream and you can still see bits of white, so I only folded until this stage. You can, of course, completely mix it together and have pink cream. It's completely up to you.
  • Take 4 wine glasses/glasses the size of a wine glass, and divide your cream mixture between the 4 glasses.
