Raspberry bars combine tart flavors with a buttery base. It takes very little time and only a few ingredients to make these rich buttery raspberry-filled bars.

Crumb Mixture
2 1/4 cups all-purpose flour
1 cup sugar
1 cup chopped pecans
1 cup Land O Lakes® Butter softened
1 large Land O Lakes® Egg
Filling
3/4 cup raspberry preserves *

Steps:

  • Heat oven to 350°F. Line 8- or 9-inch square baking pan with aluminum foil, extending foil over edges. Grease foil; set aside.
  • Combine all crumb mixture ingredients in bowl. Beat at low speed, scraping bowl often, until mixture resembles coarse crumbs. Reserve 2 cups crumb mixture; set aside.
  • Press remaining crumb mixture on bottom of prepared baking pan. Spread preserves to within 1/2 inch of edge. Crumble reserved crumb mixture over preserves.
  • Bake 40-50 minutes or until lightly browned. Cool completely; cut into bars.

1/2 cup stick margarine
1/4 cup reduced-fat stick margarine
1/3 cup packed brown sugar
1/4 cup sugar
1 egg
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
3/4 cup chopped pecans
2/3 cup raspberry jam
2 tablespoons lemon juice
GLAZE:
1/2 cup confectioners' sugar
2 teaspoons fat-free milk

Steps:

  • In a large bowl, cream margarine and sugars. Beat in egg and vanilla. Combine flour, baking powder, baking soda and salt; add to creamed mixture. Stir in 1/2 cup pecans. , Spread half of the dough into a 13-in. x 9-in. baking pan that has been coated with cooking spray. Combine jam and lemon juice; spread over dough. Dollop remaining dough over top. Sprinkle with remaining pecans. , Bake at 325° for 30-35 minutes or until lightly browned. Cool. Combine glaze ingredients; drizzle over bars.

2 sticks butter, softened, plus more for the pan
2 1/4 cups all-purpose flour
1/2 cup granulated sugar
1/2 cup light brown sugar
1 cup rolled oats
1/4 teaspoon fine sea salt
1 egg, beaten
1 cup Raspberry Preserves, recipe follows
1 quart raspberries
1 tablespoon lemon juice
1 3/4 cup sugar

Steps:

  • Preheat the oven to 350 degrees F. Butter an 8-inch square baking pan.
  • Add the flour, both sugars, oats and salt to a bowl in your stand mixer. Add in the butter and egg and beat at low speed. Stop the machine and scrape the bowl down a couple of times. Keep processing until the mixture resembles coarse crumbs. Keep 2 cups crumb mixture aside.
  • Press the remaining crumb mixture on the bottom the prepared pan. Spread the Raspberry Preserves over top, leaving 1/2-inch border. Crumble the rest of the oat mixture over the preserves.
  • Bake until lightly browned, 40 to 50 minutes. Cool completely before cutting into bars.
  • Put your raspberries and 1/4 cup water in a saucepan over medium heat. Once it's at a simmer, partially cover and cook 8 to 10 minutes. Pass the berry mixture through a food mill and measure the liquid that remains. You need 3 1/2 cups. Add more water if there isn't enough.
  • Put the berry liquid into a new saucepan over medium heat and bring to a simmer again. Once it simmers, start adding your sugar in 1/2 cup increments. Give it a stir to incorporate and bring it back to a simmer before adding of the next 1/2 cup sugar. Once the last 1/2 cup is added, bring the liquid to 216 to 218 degrees F on a candy thermometer. Stir constantly.
  • Let this cool to room temperature prior to using. If not using right away, refrigerate for up to 1 week. Yield: 2 cups.

Many of my treasured recipes have come from a group of moms I used to meet with for tea and coffee when our children were small. I adapted this recipe from a friend who made it with strawberry jam. I use raspberry jam and fresh berries from my big raspberry patch.

1 1/2 cups brown sugar
1 teaspoon baking soda
1/2 teaspoon salt
1 cup unsalted butter, at room temperature

Steps:

  • Preheat oven to 325°.
  • Mix all dry ingredients.
  • Cut in butter until crumbly.
  • Place half of crumb mixture in a 13x9 pan.
  • Bake 10 minutes, let cool.
  • Return oven to 325°.

  • Spread carefully over cooled crumbs.

Many years ago I had my first Linzer Torte, and it was love at first bite! A Linzer Torte is a nut crust filled with raspberry jam and topped with a lattice. As part of my holiday yummy package, I was looking for a way to include a fabulous version of this classic Austrian delicacy. This is absolutely it!!! I grabbed this recipe from Wolfgang Puck during an appearance on one of the morning shows.It is a recipe that requires patience, but your friends will RAVE, I promise :) You can't get much more authentic Austrian than Wolfgang Puck!

Number Of Ingredients 12

3/4 cup butter
1/2 cup granulated sugar
1 tablespoon honey
1 tablespoon orange zest
1 teaspoon cinnamon
1 teaspoon Chinese five spice powder (cinnamon, nutmeg, allspice, clove, star anise)
1 egg
5 ounces hazelnuts, toasted and ground
1 3/4 cups all-purpose flour
1 1/2 teaspoons baking powder
1 pinch salt
1 cup raspberry jam

Steps:

  • In a standing mixer fitted with a paddle attachment, cream together the butter and the sugar on medium speed for 2 to 3 minutes. Scrape down the sides and add honey, zest, cinnamon and spices. Continue mixing for one more minute. Scarpe down the sides and add egg. Mix again until well blended.
  • Sift the dry ingredients together. On low speed, add the sifted dry ingredients to the butter mixture and continue to mix until a dough is formed.
  • Remove the dough from the mixer, wrap in plastic film and refridgerate for about 2 hours.
  • Butter the bottom and sides of a 9 inches cake pan. Line the bottom of the pan with wax or parchment paper. Remove dough from the refridgerator and divide into two. Dredge the work surface with flour and with a rolling pin, roll out the dough to 1/2 inch thick, forming a 12 inch circle. This will be for the bottom of the torte. Line the bottom and sides of the prepared cake pan with the circle.
  • For the top of the torte, use the second half of dough, roll it to 1/2 inch thick to create a 9 by 12 inch rectangle. Refridgerate both the top and the bottom for about 20 minutes.
  • Remove from refridgerator and fill bottom half with raspberry jam.
  • Preheat the over to 350°F.
  • Create a lattice with the rectangular piece of dough by cutting 12, 9 inch strips (Use a piece of cardbpard to build the lattice to make it easy to slide onto the bottom of the torte). Slide the lattice onto the jam filled bottom. Fold the edges of the dough up and over the top of the torte.
  • Bake in oven for 30-35 minutes, until golden brown. For a holiday accent, sprinkle with powdered sugar.

1 egg

4 cups fresh raspberries (or frozen- just thaw them first)
1/2 cup sugar
3 teaspoons corn starch

Steps:

  • Preheat oven to 375 degrees F.
  • Spray a 9x13" baking pan with nonstick cooking spray.
  • Combine sugar, flour, baking powder, salt, ground cinnamon, shortening, and egg. Dough will be crumbly. Pat half of the dough into the prepared pan.
  • Combine the remaining 1/2 cup sugar, cornstarch and berries. Spread fruit mixture on top of the dough in the pan. Crumble the remaining dough over the tops of the berries.
  • Bake for 35-45 minutes or until the top is slightly brown.

200g plain flour
200g porridge oat
250g pack butter , room temperature, cut into small pieces
175g light muscovado sugar
finely grated zest of 1 lemon
100g pack pine nut
2 punnets raspberries (total weight 250g/9oz)

Steps:

  • Preheat the oven to fan 170C/ conventional 190C/gas 5. Butter a shallow 23cm square tin. Tip the flour, oats and butter into a mixing bowl and use your fingers to work the mixture together to make coarse crumbs. Mix in the sugar, lemon zest and three quarters of the pine nuts using your hands, then press the mixture together well so it forms large sticky clumps.
  • Drop about two thirds of the oat mixture into the base of the tin, spread it out and press down very lightly - don't pack it too firmly. Scatter the raspberries on top, sprinkle the rest of the oat mixture over, then the rest of the pine nuts and press everything down lightly.
  • Bake for 35-40 minutes until pale golden on top. Cut into 12 bars with a sharp knife while still warm, then leave to cool in the tin before removing. Will keep for 2-3 days.

2 1/2 cups quick-cooking oats
1 1/2 cups packed brown sugar
1/2 cup finely chopped hazelnuts (filberts) or pecans

1 1/2 cups butter or margarine, melted
1 can (21 oz) raspberry pie filling
1 teaspoon ground cinnamon

Steps:

  • Heat oven to 350°F (if using dark or nonstick pan, heat oven to 325°F). In large bowl, mix flour, oats, brown sugar, hazelnuts and baking soda, using pastry blender (or pulling 2 table knives through ingredients in opposite directions). Stir in butter until well mixed.
  • In small bowl, reserve 2 cups oat mixture for topping. On bottom of ungreased 15x10x1-inch pan, firmly press remaining oat mixture. Bake 15 to 18 minutes or until crust just begins to brown.
  • Carefully spread pie filling over warm crust. Stir cinnamon into reserved oat mixture. Sprinkle oat mixture over filling; press lightly into filling.
  • Bake 20 to 25 minutes or until top is deep golden brown. Cool completely in pan on wire rack, about 30 minutes. For bars, cut into 8 rows by 6 rows.
