1 teaspoon vegetable oil, or as needed
1 cup white sugar
1 (16 ounce) can jellied cranberry sauce
3 (3 ounce) packages raspberry-flavored Jell-O® mix
½ cup chopped walnuts
1 cup white sugar for rolling

Steps:

  • Line an 8x8-inch pan with waxed paper; coat the paper with vegetable oil.
  • Combine 1 cup sugar, jellied cranberry sauce, and raspberry Jell-O® mix in a saucepan over medium heat, stirring until sugar and gelatin have dissolved. Bring to a boil, reduce heat to low, and simmer 20 minutes, stirring often. Mix walnuts into candy.
  • Pour candy into prepared pan and let set at room temperature overnight. Cut candy into squares and roll squares in sugar. Place sugared candies onto waxed paper to set.

I'm sure to pick up extra bags of cranberries for the freezer in the fall so that I can make this lovely, delicious jam year-round. My kids love it on peanut butter sandwiches. Jars of this pretty ruby-colored jam also make great gifts. -Marjilee Booth, Chino Hills, California

2 packages (10 ounces each) frozen sweetened raspberries, thawed
4 cups fresh or frozen cranberries
1 package (1-3/4 ounces) powdered fruit pectin
5 cups sugar

Steps:

  • Drain raspberries, reserving juice; add enough water to juice to measure 1-1/2 cups. Pour into a Dutch oven. Add raspberries and cranberries; stir in pectin. Bring to a full rolling boil over high heat, stirring constantly. Stir in sugar; return to a full rolling boil. Boil and stir 1 minute., Remove from heat; skim off foam. Ladle hot mixture into six hot half-pint jars, leaving 1/4-in. headspace. Remove air bubbles and adjust headspace, if necessary, by adding hot mixture. Wipe rims. Center lids on jars; screw on bands until fingertip tight., Place jars into canner with simmering water, ensuring that they are completely covered with water. Bring to a boil; process for 10 minutes. Remove jars and cool.

RASPBERRY TART

3/4 cup unsalted butter at room temperature
1/2 cup sugar
1/2 teaspoon pure vanilla extract
1 3/4 cups all-purpose flour
Pinch salt
1 cup good raspberry preserves
1 1/2 pints fresh raspberries (3 packages)

Steps:

  • Preheat the oven to 350 degrees.
  • In the bowl of an electric mixer fitted with a paddle attachment, mix the butter and sugar together until they are just combined. Add the vanilla. In a medium bowl, sift together the flour and salt, then add them to the butter-and-sugar mixture. Mix on low speed until the dough starts to come together. Dump onto a surface dusted with flour and shape into a flat disk. Press the dough into a 10-inch-round or 9-inch-square false-bottom tart pan, making sure that the finished edge is flat. Chill until firm.
  • Butter one side of a square of aluminum foil to fit inside the tart and place it, buttered side down, on the pastry. Fill with beans or rice. Bake for 20 minutes. Remove the foil and beans, prick the tart all over with the tines of a fork, and bake again for 20 to 25 minutes more, or until lightly browned. Allow to cool to room temperature.
  • Spread the tart with raspberry preserves and place the raspberries, stem end down, in concentric circles. If you are making a square tart, place the raspberries in rows. Serve immediately.

2 cups chopped fresh or frozen cranberries
5 cups fresh or frozen unsweetened raspberries, thawed
1/2 teaspoon almond extract
1 to 1-1/4 cups sugar
1/4 cup quick-cooking tapioca
1/4 teaspoon salt
Pastry for double-crust pie (9 inches)

Steps:

  • In a large bowl, combine the cranberries, raspberries and extract. Combine the sugar, tapioca and salt. Add to fruit mixture; toss gently to coat. Let stand for 15-20 minutes., Line pie plate with bottom pastry; trim to 1 in. beyond edge of plate. Add filling. Roll out remaining pastry; make a lattice crust. Trim, seal and flute edges. Cover edges loosely with foil., Bake at 375° for 40-45 minutes or until crust is golden brown and filling is bubbly. Cool on a wire rack.

FRESH RASPBERRY JELLY

This make-ahead summer dessert is bursting with intense fruity flavour - set in a classic jelly mould for a retro dinner party centrepiece

½ tsp flavourless oil for greasing, such as sunflower oil
5 gelatine leaves
140g golden caster sugar
500g raspberries , plus extra to serve
juice 1 lemon
clotted cream or ice cream, to serve

Steps:

  • Use the oil to lightly grease the inside of a 600ml jelly mould. Put the gelatine leaves in a small bowl of cold water, one at a time so they don't stick together. Leave to soak while you cook the raspberries.
  • Pour 300ml water into a large saucepan. Add the caster sugar, heat gently over a medium heat, stirring occasionally until the sugar has dissolved, then add the raspberries. Bring to the boil, then turn the heat right down so the mixture is barely simmering, and cook for 5 mins until the raspberries break down. Stir well, but don't mash them too much as the raspberries will break down in the heat.
  • Carefully pour the raspberry mixture through a sieve set over a large heatproof measuring jug. Stir in the lemon juice, then either top up with cold water or pour some away to ensure you have exactly 600ml total liquid. Drain the water from the gelatine leaves and squeeze out any excess before adding to the raspberry mix. Stir well until the gelatine has completely dissolved, then pour into your jelly mould (see tip below). Once cold, place in the fridge and leave overnight to set.
  • Turn the jelly out onto a large plate just before serving. Serve with a scoop of clotted cream or ice cream, and some raspberries.

This is so bright red when jarred. Great over pancakes,waffles, top over vanilla ice cream, put into a layer cake or just top on toast. Gift giving. Drizzle softened preserves to garnish a dish. Add to a vinegar and oil for a raspberry salad dressing.Use to glaze a fruit pie, pork roast baked ham or a roasted chicken. Fill your favorite Christmas cookies.

Number Of Ingredients 10

6 cups raspberries
3 cups cranberries
2 1/2 cups sugar, or Flavored Sugars #53926
1 orange, very very thinly sliced juice and all
1 cup dried cranberries
1/2 teaspoon cinnamon, ground cardamom
1/4 fresh ground nutmeg
1 teaspoon fresh grated ginger
1 vanilla pod, seeds removed (use the pod to make flavored sugar)
1/3 cup Grand Marnier

Steps:

  • Stir together 1 cup sugar and raspberries in a bowl and let stand for 1 hour.
  • Add cranberries and the remaining sugar together in a stainless steel pan and place over high heat.
  • Stir constantly so the sugar does not burn until the cranberries begin to release juice, about 5 minutes.
  • Continue cooking until all the cranberries have popped and the mixture is syrupy and comes to a boil.
  • Skim off any foam that forms on top and continue to cook and stir until the mixture thickens, about 10 minutes more.
  • Add the raspberries and all their juice and cook for 10 minutes more.
  • Stir in the dried cranberries, sliced orange and spices.
  • Remove a small amount of the jam to a saucer and place in the freezer for 5 minutes.
  • If the mixture wrinkles when pushed to one side, it is ready.
  • If not, continue cooking for 5 minutes and retest.
  • When the preserves are the right consistency, turn down the heat to a simmer stir in Grand Marnier and ladle into hot sterilized jars.
  • Wipe the rims clean with a damp towel and seal with new lids and metal rings.
  • Process in a hot-water bath for 5 minutes.
  • Remove, cook, check seals, label, and store.
  • Makes 7 one 1/2 pint jars.

You have to start by admitting to yourself that you love the way tangy Jell-O mixed with tart fresh fruit, red wine notes and whipped cream is an elevated throwback to when you were a kid. The red wine adds a tart note and the cranberry sauce adds bitterness and tons of pectin, the natural thickener that comes from cranberry itself. Slice this into thick pieces and serve with whipped cream. It's also oddly delicious with a scoop of vanilla ice cream...

Two 750-milliliter bottles fruity red wine, such as Merlot or Cabernet Sauvignon
2 cups sugar
Six 3-ounce boxes raspberry gelatin, such as Jell-O
Two 16-ounce cans smooth cranberry sauce, chopped into small pieces
1 1/2 pints fresh raspberries
8 sprigs fresh mint, stemmed, plus more for decorating
1 1/2 cups unsweetened whipped cream

Steps:

  • Reduce the red wine: Combine the wine and sugar in a medium pot over medium heat and reduce until there are 2 cups total liquid, 30 to 40 minutes.
  • Make the gelatin: In a large bowl, combine the gelatin with 5 1/2 cups boiling water, then stir in the still warm reduced red wine. Stir until dissolved. Add the cranberry sauce; stir until melted.
  • Create the first layer: Layer 1/2 pint raspberries, top-side down, in each crevice of a 10- to 15-cup Bundt mold. Imagine you are looking at them and building this dessert upside down (because you are) and will see the opposite side when the dessert is unmolded. Gently pour enough of the cranberry mixture to cover the first layer of fruit, about half. Place the mold on a sheet pan and chill in the refrigerator until mostly set, about 2 hours.
  • Create the second layer: On top of the set up gelatin, gently arrange another half pint of raspberries all through the center of the mold. Put mint leaves wherever there are gaps. Pour the remaining gelatin carefully on top. Refrigerate for another 2 hours or up to overnight.
  • To serve: Dip the mold very briefly in a large bowl of warm water to loosen the gelatin from the sides of the mold. Place a serving plate or cake stand on top of the Bundt mold and invert onto the plate. Unmold the cake. Top with mint leaves and arrange the last half pint raspberries around the edges. Serve with the whipped cream.

Steps:

  • In a large skillet, combine raspberries, sugar, lemon juice, and a pinch of salt. Cook over high, stirring, until sugar dissolves and mixture boils. Reduce to a rapid simmer and cook, stirring occasionally, until mixture thickens, 12 to 15 minutes. Transfer 3/4 cup jam to an airtight container. Using a fine-mesh sieve, strain remaining jam into container, pressing on solids. Discard seeds. Stir jam to combine: Let cool completely. Cover and refrigerate, up to 1 month.

I use a lot of recipes from the "Complete Book of Small-Batch Preserving" to make use of fresh produce but also have a variety. These preserves are good over ice cream, frozen yogurt, pound cake, rice pudding, etc.

4 cups cranberries (fresh or frozen)
1 1/2 cups unsweetened raspberries (fresh or frozen)
1/2 cup golden raisin
1 cup granulated sugar
1 tablespoon grated orange rind
1/2 cup orange juice
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/3 cup orange liqueur

Steps:

  • Combine all ingredients (except liqueur) in a large stainless steel or enamel saucepan and bring to a boil over high heat.
  • Reduce heat& boil gently, uncovered, for 20 minutes or until thickened, stirring frequently.
  • Remove from heat& stir in liqueur.
  • Ladle into sterilized jars leaving 1/2 inch of head space.
  • Be sure to eliminate air bubbles.
  • Place jars into boiling water in a canner, add water to cover jars by 2 inches& return water to a boil.
  • Boil 10 minutes for 1/2 pint (250ml) jars and 15 minutes for pint (500ml).
  • Remove jars, let cool, label& store in cool, dark place.
