- Preheat oven to 325°. Line a 13x9-in. baking pan with foil, letting ends extend up sides; grease foil. In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in oil and vanilla. In another bowl, whisk flour and cocoa; gradually beat into creamed mixture., Spread into prepared pan. Bake 30-35 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack., For fudge sauce, in a large saucepan, melt butter over medium heat. Stir in sugar, cocoa, water, corn syrup, vanilla and salt until blended. Bring to a boil. Cook, uncovered, 3-5 minutes or until sugar is dissolved and sauce is smooth, stirring frequently., Lifting with foil, remove brownies from pan. Cut into eighteen 3x2-in. rectangles. Top each brownie with ice cream, fudge sauce and a cherry. Freeze option: Securely wrap and freeze cooled brownies in plastic wrap and foil. To use, thaw at room temperature.

EASY RASPBERRY BROWNIES
A great brownie recipe from Betty Crocker. These are yummy! Even my DSS who SWORE he didn't like raspberries, couldn't stop eating them. I hope you enjoy!

Steps:
- Heat oven to 350º F.
- Grease the bottom only of a 13x9x2-inch pan.
- Stir together brownie mix, water, oil, and eggs in a medium bowl until well blended. Spread into pan.
- Bake for 28-30 min or until toothpick inserted 2" from side of pan comes out clean or almost clean.
- Cool completely in pan on wire rack, about 1 hour.
- Beat cream cheese, powdered sugar and preserves in a small bowl with electric mixer on medium speed until smooth.
- Spread over brownies and chill for 15 minute.
- Melt chocolate and butter in a small microwavable bowl, stiring every 30 sec, until mixture can be stirred smooth. Drizzle over brownies. Chill about 1 hour or until chocolate is firm.

RASPBERRY BROWNIE THINS à LA MODE
Steps:
- Preheat oven to 350°F. Grease and flour an 8-inch square baking pan, knocking out excess flour.
- In a metal bowl or top of a double boiler set over barely simmering water melt chocolate and butter, stirring until smooth, and remove from heat. Whisk in sugar and jam until smooth. Add egg and whisk until smooth. Add flour and salt and whisk until smooth.
- Spread batter evenly in pan and bake in middle of oven 12 to 15 minutes, or until just set and a tester comes out with crumbs adhering. Cool brownies in pan on a rack 5 minutes and cut into 9 squares.
- Arrange 2 or 3 warm brownies on each of 2 dessert plates, reserving remaining brownies for later consumption. Top brownies with scoops of ice cream and drizzle with brandy.
RASPBERRY BROWNIES
Raspberry and Chocolate brownies what could be bad? Even easier with the use of a wonderful brownie mix. Use seedless raspberry spreadable fruit, not jam.

Steps:
- Heat oven to 350 degrees F.
- Spray a 9 inch square pan with non stick cooking spray.
- In a medium bowl combine brownie mix, contents of chocolate packet from mix, water, egg and 2 tablespoons of the spreadable mix.
- Mix until dry ingredients are moistened.
- Spread batter evenly in pan.
- In a small bowl stir remaining 3 tablespoons spreadable fruit until smooth.
- Drizzle in parallel lines over batter in pan.
- Swirl gently with knife.
- Bake for 28-33 minutes or until toothpick inserted in center comes out clean.
- Allow to cool.

- In a small saucepan, bring the sugar, butter and water to a boil over medium heat. Remove from the heat; stir in chips until melted. Set aside to cool., In a large bowl, beat eggs and vanilla. Beat in chocolate mixture until blended. Combine the flour, baking soda and salt; add to chocolate mixture. Stir in walnuts. , Pour into a greased 9-in. pie plate. Bake at 350° for 28-30 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack. , For fudge sauce, in a microwave, heat the chips, milk, sugar and butter until chocolate and butter are melted; stir until smooth. Drizzle some over pie. - PREPARE FILLING Adjust oven rack to middle position and heat oven to 350°F Line 13- by 9-inch baking pan with foil, allowing excess to hang over pan edges. Grease foil. Process cream cheese, sugar, egg yolk, and vanilla in food processor until smooth.
- MIX BATTER Combine flour, baking powder, and salt in bowl. Microwave butter and chocolate in large bowl, stirring occasionally, until smooth, 1 to 2 minutes. Whisk in ½ cup jam; let cool slightly. Add sugar, eggs, and vanilla to chocolate mixture, stirring until combined. Whisk in flour mixture until incorporated.
- LAYER FILLING Microwave remaining jam until warm, about 30 seconds; stir until smooth. Scrape half of batter into prepared pan. Dollop filling over batter and spread into even layer. Dollop warm jam over filling and, using toothpick, swirl jam through filling. Spread remaining batter evenly over filling.
- BAKE BROWNIES Bake until toothpick inserted in center comes out with few wet crumbs attached, 50 to 60 minutes. Cool in pan on wire rack for at least 2 hours. Using foil overhang, lift brownies from pan and cut into 1½-inch squares. Serve. (Brownies can be refrigerated in airtight container for 2 days.).

- Preheat oven to 350 degrees.
- Lightly grease a 13 x 9 pan and set aside.
- Place the first 5 ingredients in a large mixing bowl.
- Stir for about 50 strokes until batter lightens in texture.

- Heat oven to 180C/160C fan/gas 4. Line a 20 x 30cm baking tray tin with baking parchment. Put the chocolate, butter and sugar in a pan and gently melt, stirring occasionally with a wooden spoon. Remove from the heat.
