Categories     dessert

Time 1h35m

Yield 1 3/4 pounds dough

Number Of Ingredients 9

1/2 cup whole milk
1 1/4-ounce packet active dry yeast (2 1/4 teaspoons)
1/4 cup sugar
4 tablespoons unsalted butter, melted and slightly cooled, plus more for brushing
1 large egg yolk
1 1/2 teaspoons vanilla extract
2 3/4 cups all-purpose flour, plus more for dusting
3/4 teaspoon salt
1/2 teaspoon freshly grated nutmeg (optional)

Steps:

  • Warm 1/2 cup water and the milk in a saucepan over low heat until a thermometer registers 100 degrees F to 110 degrees F. Remove from the heat and sprinkle the yeast on top, then sprinkle with a pinch of the sugar; set aside, undisturbed, until foamy, about 5 minutes.
  • Whisk the melted butter, egg yolk and vanilla into the yeast mixture until combined. In a large bowl, whisk the flour, the remaining sugar, the salt and nutmeg. Make a well in the center, then add the yeast mixture and stir with a wooden spoon to make a thick and slightly sticky dough. Turn out onto a floured surface and knead until soft and elastic, about 6 minutes. Shape into a ball.
  • Brush a large bowl with butter. Add the dough, turning to coat lightly with the butter. Cover with plastic wrap and let rise at room temperature until the dough is doubled in size, about 1 hour, 15 minutes.
  • Turn the dough out of the bowl and knead briefly to release excess air; re-form into a ball and return to the bowl. Lightly butter a large piece of plastic wrap and lay it directly on the surface of the dough. Cover the bowl tightly with plastic wrap and refrigerate at least 4 hours or overnight.

MASTER SWEET DOUGH RECIPE

Master Sweet Dough Recipe image

Use this master sweet dough recipe to make all kinds of different desserts like cinnamon rolls, sticky buns, doughnuts and more!

Provided by Elizabeth Marek

Categories     Dessert

Number Of Ingredients 7

8 ounces milk (110ºF)
10 grams dried instant yeast ((3 teaspoons))
25 ounces all-purpose flour (or bread flour)
8 ounces butter (softened)
4 ounces sugar
1 teaspoon salt
3 large eggs (room temperature)

Steps:

  • Warm milk to 110ºF. Add in 1 Tablespoon of your sugar and then the yeast and whisk to combine. Set aside for 5 minutes.
  • Add your flour to your mixing bowl and then add in your milk/yeast mixture. Stir on low to combine
  • While mixing on low, add in your sugar, eggs, butter and salt until combined
  • Increase the speed to medium and let mix until the dough cleans the sides of the bowls and feels elastic and smooth. The dough should bounce back when you touch it with your finger. This can take 8 - 12 minutes *do the window test - see blog post for details*
  • Shape the dough into a smooth ball and then place it into a greased bowl. Cover with a tea towel and let rise for 90 minutes in a warm place ***optional***(I pre-heat my oven to 170ºF for five minutes then TURN THE OVEN OFF. It should be barely warm inside. Place a bowl of warm water in the back of the oven and your covered bowl of dough into the oven and shut the door)
  • You can now shape the dough into rolls, make cinnamon rolls, sticky buns etc. See the blog post above for links to other recipes.

SWEET FRY BREAD - ENOUGH FOR AN ARMY!

Sweet Fry Bread - Enough for an Army! image

First time I had this was during "Indian Taco" day for hot lunch at the school where I was a teacher on the Flathead Indian Reservation in Montana. This was served at all the pow-wows out there! A friend's mother gave me her recipe; they make it for a church fund-raiser in Rapid City, South Dakota. GREAT FOR O.A.M.C. PLANNED OVERS!

Provided by Debber

Categories     Yeast Breads

Time 2h15m

Yield 48 taco breads, 48 serving(s)

Number Of Ingredients 9

4 1/2 teaspoons yeast
1/4 cup sugar
1/2 teaspoon salt
1 cup warm water
1 1/2 teaspoons salt
1/2 cup sugar
1 cup butter, softened
2 cups warm water
8 1/2 cups flour (set aside 1 cup)

Steps:

  • Mix the sponge items in a large bowl; then let "sponge" for 15 minutes or so until foamy.
  • Mix remaining dry ingredients in another bowl, and alternate adding dry stuff and water to the first mixture, allowing mixer to work ingredients before adding more.
  • WARNING: You may need the extra cup of flour--the dough should NOT be sticky when finished.
  • Knead the dough, working in the remaining flour as you knead.
  • Grease a large glass or plastic bowl; shape dough into a large ball, place in bowl--turning to grease all sides; cover loosely with plastic and place in a warm place; let rise until doubled.
  • Heat about a half-inch of oil in a large frying pan (375 - 400 degrees).
  • While the oil heats, remove dough from bowl and divide into 4 balls. Each ball will make one dozen (12) balls (so a total of 48 balls).
  • Flatten each small ball into a thin disk (about 4 inches), make a little hole in the center of each. Keep a uniform shape, but these don't have to look "perfect.".
  • Carefully drop into hot oil; fry until bottom is golden brown, flip with a spatula in one hand and a fork in the other to prevent oil from splashing out.
  • SERVING IDEA #1: Lay bread on plate, cover with my Recipe #219826, grated cheese, topped with sour cream, lettuce, and olives for an "Indian Taco" (this is straight from the school lunch menu on an Indian Reservation!).
  • SERVING IDEA #2: Sprinkle with powdered sugar, slather on some jam or marmalade.
  • OAMC PLANNED OVERS: Use fresh for supper tonight, freeze ALL the leftovers in meal-size portions in plastic zipper bags.

BREAD MACHINE SWEET DOUGH/ROLLS

Bread Machine Sweet Dough/Rolls image

Since this is an original bread machine recipe I firstly tryed it on my Zojirushi Home Baker bread machine and results were great! I have since adapted it to make on my Kitchen Aid stand mixer, I will be happy to forward the KA measurement adaptations to any who wants them. Prep time is only for the last rising time, and servings is only estimated. This delicious sweet dough can be used for buns or sweet rolls.

Categories     Yeast Breads

Time 1h50m

Yield 12 serving(s)

Number Of Ingredients 9

3/4 cup warm cup water
1/4 cup warm milk
2 teaspoons dry skim milk powder
1 large egg (room temperature)
1/3 cup soft butter
1/3 cup sugar
1 teaspoon salt
3 3/4 cups flour
3 teaspoons dry yeast

Steps:

  • Place the water, milk, egg, butter, sugar, salt, flour and yeast into the bread machine pan in order stated (starting with water and ending with the yeast).
  • Select dough cycle, then press start.
  • Since all bread machines are different the water or flour amounts will need to be adjusted slightly to your bread machine to create a soft smooth semi-sticky dough, so make certain to check after about 5 minutes of kneading time and adjust water or flour amounts.
  • When the dough cycle has finished (including the rising time) remove and place dough on a lightly floured work surface.
  • Divide into sections; let the sections rest for 5 minutes (important, the dough MUST rest for 5 minutes) then shape as desired.
  • Place the shaped dough onto a greased baking sheet; cover with a light clean towel.
  • Let rise in a warm place for about 1-1/2 hours or until doubled in size (due to the addition of an egg rising time will be longer).
  • Bake in a 375°F oven for about 20-25 minutes or until until browned.
