Steps:
- Preheat oven to 425°F.
- Lightly spray 8x12-inch cooking pan with vegetable oil cooking spray.
- Unroll dough and press into prepared pan.
- Bake crust 7 minutes or until it turns slightly brown.
- Remove from oven.
- Spread dressing over partially baked crust.
- Sprinkle wit mozzarella cheese, tomatoes, green onions, chicken and cheddar cheese.
- Return to oven for twenty minutes or until cheese has melted.
- My kids love this!

- Preheat the oven to 400 degrees F (200 degrees C). Spread pizza crust out onto a greased baking sheet.
- Bake in the preheated oven until edges just start to brown, 7 to 8 minutes.
- Combine sour cream and ranch mix in a bowl and spread onto the warm pizza crust. Sprinkle with 1/2 of the mozzarella cheese. Top with red onion, tomato, chicken, and bacon. Sprinkle with remaining cheese.
- Bake in the preheated oven until crust is browned to your liking and cheese is melted, 6 to 10 minutes more.

Steps:
- Set oven to 400 degrees F.
- Grease a pizza pan.
- Unroll the pizza dough and press into prepared pan.
- In a bowl mix together the mozzarella and cheddar cheese.
- Bake the crust for 6-7 minutes or until the crust is light golden brown; remove from oven.
- Spread the ranch dressing over the partially baked crust, then sprinkle about 1-1/2 cups of the cheese mixture on top of the Ranch dressing.
- Place the tomatoes, mushrooms, green onions and chicken over the shredded cheese.
- Top with the remaining 1-1/2 cups cheese mixture.
- Bake (400 degrees F) for about 20 minutes or until the cheese is bubbly.
- Immediately sprinkle grated Parmesan cheese on top.

Steps:
- Garlic chicken:.
- Combine garlic, soy sauce, salt and olive oil.
- Marinate the chicken breasts in the garlic oil for 10-20 minutes.
- Grill the chicken breasts for 5-7 minutes on each side (discard unused marinade).
- Take cooked chicken and chill thoroughly.
- Cut chicken into 3/4 inch cubes, set aside and refrigerate.
- Clean and trim spinach, plunge the leaves into rapidly boiling water for 30 seconds.
- Transfer the spinach to ice water and stir gently till the spinach is thoroughly chilled. The spinach should be limp and deep dark green.
- Drain the spinach and wring out all excess water.
- Set aside in refrigerator to continue draining till time to assemble the pizza.
- Braised shallots:.
- Cook shallots, stirring occasionally in olive oil over medium heat till lightly browned on all sides, about 3-4 minutes.
- Reduce heat to low, add thyme, water, salt and pepper and cover.
- Cook over low heat, covered for approximately 1/2 hour, stirring or tossing every 4-5 minutes.
- Drain and set aside. The shallots should be soft, translucent and light yellow-brown.
- Caramelized onions:.
- Melt butter in a small non-stick skillet over medium heat and cook the onions, stirring, till they just begin to brown, 3-4 minutes.
- Add vinegar, reduce heat to medium-low and continue cooking for 10 minutes, stirring to prevent scorching.
- Add soy sauce and cook 5 to 10 minutes longer, stirring.
- When done, the onions should be quite limp and caramelized brown.
- To make pizza:.
- Place the pizza stone in the center of the oven and preheat to 500 for one hour before cooking the pizza.
- Use a large spoon to spread 1 T mustard over the surface of the pizza dough within the rim.
- Place blanched spinach leaves over the mustard, forming a single layer.
- Spread 1/4 cup caramelized onions over the spinach and cover the onions with half the mozzarella.
- Evenly distribute half the grilled garlic chicken over the cheese.
- Place small cloves of shallot between the chicken pieces.
- Transfer the pizza to the oven; bake till the crust is crisp and golden and the cheese at the center is bubbly, 8-10 minutes.
- Repeat with remaining ingredients for a second pizza.

After having BBQ chicken pizza at my favorite pizza place I decided to try it at home. My kids love this version with the addition of Ranch dressing to the sauce. It is much more interesting.

- Prepare Pizza dough and spread in pizza pan. Sprinkle with parmesan cheese. Place in a 375 degree oven for 5 minutes to precook the dough. While the dough is precooking chop the chicken into bite sized bits and stir fry with garlic until cooked through. Chop the bacon into bits, chop the scallions into bits, chop the olives into bits.
- mix the Ranch dressing with the BBQ sauce until combined.
- After 5 minutes take the dough out of the oven. Spoon the Ranch/BBQ sauce over the dough. Top with the chicken, bacon, scallions and black olives. Top with cheese mixture. Sprinkle a little more Parmesan cheese.
- Put back into the oven for 10 additional minutes. When the cheese is melted and bubbly take it out. Let the pizza sit for a minute or two on the counter then slice and enjoy.

DOUBLE-RANCH PIZZA WITH CHICKEN AND BACON
This pizza is fast to make when using rotisserie chicken, and prepared pizza dough. For an even quicker preparation use already cooked bacon crumbles. I cook my pizza in a cast iron skillet for a slight crunch to my dough. Serve with a small salad if desired.

- Preheat the oven to 375 degrees F (190 degrees C).
- Cook bacon in a large skillet and over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon on paper towels and cool.
- Pour oil into a 12-inch cast iron skillet. Brush oil all over the interior of the skillet. Place dough into the skillet and shape into a pizza, forming a crust at the edge. Prick dough all over with a fork.
- Bake in the preheated oven for 5 minutes. Remove from oven and reshape dough if necessary. Sprinkle the top of the dough with 2 teaspoons ranch seasoning. Spread ranch dressing on top.
- Sprinkle shredded mozzarella, chicken, and red onion over pizza crust. Crumble cooled bacon on top.
- Bake in the preheated oven until cheese is melted and top is browned, about 20 minutes.
- Remove pizza from oven and top with tomato slices. Melt butter and mix in the remaining dry ranch seasoning. Brush crust with butter-ranch mixture.
- Set an oven rack about 6 inches from the heat source and preheat the oven's broiler.
- Broil pizza until cheese is golden brown, 2 to 3 minutes, being careful not to burn.
