FIESTA CHICKEN PASTA SALAD
I came up with this a few years back when pasta salad was requested for a potluck. It is very flexible. You can use your favorite pasta, alter the amount of veggies, substitute red pepper for green, add black olives, or whatever. Use your imaginaton and enjoy! Prep time does not include refrigeration time. NOTE: If you have trouble finding Fiesta Ranch Dip Mix, use Recipe #134253. It makes a large batch, you just need 2 or 3 tablespoons.

CREAMY RANCH PASTA SALAD
Maybe you bought some celery for snacking, or maybe you're cooking with it. Either way, don't toss those tender celery leaves. Instead, reserve them and make this creamy pasta salad. Ranch dressing, carrots and celery are natural dance partners-and that's why we combined them in a singularly tasty salad. It starts with a simple homemade dressing, which beats store-bought every day.

The dressing can be refrigerated, covered, up to 1 day.
- Add the pasta to the bowl with the dressing and toss to combine. To serve, top it with the Parmesan, reserved carrots and additional chives and season with pepper.
CREAMY RANCH PASTA SALAD
My husband's favorite - he'll put away the whole batch in two days. Not the lightest pasta salad, but very tasty and refreshing on a hot day. This is a great side with sandwiches, chicken, burgers, etc., or it makes a good lunch by itself. This is very flexible, so feel free to add/omit veggies, adjust seasonings or increase/decrease dressing as you see fit.

Return to a boil and continue cooking until pasta is al dente and broccoli is crisp-tender. Drain and rinse with cold water. Drain again and return to pot; add bell pepper and chill while preparing dressing.
- Prepare dressing by combining all ingredients in a medium-sized bowl and stirring thoroughly. Taste and adjust seasonings.
- When salad is cool enough, add cheese cubes (you don't want them to melt) and dressing. Stir well to combine and transfer to a large bowl or casserole dish. Serve chilled.
CASHEW-CHICKEN ROTINI SALAD
I've tried many chicken salad recipes over the years, but this is my very favorite. It's fresh, fruity and refreshing, and the cashews add wonderful crunch. Every time I serve it at a potluck or picnic, I get rave reviews-and ( always come home with an empty bowl! -Kara Cook, Elk Ridge, Utah

- Boil noodles in water for about 11 minutes, or until tender. Drain and add to a large bowl. I sprinkle a little bit of olive oil on the pasta to keep it from sticking. Let the pasta cool on the counter for about 20 minutes then put in the fridge until it is all the way cooled down.
- Once your pasta is cooled down then add your chicken, greek yogurt, mayonnaise, green onions, hidden valley ranch mix, parsley, cheese, peas, salt & pepper.
- Put your pasta salad in the fridge and chill until it is really cold. Then do a taste test and see if you want to add any more salt, pepper or mayo.
- If you have any leftovers put them in the fridge pretty quickly (I'm weird about leaving stuff out) and just be sure to add a little bit of mayo to it before you serve it again because it tends to dry out overnight.
