16 ounces pasta
1 (6 ounce) can black olives, drained and chopped
1 (5 ounce) jar stuffed green olives, sliced
8 ounces shredded Cheddar cheese
8 ounces shredded Monterey Jack cheese
2 ½ tablespoons bacon bits
1 (16 ounce) bottle ranch-style salad dressing
½ cup chopped green onions
½ teaspoon ground black pepper

Steps:

  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain and reserve.
  • In a large bowl, combine black olives, green olives, Cheddar cheese, Monterey Jack cheese, bacon bits, dressing, onion, ground black pepper and pasta; mix well.
  • Cover bowl, refrigerate to chill for one hour, and serve.

1 stalk celery, chopped
1 (2.25 ounce) can chopped green olives
¼ cup mayonnaise
¼ cup sour cream
2 tablespoons milk
1 (10 ounce) can chicken chunks, drained
1 (1 ounce) package dry Ranch-style dressing mix
2 teaspoons paprika

Steps:

  • Bring a pot of water to a boil. Add the macaroni, and cook until tender, about 8 minutes. Drain, and pat dry.
  • In a medium bowl, mix together the celery, olives, mayonnaise, sour cream, milk, chicken and Ranch dressing mix. Stir in macaroni until well blended. Refrigerate for 24 hours. Stir, and sprinkle paprika over the top before serving.

1/2 cup frozen corn
3 tablespoons milk
1/3 cup mayonnaise

Steps:

  • Empty Pasta mix into 3-quart saucepan 2/3 full of boiling water. Gently boil uncovered 15 minutes, stirring occasionally and adding corn during last 3 minutes of cooking.

I came up with this a few years back when pasta salad was requested for a potluck. It is very flexible. You can use your favorite pasta, alter the amount of veggies, substitute red pepper for green, add black olives, or whatever. Use your imaginaton and enjoy! Prep time does not include refrigeration time. NOTE: If you have trouble finding Fiesta Ranch Dip Mix, use Recipe #134253. It makes a large batch, you just need 2 or 3 tablespoons.

3 boneless skinless chicken breast halves
vegetable oil cooking spray
1 cup chicken broth
1 (1 1/8 ounce) package hidden valley fiesta ranch dip mix
1 lb penne pasta
6 green onions, sliced
1/2 green bell pepper, diced
1 stalk celery, diced
8 ounces shredded cheese (I use Sargento's Mexican 4 Cheese Blend)
1 cup mayonnaise
1 cup sour cream

Steps:

  • Lightly brown chicken in pan sprayed with cooking spray. Add chicken broth and 1 teaspoon of Fiesta Dip mix. Bring to boil, cover, and simmer for 30 minutes.
  • Remove chicken and set aside to cool, reserving broth in pan.
  • Add broth to water for cooking pasta, and cook according to package directions. Drain and cool slightly.
  • Cut chicken into small chunks and mix with pasta and vegetables in large bowl.
  • Mix remaining Fiesta Dip mix with mayonnaise and sour cream and add to the pasta bowl, mixing to coat well.
  • Gently stir in shredded cheese, and refrigerate at least 4 hours before serving for flavors to blend.

16 ounces fusilli pasta
3/4 cup finely chopped carrot (from about 1 large carrot)
1 cup mayonnaise

3 tablespoons finely chopped celery leaves
2 tablespoons fresh lemon juice
4 teaspoons Worcestershire sauce
1 teaspoon onion powder
1 clove garlic, grated
1/2 cup finely grated Parmesan (about 1 ounce)

Steps:

  • Bring a large pot of salted water to a boil and cook the pasta according to the package instructions. Drain the pasta, then rinse it under cold water to cool completely; drain it well again.
  • Meanwhile, reserve 2 tablespoons of the carrot for garnish. Put the remaining carrot in a large bowl and whisk in the mayonnaise, sour cream, chives, celery leaves, lemon juice, Worcestershire, onion powder, garlic, 1 teaspoon salt and 1/2 teaspoon pepper until combined. This is very flexible, so feel free to add/omit veggies, adjust seasonings or increase/decrease dressing as you see fit.

1 cup mayonnaise
2/3 cup ranch dressing
1/2 teaspoon garlic powder
1/2 teaspoon dried thyme
black pepper
1 lb rotini pasta (or similar shape)
2 -3 cups fresh broccoli florets, cut bite-sized
1 red bell pepper, cut into 1-inch strips
4 ounces cheddar cheese, cut into 1/2-inch cubes
4 ounces monterey jack cheese or 4 ounces mozzarella cheese, cut into 1/2-inch cubes

Steps:

  • Cook pasta in a large pot of salted water. When pasta is almost tender (about 2 minutes from done) add broccoli. Return to a boil and continue cooking until pasta is al dente and broccoli is crisp-tender. Drain and rinse with cold water. Drain again and return to pot; add bell pepper and chill while preparing dressing.
  • Prepare dressing by combining all ingredients in a medium-sized bowl and stirring thoroughly. Taste and adjust seasonings.
  • When salad is cool enough, add cheese cubes (you don't want them to melt) and dressing. Stir well to combine and transfer to a large bowl or casserole dish. Serve chilled.

2 cups shredded chicken, (cooked)
1 package (1 ounce) dry ranch seasoning mix*
8 ounces penne noodles, (uncooked)
3½ cups chicken broth
4 ounces cream cheese, (room temperature)
4 slices thick-cut bacon, (cooked and crumbled)
2 cups cheddar cheese, (shredded)
1 tablespoon fresh parsley, (chopped)

Steps:

  • In a small bowl combine shredded chicken and dry ranch seasoning. (This is your chicken mixture.)
  • To a large Dutch oven over medium heat, add the chicken broth, penne, and chicken mixture. Stir to combine and then bring to a boil. Reduce heat to low and then cover and cook for about 15 to 20 minutes or until the pasta is cooked to your preference. There should still be some liquid in the pot when the pasta is done cooking.
  • Add the cream cheese to the dutch oven and stir until most of the cream cheese has melted.
  • Add the bacon and shredded cheddar cheese. Stir everything until cheese is fully melted.
  • Garnish with parsley and serve.

3 chicken breast, baked and diced
1 c frozen peas
1/2 tomato, diced
1/2 green bell pepper, diced
1 can(s) chopped black olives

  • 1. Preheat oven to 425. Season chicken breast and baked for 25-30 minutes or until done. Then cut in to bite size pieces and set aside.
  • 2. Prepare pasta according to box. Drain and set aside.
  • 3. Boil frozen peas and set aside.
  • 4. In a large bowl combine pasta,chicken,peas,tomato,green pepper, olives and cheese. Season with salt and pepper to taste. Then add Ranch Dressing to taste. Stir and serve.
  • 5. You can also use Ham or bacon in this recipe if you prefer.

  • Boil noodles in water for about 11 minutes, or until tender. Drain and add to a large bowl. I sprinkle a little bit of olive oil on the pasta to keep it from sticking. Let the pasta cool on the counter for about 20 minutes then put in the fridge until it is all the way cooled down.
