4 bone-in, skin-on chicken breasts
2 tablespoons olive oil, plus more for drizzling
Kosher salt and freshly ground black pepper
1 small onion, finely chopped
1 garlic clove, minced
1 1/2 cups long-grain white rice
One 1-ounce package ranch seasoning powder
1/2 teaspoon ground turmeric
1 cup chicken broth
2 ounces cream cheese, cubed
1 tablespoon fresh lemon juice
2 scallions, thinly sliced
1 1/2 cups frozen peas and carrots, thawed
1/4 cup crushed ranch-flavored or plain corn chips

Steps:

  • Preheat the oven to 400 degrees F. Line a rimmed baking sheet with parchment paper.
  • Drizzle the chicken breasts with olive oil and sprinkle all over with salt and pepper.
  • Put the chicken on the lined sheet pan skin-side up and roast until an instant-read thermometer reads 165 degrees F, 25 to 30 minutes.
  • In the meantime, turn the heat to medium-low on a braiser or high-sided skillet with a lid. Add the olive oil and onion and cook, stirring, until slightly softened, about 2 minutes. Add the garlic and let cook until the garlic is fragrant, about 30 seconds to a minute. Add the rice, ranch seasoning and turmeric and stir to coat. Add the chicken broth and 2 cups of water. Increase the heat to medium-high and bring to a brisk simmer. Simmer 2 minutes, then add the cream cheese, lemon juice and one scallion. Stir to incorporate.
  • Cover the pot and let cook until the rice is tender, 8 to 12 minutes. Remove from the heat, then uncover; fluff the rice, then stir in the peas and carrots. Replace the lid to keep warm until the chicken is done (the residual heat will gently cook the peas and carrots). Remove the chicken from the oven and arrange the chicken on top of the rice skin-side-up.
  • Sprinkle with the crushed chips and the remaining scallions and serve.

1 cup water
1 envelope ranch salad dressing mix

Steps:

  • Place rice in a greased shallow 2-qt. baking dish. In a small bowl, combine the milk, water and salad dressing mix; set aside 1/4 cup. Pour remaining mixture over rice. Top with chicken strips. Drizzle with butter and reserved milk mixture. , Cover and bake at 350° for 35-40 minutes or until rice is tender and chicken is no longer pink. Sprinkle with paprika.

1 tablespoon canola oil
2 tablespoons toasted sesame oil
2 large eggs
1/4 teaspoon kosher salt
Freshly ground black pepper
1 tablespoon freshly grated ginger
2 medium carrots, peeled and diced
2 cloves garlic, minced
3 cups cold cooked rice
1 cup frozen peas, thawed
3 scallions, chopped, dark green parts reserved for sprinkling
3 tablespoons soy sauce
1 grilled chicken breast, cut into bite-sized cubes

Steps:

  • Add the canola oil and 1 tablespoon sesame oil to a large nonstick saute pan. Whisk the eggs in a small bowl and season with the salt and some pepper; set aside. Add the ginger, carrot and garlic to the pan and cook until the vegetables have softened slightly, about 2 minutes. Add the rice, peas and the white and light green parts of the scallion. Then, add the soy sauce and remaining 1 tablespoon sesame oil and toss to coat. Press the rice mixture gently into the pan and fry until it begins to crisp on the bottom, 3 to 4 minutes. Add the eggs to the pan and cook, stirring gently, until just set, about 1 minute. Stir in the chicken and cook until heated through, about 1 minute. Transfer to a serving platter and sprinkle with the reserved scallions.

2 cups broccoli florets
2 cups shredded rotisserie chicken (skin removed)
1 cup medium-grain white rice
1 plum tomato, chopped

2 cups low-sodium chicken broth
1/4 cup sour cream
1 cup diced dill havarti cheese (about 4 ounces)
1/4 cup grated parmesan cheese (about 1 ounce)

Steps:

  • Preheat the oven to 425 degrees F. Melt the butter in a large ovenproof skillet over medium heat. Add the garlic and about three-quarters of the scallions and cook, stirring occasionally, until soft, about 2 minutes. Add the broccoli, chicken, rice, tomato, 1 teaspoon salt, and pepper to taste; stir to combine.
  • Whisk the chicken broth and sour cream in a bowl, pour into the skillet and bring to a simmer. Stir in half each of the havarti and parmesan. Cover tightly with a lid or aluminum foil, transfer to the oven and bake until the rice is tender and most of the liquid is absorbed, about 20 minutes.
  • Turn on the broiler. Uncover the skillet and sprinkle with the remaining havarti and parmesan, then broil until golden, about 2 minutes. Sprinkle with the reserved scallions.

4 boneless skinless chicken breasts
3/4 cup uncooked long grain rice or 3/4 cup white rice
3/4 cup water
3/4 cup milk
1 (10 3/4 ounce) can condensed cream of mushroom soup
1 (16 ounce) package frozen mixed vegetables, broccoli, cauliflower and carrots
2 tablespoons butter, melted
2 tablespoons dijon-style mustard, prepared
2 tablespoons grated parmesan cheese
2 tablespoons dried breadcrumbs
1 tablespoon dried ranch dip, seasoning mix or 1 tablespoon substitute 1 tablespoon dry onion soup mix

Steps:

  • Heat oven to 400°F Spray 13x9-inch (3-quart) baking dish with no stick cooking spray.
  • Combine rice, water, milk, soup and vegetables in large bowl. Spoon mixture into prepared baking dish.
  • Combine butter and mustard in small bowl.
  • Combine Parmesan cheese, bread crumbs and seasoning mix in pie plate; mix well. Brush each chicken breast with mustard mixture; dip in bread crumb mixture, turning and pressing to coat all sides.
  • Place chicken on top of rice mixture. Cover tightly; bake for 40 minutes. Uncover; continue baking for 15 to 25 minutes or until chicken is no longer pink and rice is tender. Remove from oven.
  • Let stand 10 minutes.

You can sub any kind of cream soup you have on hand, or use any kind of chicken except canned. The flavor of canned just isn't as good! Great way to use leftover chicken or rice as well. Add as much hot sauce (FRANK'S) & ranch or bleu cheese as you like.

  • Place cooked rice in bottom of 8x11 casserole dish.

2 cups shredded lettuce

Steps:

  • Cut chicken breast into strips.
  • Grilled chicken method: Spray a large skillet with nonstick cooking spray. Add chicken, cook over medium-high heat 12 to 15 minutes, or until light brown and juices run clear.   • Preheat the oven to 350 Degrees.
  • Spray a large baking sheet with Non-Stick Spray. I use PAM.
  • Combine the Rice Krispies, Parmesan Cheese and Ranch mix into a large bowl.

1 lb frozen broccoli and cauliflower
1 lb frozen boneless skinless chicken breast
1 1/2 cups rice
3 cups water (for rice)

Steps:

  • Start the rice, cooking it as you normally would. (I do mine on the stove.).
  • Meanwhile, layer chicken in the bottom of a covered casserole or pie pan. Cover the chicken with water, and microwave for 15 minutes. Pull the chicken out and let it sit for 2-3 minutes before draining and cutting into bite sized pieces.
  • Meanwhile, put the broccoli mix into a covered bowl/ dish with 2 tbsp water, and microwave for 8 minutes. (the veggies will still have a little crunch, if you want them smushy cook 2-3 minutes more.).
  • Mix the chicken and drained veggies together, and serve over rice. Top with a generous amount of ranch salad dressing, to taste.
