RANCH PASTA SALAD

Ranch Pasta Salad image

Ranch Pasta Salad is the best pasta salad side dish! Rotini noodles, cucumber, tomato, broccoli, parmesan cheese with an easy dressing of ranch. Everyone will love this pasta salad!

Provided by Jessica

Categories     Salad

Time 23m

Number Of Ingredients 17

1 box (12 oz) tricolor rotini pasta
1 cup chopped broccoli
1 cup chopped cucumbers ((peeled & seeded))
1 cup chopped tomatoes
1/2 cup shredded parmesan cheese
1¼ cups ranch dressing ((more or less to taste))
1/2 cup mayonnaise
1/2 cup buttermilk
1/4 cup sour cream
½ teaspoon dried parsley
½ teaspoon dried dill weed
½ teaspoon dried chives
½ teaspoon onion powder
½ teaspoon garlic powder
½ teaspoon worcestershire sauce
¼ teaspoon salt
⅛ teaspoon pepper

Steps:

  • Cook pasta according to package instructions. Remember to salt the pasta water so the noodles have some flavor. I use about 1 teaspoon salt. Drain the pasta and rinse under cold water so pasta can cool.
  • In a mixing bowl combine the cooled pasta, broccoli, cucumber, tomatoes, and parmesan cheese. Stir. Add ranch and stir again to coat the noodles and veggies in the ranch.
  • Serve right away or let it refrigerate for 1-2 hours before serving. Pasta salad tends to dry out in the fridge so don't leave it in there too long before serving. If needed, add some additional dressing and give it a good stir to moisten it back up.
  • ** If you are making the homemade ranch dressing, I would suggest making it before you make the salad so it has plenty of time to refrigerate and get cold. Combine all the ranch dressing ingredients into a small bowl and stir with a wire whisk. It makes just enough for the salad. For leftovers, I just use store-bought ranch dressing to moisten it back up.

BACON BROCCOLI RANCH PASTA SALAD

Bacon Broccoli Ranch Pasta Salad image

Yummy! This is a great dish to take to barbecues, football parties, pot lucks. **I have no idea the # of ounces, but you want the large size Ranch (not the jumbo, just large) and the regular package of penne pasta.

Provided by Tina A

Categories     Penne

Time 45m

Yield 10-12 serving(s)

Number Of Ingredients 6

1 (16 ounce) bottle Hidden Valley® Original Ranch® Dressing

  • Boil pasta according to package instructions.
  • While pasta is boiling, cut broccoli into bite size florets.
  • Rinse pasta in cold water & drain.
  • In large mixing bowl combine pasta, broccoli, olives, ranch dressing to taste, crumbled bacon and salt & pepper.
  • (grated chees & grated carrots are nice variations.).

CREAMY RANCH PASTA SALAD

Creamy Ranch Pasta Salad image

My husband's favorite - he'll put away the whole batch in two days. Not the lightest pasta salad, but very tasty and refreshing on a hot day. This is a great side with sandwiches, chicken, burgers, etc., or it makes a good lunch by itself. This is very flexible, so feel free to add/omit veggies, adjust seasonings or increase/decrease dressing as you see fit.

Provided by Kevlarturtle

Categories     Summer

Time 30m

Yield 6-8 serving(s)

Number Of Ingredients 10

1 cup mayonnaise
2/3 cup ranch dressing
1/2 teaspoon garlic powder
1/2 teaspoon dried thyme
black pepper
1 lb rotini pasta (or similar shape)
2 -3 cups fresh broccoli florets, cut bite-sized
1 red bell pepper, cut into 1-inch strips
4 ounces cheddar cheese, cut into 1/2-inch cubes
4 ounces monterey jack cheese or 4 ounces mozzarella cheese, cut into 1/2-inch cubes

Steps:

  • Cook pasta in a large pot of salted water. When pasta is almost tender (about 2 minutes from done) add broccoli. Return to a boil and continue cooking until pasta is al dente and broccoli is crisp-tender. Drain and rinse with cold water. Drain again and return to pot; add bell pepper and chill while preparing dressing.
  • Prepare dressing by combining all ingredients in a medium-sized bowl and stirring thoroughly. Taste and adjust seasonings.
  • When salad is cool enough, add cheese cubes (you don't want them to melt) and dressing. Stir well to combine and transfer to a large bowl or casserole dish. Serve chilled.

  • Cook pasta al-dente according to the package directions. Drain and rinse in cool water until no longer hot.
  • While pasta is cooking, prepare the rest of the ingredients: clean the bell peppers, remove the seeds, and pith, and chop them into small ⅓ inch pieces. Dice the scallions. Chop the broccoli into small pieces.
  • Optional: If you don't love raw broccoli or prefer the softer texture of slightly cooked broccoli, cook the broccoli florets in the microwave on medium for 2-3 minutes to steam them. Allow to cool or rinse under cold water.
  • In a large bowl, combine the chopped peppers, broccoli, scallions, shredded cheeses, and cooked pasta, as well as any other add-ins you like. Add the Ranch dressing and mix well. Season with salt and pepper, if desired (I find that I don't need salt when using Ranch dressing), or add additional dressing if needed.
