Ingredients

1 lb ground beef
1/4 lb onion, chopped
1 (15 ounce) can chili beans
1 (15 ounce) can Spanish rice
1 (6 ounce) package corn chips
1 cup cheddar cheese

Steps:

Brown ground beef in large skillet, stirring until crumbly, drain.
Saute onion in small skillet until tender.
Stir into ground beef mixture with beans and rice.
Heat through, stirring frequently.
Layer corn chips, ground beef mixture and cheese alternately in a 9 x 13 inch baking dish.
Bake at 350 degrees until cheese is melted.

1 lb ground beef (at least 85% lean) drain excess grease
1 pkg liptons dry onion soup mix
1 Tbsp prepared mustard
2/3 c ketchup
1 Tbsp bbq sauce
1 Tbsp worchester sauce
1 can(s) 15oz (approx) kidney beans drained (light or dark )
2 can(s) 15oz (approx) pork and beans
1/4 tsp black pepper

Steps:

1. In large skillet cook hamburger until half done, drain excess grease, add Lipton dry onion soup mix, continue cooking until hambuger is browned. Add mustard, ketchup, bbq sauce, worchester and pepper, stir ... add kidney beans and pork and beans ...pour into casserole dish, bake uncovered for 40 minutes at 350 degrees.
2. Note: this recipe can easily be doubled

In a large sauté pan set over medium heat, melt the butter until foaming. Add the chopped shallots and cook, stirring until softened, about 3 minutes.
Sprinkle the flour and the seasoning mix into the pan and stir to coat shallots. Slowly whisk in the chicken stock, whisking out any lumps; then the half and half.
Simmer for 2 minutes or just until thickened; then stir in cheese and remove from heat. Combine green beans and onion sauce and pour into a 9x9 casserole dish.
Bake for 20 to 25 minutes until liquid has reduced and thickened. Remove from oven and top with crisp onions.
