FLUFFY STRATA RECIPE (OVERNIGHT BREAKFAST CASSEROLE)

Overnight Breakfast Strata Recipe: This easy make-ahead holiday breakfast is super quick to prep, then pop in the oven the next morning!

12 large eggs
3 cups whole milk ((or half & half))
1 1/2 cups shredded sharp cheddar cheese ((off the block))
1 1/2 cup shredded smoked gouda cheese ((off the block))
1 cup chopped deli ham
1 cup chopped scallions
3/4 cup chopped roasted red pepper
1 1/2 teaspoons salt
1 teaspoon ground mustard
1/2 teaspoon garlic powder
12 ounce loaf french bread

Steps:

  • Set out a large mixing bowl and a 9X13 inch (3 quart) baking dish. Grease the baking dish. Chop all necessary ingredients.
  • In the mixing bowl, add the eggs, milk, salt, ground mustard, and garlic powder. Whisk well to break up all the yolks. Then stir in the cheeses, ham, scallions, and roasted red pepper.
  • Tear the bread loaf into 1-2 inch chunks and place them in the baking dish.
  • Pour the egg mixture over the top of the bread. Use a spatula to fold the bread over, gently, to make sure the ingredients are evenly distributed. Cover and chill until ready to bake.
  • Let the strata recipe rest for at least one hour, so the bread soaks up all the eggs. Preheat the oven to 350 degrees F. (This is a fabulous make-ahead overnight recipe, so you can also preheat the oven in the morning.)
  • Bake, uncovered, for 50-60 minutes, until the top is golden-brown and puffy in the center. Insert a sharp knife into the center to check that the eggs are set. If not, bake another 5-10 minutes. Then cool for 5 minutes before cutting. Serve warm!

1 pound bulk breakfast sausage
8 large eggs
4 cups whole milk
1 1/2 teaspoons salt
3/4 teaspoon ground black pepper
1 16-ounce loaf sliced raisin-cinnamon-swirl bread, each slice halved on diagonal
18 dried pitted plums (prunes),each cut into 3 pieces
Pure maple syrup

Steps:

  • Sauté sausage in large nonstick skillet over medium heat until brown and cooked through, breaking up with back of fork, about 6 minutes. Using slotted spoon, transfer sausage to bowl; cool.
  • Butter 13x9x2-inch glass baking dish. Whisk eggs, milk, salt, and pepper in medium bowl. Arrange half of bread in bottom of prepared dish with bases of triangles facing in same direction. Scatter half of sausage, then half of plums over bread. Arrange remaining bread in dish with triangles facing in opposite direction. Scatter remaining sausage and plums over. Pour milk mixture over; press on bread to submerge. Cover; chill overnight.
  • Position rack in center of oven and preheat to 350°F. Place strata on rimmed baking sheet. Bake uncovered until strata is puffed and golden and knife inserted into center comes out clean, about 1 hour. Let stand 10 minutes. Cut strata into squares and serve with maple syrup.

4 slices raisin bread
6 ounces cooked breakfast sausage links, cut in 1/4 inch slices
1 large apple, peeled,cored and cut in 1/4 inch thick wedges
3/4 cup shredded sharp cheddar cheese (3 oz)
5 eggs
3/4 cup milk

Steps:

  • Preheat oven to 325°F.
  • Place bread in a single layer in the bottom of a 9x9 inch baking dish.
  • Place sausage and apple in a large skillet, cover and cook over medium heat for 5 minutes.
  • Uncover and cook 3 minutes or until the sausage are lightly browned, the apples are soft and the pan juices evaporate.
  • Spoon the apple sausage mixture over the bread and top with cheese.
  • Place eggs and milk in a bowl and whisk to combine.
  • Pour mixture over cheese, let stand 5 minutes or cover and refrigerate overnight.
  • Bake 30 minutes (35-40 if refrigerated) or until eggs are set in the center.
  • Cut into squares before serving.

1 (8 ounce) package cream cheese, diced
1 cup diced peeled apples
8 eggs
2 ½ cups half-and-half cream

Steps:

  • Coat a 9x13 inch baking dish with cooking spray. Arrange 1/2 of the cubed raisin bread in the bottom of the dish. Sprinkle the cream cheese evenly over the bread, and top with the apples. If you like extra raisins, add them now. Top with remaining bread.
