3 1/2 cups Raisin Bran cereal (I use Post)
2 cups buttermilk
1/2 cup oil (applesauce may be substituted for oil)
2 eggs, beaten
1/2 cup walnuts (optional)

Steps:

  • Blend flour, sugar, baking soda and salt in a large mixing bowl.
  • Stir in cereal and walnuts.
  • Add buttermilk, oil and eggs.
  • Blend until dry ingredients are moistened.
  • Do not over stir.
  • Mixture may be stored, covered, in a nonmetal bowl in the refrigerator for up to 6 weeks.
  • Fill muffin tins 2/3 full.
  • Bake at 400°F for 20 minutes.
  • Recipe may be doubled.

1-1/4 cups sugar
1 cup nonfat dry milk powder
6 teaspoons baking powder
1 teaspoon salt

1 cup shortening
1-1/2 cups raisin bran cereal
1 cup chopped almonds
ADDITIONAL INGREDIENTS (for each batch):
1 egg
1 cup water

Steps:

  • In a large bowl, combine the first six ingredients. Cut in shortening until crumbly. Stir in cereal and nuts. Store in an airtight container in a cool, dry place or in the freezer for up to 2 months. Yield: 2 batches (8 cups total)., To prepare muffins: Place 4 cups of muffin mix in a bowl. Beat egg and water; stir into mix just until moistened. Fill greased muffin cups two-thirds full. , Bake at 400° for 15-17 minutes or until a toothpick comes out clean. 1 large egg, room temperature

These can be made with wheat bran, oat bran or a combination. I think they are best when made with half oat and half wheat bran. To make them a bit healthier, I usually cut the oil in half and sub applesauce or other fruit puree. I also now tend to use all whole wheat flour instead of the combination of all purpose and whole wheat. These are dark, moist, spicy muffins that remind me a bit of gingerbread. They are best served warm from the oven or reheated.

1 cup rolled oats

1 tablespoon honey
1 egg

Steps:

  • Combine buttermilk, rolled oats, and raisins in a bowl. Cover and refrigerate 8 hours to overnight.
  • Preheat the oven to 400 degrees F (200 degrees C). Liberally grease a 12-cup muffin tin.
  • Remove buttermilk mixture from the refrigerator. Mix flour, baking powder, baking soda, salt, and wheat germ together in a bowl.
  • Beat butter and brown sugar together in a large mixing bowl until light. Add honey and egg and mix well.

1 teaspoon baking powder
1/2 teaspoon salt
1/2 cup raisins

Steps:

  • *1 cup milk with 1 tablespoons lemon juice may be substituted for 1 cup buttermlk.
  • Preheat oven to 375 degrees.
  • Mix together wheat bran and buttermilk; let stand ten minutes or so.
  • Combine vegetable oil, egg, brown sugar, vanilla and bananas, then add to buttermilk/bran mixture.
