WHOLE WHEAT YEAST RISEN BISCUITS

Whole Wheat Yeast Risen Biscuits image

I made these this morning to eat with the pear butter I made last night. Delicious! I love making yeast breads. This recipe is great because there is only 30 minutes rising time. Takes longer than regular biscuits, but is still quick enough to do for breakfast. I may experiment in the future to see how much whole wheat flour I...

Categories     Other Breakfast

Time 30m

Number Of Ingredients 10

1 pkg active dry yeast
1/4 c warm water (105 degrees)
1 c whole wheat flour (i used white whole wheat)
1 1/2 c all purpose flour
2 Tbsp sugar
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
3/4 c buttermilk
1/2 c unsalted butter, melted

Steps:

  • 1. Dissolve the yeast in the warm water and set aside while preparing flour mix.
  • 2. Stir/sift together the flours, sugar, baking powder, baking soda, and salt.
  • 3. Stir the melted butter into the buttermilk until smooth.
  • 4. Make a well in the dry ingredients, and pour the yeast and the buttermilk mixture into the well. Stir together with a rubber spatula until it forms a soft sticky ball of dough.
  • 5. Turn dough out onto a lightly floured surface. Knead the dough about 12 - 15 strokes, working in a minimal amount of extra flour.
  • 6. Roll dough out 1/2" thick. Cut little biscuits with a small 2" cutter, and arrange with sides touching on a baking stone or biscuit pan. Cover with a clean towel and let rise for 30 minutes.
  • 7. Meanwhile, preheat oven to 375 degrees. When biscuits have risen for 30 minutes, bake them about 14 - 17 minutes, until browned on top. May brush with melted butter or cream when done for extremely soft tops.

THE BEST WHOLE WHEAT BISCUITS

The Best Whole Wheat Biscuits image

This homemade whole-wheat biscuit recipe is so quick and easy-plus it has only 5 ingredients! Make sure to bake a double batch to freeze for later and pull out for breakfast or dinner. They go great with homemade gravy or even jam.

Categories     Breakfast     Holiday     Lunch     Snacks & Appetizers

Time 25m

Number Of Ingredients 5

2 cups whole-wheat flour (or whole-wheat pastry flour)
4 teaspoons baking powder
½ teaspoon salt
4 tablespoons butter (cold, unsalted)
1 cup milk (any kind)

Steps:

  • In a medium sized bowl combine the dry ingredients. Mix well with whisk or fork.
  • Cut the ½ stick butter into little pea sized pieces and then mix the pieces into the flour mixture.
  • Using a fork or pastry blender, try to mash the butter pieces as you mix it together with the flour until the mixture resembles coarse crumbs. It is okay if the outcome just looks like the same pea sized pieces of butter covered with flour.
  • Then pour in the milk and mix it all together. Knead the dough with your hands 8 to 10 times (for best results do not over-knead the dough) and then turn out onto a floured surface (like a counter or cutting board).
  • Pat it out flat with your hands until the dough is a somewhat even ¾-inch thickness (sprinkle with a little flour if necessary).
  • Turn a drinking glass upside down and cut out biscuit rounds. I have also used shaped cookie cutters (like a heart or star) if you have little ones helping you!
  • Then place biscuits on an ungreased baking sheet or in a cast iron skillet and bake at 450 degrees for 10-12 minutes or until golden brown. Enjoy!

WORLD'S BEST WHOLE WHEAT BISCUITS

World's Best Whole Wheat Biscuits image

This is my favorite biscuit recipe, and it is so easy to make because there is no shortening to cut in. The bonus is they are made with healthy whole wheat. I always make these at Thanksgiving because I have plenty of heavy cream on hand. You can substitute white whole wheat flour or whole wheat pastry flour, but regular whole wheat flour works fine. And did I say they are easy? They can't fail. The recipe is from "1000 Vegetarian Recipes" by Carol Gelles

Time 35m

Yield 10 biscuits

Number Of Ingredients 5

2 cups whole wheat flour
1 tablespoon double-acting baking powder
1/2 teaspoon salt
1/3 cup canola oil
1/2 cup plain soymilk, as needed

Steps:

  • Preheat the oven to 450 degrees F.
  • Whisk together the flour, baking powder, and salt in a large mixting bowl.
  • Cut in the oil with a fork or pastry blender until the mixture resembles coarse crumbs.
  • Using a fork, stir in just enough of the milk so that the dry ingredients are moistened and the dough comes together.
  • (Too much milk will make the dough sticky; too little will make the biscuits dry.) Gather the dough in a ball and turn it out onto a lightly floured work surface.
  • Knead it gently 20 to 25 times.
  • Then smooth it into a ball.
  • Roll or pat the dough into a 1/2-inch thick round and cut it with a floured 2 1/2-inch biscuit cutter or the rim of a glass.
  • Push the center straight down into the dough without twisting it.
  • Reroll and recut the scraps of dough.
  • Place the biscuits on an ungreased baking sheet about an inch apart for crusty sides or touching for soft sides.
  • Bake on the center shelf of the oven for 10 to 12 minutes, or until the bottoms are lightly browned.
  • Do not overbake.
  • Serve hot or warm.
