ASIAN WILD RICE SALAD



Asian Wild Rice Salad image

Served warm or at room temperature, this easy wild rice salad is packed with good things.

1 cup wild rice
2 cups water
2 cups orange juice
1 large carrot (peeled and shredded)
1 stalk celery (cut into 1/4" dice (reserve celery leaves for garnish))
1/2 cup dried apricots (cut into 1/4" dice)
3 scallions (sliced)
1/3 cup dry roasted peanuts (chopped)
1 tablespoon grated ginger
2 cloves garlic (minced)
1 tablespoon olive oil
2 tablespoons sesame oil
2 tablespoons soy sauce ((or tamari for gluten free))
3 tablespoons rice wine vinegar
1 tablespoon honey ((substitute agave for vegan))

Steps:

  • Add the rice, water and orange juice to a medium saucepan and heat over high heat. Cover and reduce heat to a simmer. Cook for 45-60 minutes or until rice is tender. Transfer rice to a mesh strainer and drain excess liquid. Set aside to cool.
  • In a small bowl, whisk together the ginger, garlic, olive oil, sesame oil, soy sauce, rice wine vinegar and honey. Set aside.
  • In a large bowl, combine the carrot, celery, apricots and scallions. Add the rice and peanuts and toss to blend. Add 2-3 tablespoons of the dressing and taste for seasoning. If salad needs more seasoning or seems dry add dressing one tablespoon at a time. Chop the reserved celery leaves (about 1 tablespoon) and sprinkle on top of the salad.
  • Serve warm or at room temperature.

2 tablespoons olive oil
1/2 yellow onion, diced
1/2 cup diced celery (from 1 rib)
1 orange bell pepper, seeded and diced
1 1/2 cups long-grain rice
1/2 cup orzo
2 cloves garlic, minced
1/2 teaspoon dried oregano
1/2 teaspoon minced fresh thyme
Kosher salt and freshly ground black pepper
4 cups vegetable broth
1/2 cup dried cranberries
1/4 cup toasted sliced almonds
1/4 cup chopped fresh parsley

Steps:

  • Heat the oil in a large deep-sided skillet with a lid over medium-high heat. Add the onions, celery and pepper and cook, stirring occasionally, until they are just beginning to soften, about 3 minutes. Add the rice and orzo and cook, stirring constantly, until the orzo begins to brown, 3 to 5 minutes. Add the garlic, oregano, thyme, 1/2 teaspoon salt and 1/4 teaspoon pepper and cook, stirring occasionally, until the garlic is fragrant, about 2 minutes.
  • Stir in the vegetable broth, bring to a simmer and then lower heat and cook, covered, until the liquid is absorbed and the rice is tender, about 15 minutes. Remove from the heat and let sit, covered, for about 10 minutes. Fluff the rice with a fork and transfer to a serving dish. Top with the cranberries, almonds and parsley. Serve warm.

ASIAN RICE SALAD WITH SHRIMP



Asian Rice Salad With Shrimp image

2 cloves garlic, minced
1 2-inch piece ginger, peeled and grated
3 tablespoons toasted sesame oil
1/4 cup rice vinegar
2 tablespoons soy sauce
Pinch of sugar
3/4 pound large shrimp, peeled, deveined and halved lengthwise
1 large carrot, shredded
2 stalks celery, thinly sliced
2 cups snow peas, thinly sliced
1 tablespoon vegetable oil
2 cups cooked white or brown rice
1 bunch scallions, thinly sliced
1/4 head iceberg lettuce, shredded
1 cup mung bean sprouts
1/2 cup chow mein noodles and/or chopped peanuts

Steps:

  • Whisk the garlic, ginger, sesame oil, vinegar, soy sauce and sugar in a large bowl. Transfer 2 tablespoons of the dressing to a medium bowl, add the shrimp and toss. Add the carrot, celery and snow peas to the remaining dressing and toss.
  • Heat a large skillet over high heat and add 2 teaspoons vegetable oil. Add the shrimp and stir-fry until they turn pink, 3 to 4 minutes, then transfer to the bowl with the vegetables. Add 3 to 4 tablespoons water to the skillet and scrape up the browned bits with a wooden spoon, then add the liquid to the bowl with the shrimp. Let the skillet reheat, then add the remaining 1 teaspoon vegetable oil and stir-fry the rice until toasted, about 2 minutes. Remove from the heat and let cool.
  • Add the rice and scallions to the shrimp-vegetable mixture and toss. Divide among bowls and top with the lettuce, sprouts, chow mein noodles and/or peanuts.

2 tablespoons rice vinegar
2 tablespoons tamari or soy sauce
3 tablespoons toasted sesame oil
1 tablespoon maple syrup
1 tablespoon fresh lime juice plus the zest of 1 lime
1 teaspoon Sriracha sauce (or more to taste)
2 large garlic cloves (minced)
2 1/4 cups cooked and cooled US-grown brown basmati rice (prepared according to package directions, seasoned with salt if desired)
1/2 cup shredded red cabbage (roughly chopped)
1/2 cup shredded carrots (roughly chopped)
1/4 cup diced radishes
1/2 cup diced cucumber
1/4 cup chopped green onion
1/4 cup chopped shiitake mushrooms (fresh, or dried and soaked to soften)
1/2 cup edamame (cooked and cooled)
1 tablespoon minced fresh basil (Thai or regular basil)
1 tablespoon minced fresh mint
2 tablespoons minced fresh cilantro
8 ounces cooked and peeled medium-size (41-50 per pound) shrimp (grilled, steamed, or panfried as desired.)

Steps:

  • Prepare the rice according to package directions in a rice cooker or on the stove. Note: 3/4 cup of dry brown rice will make about 2 1/4 cups cooked.
  • Whisk together all of the ingredients for the dressing and set aside.
  • When the rice is cooked, cool it to room temperature, and pour the dressing over the rice. Place it in the refrigerator for at least 3 hours (or until it's cold) or overnight.
  • Place all of the vegetables and the herbs in a large mixing bowl.
  • Add the seasoned rice to the vegetables and toss well to combine.
  • Add the shrimp and toss again to combine.
  • Taste, and adjust seasonings with additional tamari or sriracha as desired

1/2 cup all-purpose flour

1 1/2 cup Japanese bread crumbs (recommended: Panko)
2 tablespoons butter
2 tablespoons vegetable oil
1 can pineapple rings (reserve juice for dipping sauce)

Cilantro Dipping Sauce in Lime Cups, recipe follows
1 head Napa cabbage, shredded
1/2 pound snow peas, blanched and julienne
1 mango, julienne
1/2 bunch cilantro, leaves chopped
1/2 red pepper, julienne
1/2 cup Asian marinade and dressing (recommended: Wishbone)

Steps:

  • Drizzle the marinade on the trout fillets to lightly coat each side. In a medium bowl, combine flour, salt and pepper. Lightly dust the fillets in the flour mixture until both sides are evenly coated. In a separate medium bowl, whisk together the eggs and milk. Dip the fillets in the egg mixture, the dredge the fillets in the bread crumbs.
  • In a large, non-stick skillet, melt butter and oil over medium-high heat. Cook the fillets for approximately 2 minutes on each side until they are golden brown.
  • In a large, non-stick grill pan, sear 4 of the pineapple slices over medium heat until grill marks form on each side. Reserve the juice from the can of pineapple for the dipping sauce.
  • Combine the first 6 ingredients in a medium sized mixing bowl. Heat a large saute pan over medium heat and place the slaw mixture into the pan. Toss the slaw until the cabbage begins to slightly wilt. Remove the slaw from the heat and season, to taste, with lime juice, soy sauce, and salt and pepper.
  • Prepare the rice according to package directions, using chicken stock in lieu of water. Add the remaining ingredients except for the vegetable oil to the rice and combine well. Coat the inside of a dry 1-cup measuring cup with vegetable oil. Pack the rice mixture tightly into the cup and turn it out onto a plate. Re-oil the cup as necessary for additional mounds.
  • Combine the cilantro and oil in a blender until a paste forms. Add the remaining ingredients to the cilantro paste and blend well. Pour the sauce into the 4 hollowed lime cups.

1small red pepper , deseeded and finely chopped
½ cucumber , deseeded and finely chopped
1large carrot , grated
6 dried apricots , chopped
2 tbsp toasted pumpkin seed or sunflower seeds
2 tbsp olive oil
½ orange , juice only

Steps:

  • Cook the rice as per pack instructions. Drain, rinse and drain again. Mix with the red pepper, cucumber, grated carrot, dried apricots and toasted pumpkin seeds. Drizzle over olive oil and the orange juice.

  • Begin by preparing sauce. Add nut butter of choice to a small blender along with lime juice, garlic, red pepper flake, coconut aminos (or tamari, reduced amount), sesame oil, and maple syrup. Blend until creamy and smooth. Taste and adjust flavor as needed, adding more red pepper flake for heat, maple syrup for sweetness, lime juice for acidity, coconut aminos for saltiness / depth of flavor, garlic for zing, or nut butter for nuttiness / creamy texture. Set aside.
  • Next, prepare veggies. We prefer a vegetable peeler to make “carrot noodles,” a mandolin with a very fine-tooth blade to make angel hair-width cucumber noodles, a mandolin for the cabbage and red bell pepper, and a knife to slice the kale. Also cube mango (see instructions here!). Add all veggie noodles and cubed mango to a large serving dish.
  • Optional: Steam snap peas by adding to a steamer basket inserted into a saucepan with 1/2 inch of water. Bring to a low boil, cover, and steam for 1-2 minutes. Remove from heat and add to serving platter. Otherwise, serve raw.
  • Add the dressing (reserving a little extra for serving) and toss to combine. Garnish with fresh cilantro and seeds of choice (we prefer sunflower or sesame seeds). Enjoy as is, or serve with our Marinated Peanut Tempeh or Almond Butter Tofu.
