PREPARE YOUR SMOKER BRING UP TO TEMPERATURE OF 225 F AND ADD IN SMOKING CHIPS . OAK AND MAPLE ARE BEST HERE. PREHEAT FOR 30 TO 45 MINUTES. START THE CHIPS SMOKING, PLACE THE ROAST ON THE RACKS AND INTO THE SMOKER, SMOKE FOR NO MORE THEN 4 HOURS, AFTER THE SMOKE PROCESS APPLY 3 COATS OF YOUR FAVOURITE BBQ SAUCE LETTING IT CARAMELIZE BETWEEN COATS. CONTINUE TO COOK IN THE SMOKER TILL AN IT OF 190 TO 210F TEST WITH A FORK SEEING HOW EASY IT PULLS APART.. IF EASY REMOVE AND SHRED WITH FORKS. SMOKED TOP SIRLOIN ROAST RECIPE
Smoked top sirloin roast recipe with detailed instructions for smoking a beef roast. This was done in with mesquite wood in a Bradley Smoker with a simple steak type spice rub.

Steps:
- Trim the roast of any excess fat. If desired, tie the roast up with kitchen twine.
- Rub the roast down with the sea salt and then rub the roast with the Montreal steak spice.
- Set up smoker for 250F using mesquite wood, or other wood of choice.
- Lay the roast on a smoker rack and smoke until 135, or until desired doneness.
- Remove the roast from the smoker and let rest for 10 minutes. Slice and serve.
RAGIN' CAJUN KETCHUP
this is from our local newspaper around 1980 or so. I've kept it that long and never posted it or added it to my regular cookbook. I use this all the time. Adjust the heat to your liking.

- In a heavy saucepan, saute onion, green onions, red pepper, jalapenos, garlic, thyme and olive oil for about 10 minutes until the vegetables have softened.
- Add ketchup and tomatoes, bring to a simmer and cook 5 minutes, stirring occasionally.
- Transfer mixture to a bowl, cool and refrigerate until ready to use.
- The can be refrigerated up to 3 weeks.

- In small bowl, combine the flour, ketchup, Worcestershire sauce, brown sugar, vinegar, 1 t salt and mustard until smooth; set aside.
- Sprinkle pepper and remaining salt over roast.
- Grill roast over medium heat for 5-10 minutes or until browned on all sides.
- Transfer to a heavy-duty 13-inch by 9-inch baking disposable foil pan.
- Pour reserved sauce over roast.
- Top with carrots, tomatoes and onion.
- Cover pan with foil.
- Grill over indirect medium heat for 3 hours or until meat is tender.

- Bring a large pot of lightly salted water to a rolling boil.
- Boil the fettuccine until cooked through yet firm to the bite, about 8 minutes; drain and transfer pasta to a large serving bowl.
- Heat the butter and garlic in a large skillet over medium-high heat; stir in the sausage, tomatoes, broccoli, bell pepper, mushrooms and green onion.
- Cook and stir until the sausage is browned and vegetables are tender.
- Stir in chicken, shrimp, white wine, cajun seasoning, milk, and 1/4 cup Parmesan cheese. Cook and stir until shrimp until they are bright pink on the outside and the meat is no longer transparent in the center, 3 to 5 minutes.

CAJUN POT ROAST FOR THE CROCK POT
For a truly Cajun meal, serve this with cooked okra, but I'm not quite that Cajun so we just have this with green beans or another vegetable. Makes great sandwiches for left overs and can be frozen for 3 months with the sauce.

- Trim fat from roast. Cut roast to fit in crock pot, if necessary. Rub Cajun seasoning all over meat. In large skillet brown meat on all sides in hot oil.
- In a 3 1/2 to 4 quart crock pot combine undrained tomatoes, onion, celery, tapioca, and garlic. Place meat on top of vegetable mixture.
- Cover and cook on low-heat setting for 10 to 12 hours or on high setting for 5 to 6 hours.
- Slice meat; serve with sauce over rice. Makes 6 servings.
