RAGDA PATTIES ( INDIAN SNACK )
A popular Indian snack sold on roadsides. It looks like a long recipe because I have included the recipes for two chutneys. Usually, we have those on hand. These chutneys are also available in Indian grocery stores.

Steps:
- Method for Ragda:.
- Wash and pressure cook peas in water till well done. (If you dont have a pressure cooker, boil them in a sauce pan).
- Cool 3 tablespoons peas for blend.
- Blend together cooled peas, green chillies, mint, coriander
- Heat oil, add paste. Fry for a minute.
- Add dry masalas, fry further 2-3 minutes.
- Add peas, water and bring to boil.
- Simmer for 7-8 minutes till gravy thickens.
- Method for Patties:.
- Mix all ingredients well with hand.
- Knead lightly.
- With the help of greased hands form 12-14 round flat 1/2"thick 2" patties, (use mould if you want any other shapes, eg. hearts, diamonds, etc.)
- Roast few at a time on a greased hot griddle.
- Turn once to roast other side, making them crisp and golden brown. Keep aside.
- Method for Tamarind Chutney.
- Wash the tamarind clean.
- Place the tamarind, jaggery, sugar, dates and water in a deep boiling pan.
- Soak for a few minutes. Put to boil for about 7-8 minutes.
- Cool to room temperature. Blend in a mixer till smooth.
- Strain and transfer to the pan again. Boil till thick enough to coat the back of a spoon
- thinly.
- Add the seasoning. Cool again. Store in clean airtight bottles and refrigerate.
- Shelf life of about a month in the refrigerator.
- Method Green Chutney.
- Grind all the ingredients with a little water.
- To Serve:.
- Green chutney, Tamarind chutney, chopped onions and coriander, yogurt, crushed fresh cumin, salt.
- Place 2 warmed patties in individual bowl, pour a tablespoons or so of hot ragda over it.
- Sprinkle 1 teaspoons tamarind chutney, 1/2 tsp green chutney, 1 teaspoons yogurt.
- Sprinkle cumin, salt to taste.
- Garnish with cilantro and chopped onion. Serve hot.

- Soak the white peas or safed matar for 6-8 hours or overnight. The peas will double in size after the soak time. Drain the peas and rinse them under tap water.
- Heat oil in a pan. Add degi mirch and coriander powder to it. Saute the peas in aromatic spices and for a few seconds, add ragda to it.
- Soak poha in lukewarm water until soft. Drain the water and gently press the soaked poha to get all the water out of it. Set it aside.
- Transfer the warm ragda to a clean plate or bowl. Top it with green chutney and tamarind chutney.

- Soak the dried white peas overnight (8 hours) in enough water so they are well under water even when they swell. Drain all the water next day and rinse them. These will need to be pressure cooked either using Instant Pot or regular pressure cooker. These can be cooked on stove top too but will take longer.
- Heat oil in the pressure cooker on medium high heat. Once oil is hot, add cumin seeds followed by asafoetida (hing), turmeric and red chili powder (once the seeds splutter). Mix.
- Mash the boiled potatoes (preferably when hot as it easy). Mash as smooth as possible. Add cornflour (1 tbsp at a time) and salt to the mashed potatoes . Mix well (preferably with hands) so all is well combined almost like a dough.

- Rinse the dried white peas a couple of times in fresh water. Soak them in 2.5 cups of water overnight or for 8 to 9 hours.
- Drain all the water from the potatoes after they are cooked. When they are still warm, peel and then mash them. Ensure that there are no fine chunks of potatoes in the mash.
- Heat oil/ghee on a tava (griddle) or in a shallow frying pan. Keep the potato patties on the hot oil in the tava for frying. Fry on medium heat.
- Keep everything ready for the toppings and garnish before you assemble the ragda patties. The potato patties have to be hot or warm before you assemble, so keep everything ready before you fry the patties.
