1/4 cup minced fresh rosemary
1-1/2 teaspoons coarsely ground pepper
1-1/2 teaspoons salt
2 racks of lamb (1-1/2 pounds each)
1 tablespoon olive oil
SAUCE:
3/4 cup fresh parsley leaves
2/3 cup fresh basil leaves
1/3 cup each fresh cilantro leaves, mint leaves, oregano leaves and thyme leaves
1/3 cup coarsely chopped fresh chives
1/3 cup chopped shallots
2 garlic cloves, crushed
3 tablespoons grated lemon zest
1/2 cup lemon juice
2 tablespoons Dijon mustard
3/4 teaspoon salt
1/2 teaspoon pepper
1/3 cup olive oil

Steps:

  • Mix rosemary, pepper and salt; rub over lamb. Refrigerate, covered, 8 hours or overnight., Preheat oven to 375°. Place lamb in a shallow roasting pan, fat side up; drizzle with oil., Roast 35-45 minutes or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°). Remove lamb from oven; tent with foil. Let stand 10 minutes before serving., Meanwhile, place herbs, shallots and garlic in a food processor; pulse until herbs are chopped. Add lemon zest, lemon juice, mustard, salt and pepper; process until blended. Continue processing while gradually adding oil in a steady stream. Serve lamb with sauce.

1/2 cup fresh bread crumbs
2 tablespoons minced fresh parsley
1 tablespoon minced fresh thyme or 1 teaspoon dried thyme
1 garlic clove, minced
2 tablespoons olive oil
2 frenched racks of lamb (1-1/2 pounds each)
1/4 teaspoon salt
1/4 teaspoon pepper
1 tablespoon Dijon mustard

Steps:

  • Preheat oven to 375°. In a shallow dish, combine bread crumbs, parsley, thyme and garlic. Add oil and toss; set aside. Sprinkle lamb with salt and pepper. In a large skillet, brown meat on both sides. Brush mustard over top of meat, then roll in crumb mixture., Place racks in a shallow baking pan side by side with bones interlaced resting against each other. Bake 30-40 minutes or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°). Let stand 10 minutes before slicing.

1 rack of lamb (fat cap removed, frenched)
4 tablespoons extra virgin olive oil
1/2 cup Dijon mustard
salt & freshly ground black pepper
1 tablespoon fresh thyme leave (chopped)
1 tablespoon fresh rosemary leaf (chopped)
1 tablespoon fresh sage leaf (chopped)
1 tablespoon fresh parsley leaves (chopped)
10 garlic cloves (peeled and sliced in half)
1/2 cup dry white wine (you may use red wine)
1 cup veal stock or 1 cup chicken stock
1 tablespoon unsalted butter

Steps:

  • In a roasting pan with very hot olive oil, sear the lamb, fat side down first, until golden.
  • Remove and allow to rest 5 minutes.
  • Brush the mustard onto both sides of the seared lamb.
  • Season with salt and pepper.
  • Mix all of the herbs together.
  • Dredge both sides of the lamb in the herbs, pressing lightly so that the herbs adhere.
  • In the same roasting pan the lamb was cooked in, add the 10 cloves of garlic and place the lamb on top.
  • Preheat oven to 350 degrees.
  • Cook in the oven 15 to 20 minutes or until medium-rare.
  • When cooked remove the lamb from the roasting pan and wrap in aluminum foil to rest.
  • Place the roasting pan on top of the stove over medium heat.
  • Remove the garlic and set aside.
  • Discard all the fat.
  • Add the white wine and the stock and reduce by half.
  • Place the roasted garlic in a blender or food processor.
  • Add the reduced stock and wine mixture and puree until smooth.
  • Add the tablespoon of butter and pulse to incorporate.
  • Season well with salt and freshly ground pepper.
  • For a nice presentation, on a serving plate, stand the rack of lamb upright in a circle and secure with a skewer.

1 1/2 lbs racks of lamb
3 sprigs thyme
1 sprig rosemary
3 sage leaves
1 teaspoon oregano
2 tablespoons parsley
2 garlic cloves

1 cup port wine
1 cup veal broth

Steps:

  • 1. To prepare the rub, chop the thyme, rosemary, sage leaves, oregano, parsley, and garlic cloves and put in a mortar and pestle. Add dijon mustard and olive oil and mash until paste-like.
  • 2. Sprinkle the rack of lamb with salt and pepper. Then rub all over with the herb paste. Cover and let marinate in refrigerator overnight, up to a day.
  • 3. Pre-heat oven to 400-degrees.
  • 4. In a hot pan, add olive oil and sear both sides of the rack of lamb for 10 minutes, or until golden.
  • 5. Put the pan with the rack of lamb inside the oven for 15 minutes for medium-rare meat. (Leave in longer for medium).
  • 6. Reduce port wine and veal broth for about 20 minutes, until thicker consistency.
  • 7. Let the rack of lamb rest for at least 5 minutes before slicing. Add port reduction sauce on top and serve.

Added to the developing sauce, they also add to the mint, bouquet garni, fresh ham, and dill pickles that round out the flavor. The lamb racks are served with sauce and fresh vegetables. Bright, peppery bits of watercress garnish the dish.

Steps:

  • To marinate: Mix all ingredients together in a large non-aluminum bowl or a very large heavy zippered plastic bag. Add the lamb racks and turn to coat. If using a bowl, cover the bowl with plastic wrap; if using a bag, press out the air and zip the bag. Marinate 48 hours, turning occasionally. To prepare the lamb and sauce: Preheat the oven to 500 F. Remove the lamb racks from the marinade and drain. Keep refrigerated until ready to use. Strain the vegetables from the marinade and set aside. Put the lamb bones in a roasting pan and roast for 15 minutes. Add the drained marinade vegetables and brown another five minutes. Strain the contents of the roasting pan to remove the fat and transfer the bones and vegetables to a stockpot. Chop six of the mushrooms (reserve the other two) and add to the pot, then add the mint. Put the roasting pan over medium-high heat and add the red wine; stir up the glaze from the bottom. Pour into the stockpot. Add the demi-glace and bouquet garni. Cook for 2 hours, skimming carefully. Adjust the seasoning with salt and pepper. Strain through a chinois or fine-meshed sieve into a saucepan. Heat the sauce over medium heat. Julienne the reserved mushrooms and add to the pan. Add the ham and pickle. Adjust seasoning again; set aside and keep warm. Preheat the oven to 425 F. Season the lamb racks with salt and pepper. Sprinkle with thyme. Place in a roasting pan and roast 12 to 15 minutes for medium-rare. Remove the racks from the pan and let rest for five minutes before carving. Saute the carrots and snow peas separately in butter until hot, adding the sugar to the snow peas. Season with salt and pepper. To serve: Cut the racks in half, allowing four ribs per person. Place serving on each warmed plate. Ladle warmed sauce around the racks. Arrange carrots and peas around the racks. Garnish with bits of watercress.

1/3 cup panko bread crumbs
1/4 cup KRAFT Grated Parmesan Cheese

3/4 cup HEINZ HomeStyle Savory Beef Gravy
1 Tbsp. butter
1 Tbsp. LEA & PERRINS Worcestershire Sauce

Steps:

  • Heat oven to 425°F.
  • Heat oil in large nonstick skillet on medium-high heat. Add lamb, skin side down, to skillet; cook 2 to 3 min. on each side or until lightly browned on both sides. Transfer lamb to work surface; cool 5 min.
  • Spread mustard onto lamb. Combine bread crumbs, cheese and herbs; press into mustard. Place lamb in shallow foil-lined pan sprayed with cooking spray.
  • Bake 25 min. or until meat registers 150°F when tested with meat thermometer.. Remove lamb from oven; cover. Let stand 10 min. or until medium doneness (160°F).
  • Microwave gravy in microwaveable bowl on HIGH 1-1/2 min., stirring after 45 sec. Add butter and Worcestershire sauce; stir until butter is completely melted and gravy mixture is well blended.
  • Serve lamb topped with gravy mixture.

Brush with mustard., In a small bowl, combine the panko, thyme, mint, Worcestershire sauce and rosemary; press onto lamb. Transfer to a greased 15x10-in. baking pan. Bake, uncovered, at 375° for 15-20 minutes or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°)., In a large skillet, saute mushrooms in oil and 2 tablespoons butter until tender. Add garlic; cook 1 minute longer. Stir in wine. Bring to a boil; cook until liquid is reduced by half. Remove from the heat. DH and I found this to be an easy, tasty way to prepare rack of lamb. It is from Williams-Sonoma Kitchen. Prep time includes marinating time. I believe DH and I had to cook longer than 15 mins for medium-rare. We skipped the lemon wedges as it was just the two of us and we weren't concerned about presentation.

1 lemon, zest of
4 garlic cloves, finley chopped
1 tablespoon crushed dried rosemary

1/4 cup extra virgin olive oil
2 tablespoons extra virgin olive oil

salt, to taste
fresh ground pepper, to taste
1 lemon, cut into wedges

Steps:

  • In a small bowl, stir together the lemon zest, garlic, rosemary, thyme, and 1/4 cup olive oil. Spread the mixture evenly over the racks of lamb. Cover and refrigerate at least 1 hour or up to overnight.
  • Preheat oven to 400°F.
  • Season the racks of lamb with salt and pepper. In a large ovenproof saute pan over medium-high heat, warm 2 Tb olive oil. Add the lamb and cook until browned on both sides, about 7 minutes total.
  • Transfer the pan to the oven and cook until the lamb is well browned and an instant-read thermometer inserted into the thickest part of the racks, away from the bone, registers 130F for medium-rare, about 15 minutes, or until done to your liking.
  • Transfer the racks to a cutting board and let rest for 5 minutes. Carve into individual chops and serve the lemon wedges alongside.

2 racks of lamb, French trimmed
2 1/2 cups fresh white breadcrumbs
2 oz. parsley
1 egg
salt and pepper, to taste
1 oz. whole-grain mustard
12 small shallots
12 small cloves garlic, peeled
1/4 cup brown sugar
4 tbsp. cold butter, diced
1/2 cup ruby port
2 cups lamb stock
4 small sprigs thyme
4 small sprigs rosemary

Steps:

  • Preheat the oven to 400°F.
  • Heat the oil in a pan, and sear the lamb until golden brown. Roast in the oven for 15-20 minutes, then remove.
  • In a food processor, blend the breadcrumbs, parsley, and egg until fine, then season. Brush mustard onto the lamb, and coat with the mixture.
  • Place the shallots and garlic onto a sheet of aluminum foil, and sprinkle with the brown sugar and butter. Roast in the foil parcel for 15 minutes or until golden brown.
  • In a pan, bring the port and the lamb stock to the boil, simmer until it has reduced by half, and season.
  • Preheat the grill. Grill the lamb crust-side-up for 5 minutes. Let rest for 5 minutes, and slice into cutlets.
  • To serve, place a portion of the cutlets on each plate and arrange the shallots and garlic around. Drizzle the sauce around the plate, and serve with a sprig each of rosemary and thyme.

This is a recipe that I have been working on/perfecting for some time. Inspired by the Rack of Lamb at Outback. I found a seasoning recipe online a few years ago that was similar to mine. The most laborious part is mixing the seasonings. The seasoning is incredible, great for any meat really. The Cabernet sauce is a variation the outback one and is great too. I served this recently with mashed red potatoes. Sometimes I'll do 1 teaspoon kosher salt and 1/2 teaspoon granulated salt, to make the saltiness more uniform.

1 1/2 teaspoons kosher salt
1 teaspoon black pepper
1 teaspoon paprika
1/2 teaspoon garlic powder
1/2 teaspoon onion powder

Steps:

  • Heat oven to 425.
  • Mix together seasoning ingredients in a bowl.
  • Heat Olive Oil in large skillet to medium.
  • If you like you can trim some fat from the racks. You also can slice them in half for smaller racks.(I usually do whole 8 bone racks) Sprinkle seasoning on each rack.
  • Sear each rack on all sides until browned(2-4 minutes tops) Put racks into roasting pan and bake for 15 minutes to 130 degrees (for medium).Or 20 mins for a light pink med well. When lamb is done take it out of the oven and cover pan with foil and let lamb sit for 10 minutes.
  • While lamb is cooking, make cabernet sauce by melting butter in the searing skillet ( Do NOT wash out skillet -- you want the cooked bits of lamb or "fond" in there for flavor ). When melted add flour and cook for a minute or so. Stir in other ingriedents starting with the Wine and Beef Broth, then simmer for a bit to reduce the liquid. You can add a bit of cornstarch if you want it thicker(My wife likes it to be more like gravy).
  • When everything is ready you can cut the racks into 2 bone chops or leave it whole depending on your presention. Serve with Cab sauce on the side. The Cab Sauce is also great on mashed pototoes. Enjoy!
