Steps:
- For the brownies: Position a rack in the lower third of the oven and preheat to 325 degrees F. Butter a 9-by-13-inch baking pan and line with parchment paper, pressing the parchment into the corners and up the sides of the pan and leaving an overhang on 2 sides. Butter the parchment and dust lightly with flour.
- Melt the 1 stick butter in a small saucepan or high-sided skillet over medium-low heat. Add the chopped chocolate and cook, stirring constantly, until mostly melted. Remove from the heat and continue stirring until the chocolate is completely melted. Transfer to a large heatproof bowl, let cool for 10 minutes and then whisk in the eggs, water and vanilla.
- In another large bowl, combine the sugar, flour, cocoa powder, baking soda, baking powder and salt; whisk to combine. Transfer the dry ingredients to the melted chocolate then fold with a rubber spatula to combine. Pour the batter into the prepared baking pan. Set aside.
- For the topping: Stir together the peanut butter, confectioners' sugar and melted butter in a medium bowl until smooth.
- Spoon dollops of the peanut butter mixture on top of the brownie batter. Holding a butter knife vertically, swirl up and down and horizontally and vertically until the batter and topping are nicely swirled together. Sprinkle the chopped pretzels over the top.
- Bake until a toothpick inserted into the center comes out with just a few crumbs, about 35 minutes.
- Let the brownies cool in the pan on a wire rack for 30 minutes. Using the parchment "handles," lift the brownies out of the baking dish and transfer to a cutting board to cool completely before slicing into 12 bars.

Steps:
- Preheat the oven to 350 degrees F. Butter and flour a 12 by 18 by 1 1/2-inch sheet pan.
- Melt together the butter, 1 pound of chocolate chips, and the unsweetened chocolate in a medium bowl over simmering water. Allow to cool slightly. In a large bowl, stir (do not beat) together the eggs, coffee granules, vanilla, and sugar. Stir the warm chocolate mixture into the egg mixture and allow to cool to room temperature.
- In a medium bowl, sift together 1 cup of flour, the baking powder, and salt. Add to the cooled chocolate mixture. Toss the remaining 12 ounces of chocolate chips in a medium bowl with 1/4 cup of flour, then add them to the chocolate batter. Pour into the prepared sheet pan. Spoon the peanut butter over the top of the chocolate mixture and using a knife, swirl it through the chocolate mixture.
- Bake for 20 minutes, then rap the baking sheet against the oven shelf to force the air to escape from between the pan and the brownie dough. Bake for about 10 to 15 minutes more or until a toothpick comes out clean. Do not overbake! Allow to cool thoroughly, refrigerate, and cut into large squares.

PEANUT BUTTER CHOCOLATE CHIP BROWNIES
I loved peanut butter brownies as a kid but my adult taste buds now find the available recipes overly sweet with a mild peanut flavor. This updated recipe relies on powdered peanuts to boost peanut flavor. I've reduced the sugar by about 1/3 from the typical recipes. This recipe reflects the best of three alternate variations that I attempted.

PEANUT BUTTER BROWNIES II
These brownies bake up gooey, and are a BIG hit with my family and friends! Has been a family recipe for years. I undercook them just a little, and cutting with a plastic knife works well.

RACHEL'S FANTABULOUS NESQUIK PEANUT BUTTER CHIP BROWNIES
I love how well Nesquik lends itself to baking! This recipe is wonderful for doubling to take to parties and potlucks. Concocted these based off my Pink Brownies recipe, except no additional cocoa powder is needed because there's already chocolate in them. Prep Notes- you can use self-rising flour if you omit the baking soda and salt; AP and cake flours need them or else it won't come out right. If you take out the butter and use all applesauce, use another 2-3 TB or else there won't be enough moisture. If using just one serving of applesauce, those little Mott's single serves are awesome. Can also sub 3 egg whites for the eggs. And of course, the peanut butter chips are what makes it special, but sub regular chocolate chips for traditional brownies.

Steps:
- Semi-melt the butter in your microwave-- not completely melted, about halfway with the rest of the butter very malleable.
- In a large mixing bowl, cream the butter, dark brown sugar, and applesauce together with an electric beater or whisk.
- Beat in the Nesquik and vanilla.
- Beat in the eggs or egg whites one at a time, beating well after each addition.
- Gradually add in the cup of flour. It should have a very thick, creamy, chocolatey consistency like those frosting commercials.
- Beat in the salt and baking soda-- skip this step and ingredients if you are using self-rising flour.
- Whisk in the baking chips until well blended, and grease an 8x8 square pan with cooking spray.
- Pour the mixture into the pan and make sure it is even.
- Bake for 15-20 minutes at 375F, or until set.
- **If doubling-- just double all the ingredients and follow the steps exactly the same, except you'll pour the mixture into a greased 11x7 pan and bake for about 25-30 minutes.

DOUBLE PEANUT BUTTER CHOCOLATE CHIP BROWNIES
These peanut butter brownies with peanut butter chips and chocolate chips are rich, decadent and best enjoyed with a tall glass of ice-cold milk. They are sure to satisfy your deepest peanut butter and chocolate craving. Since these brownies are so intensely rich, I strongly suggest sharing. (The idea for this recipe originated from the back of a bag of Hershey's Reese's Peanut Butter Chips--recipe for Double Peanut Butter Paisley Brownies. I decreased the amount of sugar and used chocolate chips instead of chocolate syrup.)
