Really good, really easy with the great flavor of bacon! Serve with rice or buttered noodles. Note: If you don't want to use heavy cream in the recipe, use 1 teaspoon flour mixed with 2 teaspoons water instead!

2 tablespoons butter, melted
2 bone-in chicken breast halves, with skin
1 teaspoon seasoning salt
1 clove garlic, crushed
2 thick slices bacon
½ cup mushrooms, halved
¼ cup heavy cream

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Pour melted butter into a 9x13 inch baking dish. Add chicken, skin side down; sprinkle with seasoning salt and garlic. Turn chicken over, season, and lay bacon strips on top. Sprinkle with mushrooms.
  • Bake in preheated oven for 45 minutes to 60 minutes, or until chicken is no longer pink and juices run clear.
  • Remove chicken, bacon and mushrooms to a platter and keep warm. Pour juices from baking dish into a small saucepan and whisk together with cream over low heat until thickened. Pour sauce over chicken and serve warm.

Juicy creamy bacon and mushroom chicken breasts is a great one-pot recipe. This recipe is perfect for an easy meal served with crusty bread to mop up the sauce.

10 strips streaky bacon (chopped)
4 chicken breasts (I butterflied mine to allow for quick cooking)
250 g mushrooms (quartered)
3 garlic cloves (thinly sliced)
1 teaspoon fresh thyme leaves
juice of ½ lemon
1 cup cream
½ cup chicken stock
salt & pepper to taste

Steps:

  • Brown the bacon in a large skillet/deep pan. Remove and set aside. Pour off half of the bacon fat.
  • Place the pan back on the heat and brown the chicken breasts on both sides. Remove and set aside.
  • Fry the mushrooms and garlic until fragrant then add the thyme, lemon juice, chicken stock and cream. Allow to come to a simmer then add the bacon and chicken back to the pan and cover.
  • Allow to simmer for 8-10 minutes or until the chicken is cooked through and the sauce has reduced.
  • Season to taste and serve.

This is one of the few dishes I make that uses canned soup. When I left school I worked as an au-pair in Norway for a year and the family I lived with used to cook this. It's easy, but really yummy.

4 small chicken breast fillets
4 -8 slices unsmoked bacon
1 cup mushroom, sliced
1 (10 ounce) can cream of mushroom soup (cream of chicken soup also works)
3/4 cup cheese, your favourite variety

Steps:

  • Wrap the chicken breast fillets with 1-2 bacon rashers each.
  • Heat a little oile in a non stick frying pan, and quickly fry the chicken for a couple of minutes each side, just so the bacon starts to brown a little.
  • Place in an oven proof dish, that just holds them lying next to eachother (not too big).
  • In a bowl mix the soup with the mushrooms and pour over the chicken, so it's nearly covered.
  • Cover with a lid or tin foil and bake in a preheated oven at 190°C/375°F/Gas 5 for 30-40 minutes, until chicken is no longer pink.
  • Remove lid and sprinkle the cheese over the chicken breasts, replace lid and let rest for 5 minutes.
  • Serve with rice.

4 bacon slices, cut into 1-inch pieces
2 1/2 cups chopped onions
1/2 pound mushrooms, thickly sliced
2 large garlic cloves, chopped
1 3 1/2- to 3 3/4-pound chicken, cut into 8 pieces
1 cup dry red wine
1 cup canned low-salt chicken broth
1 teaspoon dried oregano
1 teaspoon dried basil

Steps:

  • Cook bacon in heavy Dutch oven over medium-high heat until almost crisp, about 4 minutes. Using slotted spoon, transfer bacon to paper towels. Add onions, mushrooms and garlic to drippings in pot. Sauté until onions are tender and golden, about 10 minutes. Using slotted spoon, transfer vegetables to bowl.
  • Sprinkle chicken with salt and pepper. Add to pot; sauté until brown, about 15 minutes. Return bacon and vegetables to pot. Add remaining ingredients; bring to boil. Reduce heat, cover and simmer until chicken is cooked through, about 30 minutes.
  • Using large spoon, skim fat from top of sauce. Season chicken to taste with salt and pepper and serve.

2 bacon strips, halved
2 boneless skinless chicken breast halves (6 ounces each)
1/4 teaspoon seasoned salt
1/4 cup honey

1 tablespoon water
2 teaspoons cornstarch
3/4 cup flour
2 slices bacon, chopped (thick-cut)
4 (6 ounce) boneless skinless chicken breast halves
1/2 teaspoon sea salt

2 tablespoons unsalted butter
8 ounces white mushrooms, thickly sliced
1 cup chicken broth

Steps:

  • Combine the water and cornstarch in a small bowl and set aside. Re-mix thoroughly before using.
  • Spread the flour on a large plate or in a baking dish.
  • Heat a large, nonstick skillet over medium heat and add the bacon. Cook until just cooked through but not too crispy, 4-5 minutes, depending on thickness. Use a slotted spoon to transfer to a plate.
  • Remove all but 2 tablespoons of fat from the pan.
  • Dredge the chicken in flour, shaking off excess. Season with salt and pepper and sear until golden brown on the bottom, 6-7 minutes. Turn and sear until just cooked through, 6-7 minutes longer, depending on thickness. Transfer to a plate.

  • Return the bacon to the skillet and add the chicken broth. Remix the cornstarch slurry and stir into the mushroom mixture. Reduce the heat to medium-low and cook until slightly thickened, 3-4 minutes.
  • Return the chicken and any accumulated juices to the skillet and turn to coat. Cook until warm throughout, 2-3 minutes.
  • Plate the chicken with bacon-mushroom sauce spooned on top. Serve right away.

1/4 cup plain flour
2 tablespoons olive oil
200 g bacon, rashers rind removed and cut into 2cm cubes
500 g button mushrooms, halved
1 onion, chopped
2 garlic cloves, crushed
800 g diced tomatoes
140 g tomato paste
salt & freshly ground black pepper, to season
sour cream
chopped flat leaf parsley

Steps:

  • Toss 8 small free-range chicken legs in 1/4 cup (40g) plain flour until coated.
  • Heat 2 tbs olive oil in a frying pan over high heat.
  • Add chicken and cook, turning until golden. Place in a 3.5-litre crockpot.
  • Add 200g bacon rashers, rind removed and cut into 2cm cubes, 500g button mushrooms, halved, 1 onion, chopped, and 2 garlic cloves, crushed, to the frying pan and cook for 5 minutes or until golden.

1/2 lb bacon, diced
1 chicken, 4 to 6 pounds,cut up
1/2 cup dry white wine (or 1/4 cup dry vermouth plus 1/4 cup water)
1/2 lb small white mushroom
1 cup frozen small whole onions, thawed
6 cloves garlic, chopped
3 sprigs fresh rosemary or 1 tablespoon dried rosemary leaves
1/4 cup water
2 tablespoons cornstarch

Steps:

  • Cook the bacon in a large skillet over medium-low heat until crisp.
  • With a slotted spoon, transfer it to a 4 to 6 quart Crockpot Pour off all but two teaspoons of fat from the pan.
  • Add the chicken and brown over medium-high heat; transfer to the cooker.
  • Pour the wine into the pan and deglaze allowing wine to reduce and thicken slighty.
  • Add the reduced wine along with the mushrooms, onions, garlic, rosemary and salt to the crockpot.
