Orange Freeze is a wonderful memory I have from childhood. I developed this and it tastes exactly the way "Tops" Drive-In used to serve it. I hope you enjoy it!

club soda

Steps:

  • Put sherbet in the blender.
  • Cover to top with club soda.

4 scoops lemon sorbet
2 ounces chilled vodka, citrus vodka or limoncello (Italian lemon liqueur)
2 ounces prosecco or other sparkling wine or Champagne
2 sprigs fresh mint

Steps:

  • Blend lemon sorbet on low speed and pour in vodka or lemon liqueur in a slow stream. Add prosecco or Champagne. Pour cocktails into a chilled martini glass and serve, garnished with a sprig of mint.

NUTTY TURKEY LOAF WITH CRACKED CRANBERRY AND ORANGE SAUCE



Nutty Turkey Loaf with Cracked Cranberry and Orange Sauce image

Half 12-ounce bag fresh cranberries
1/3 cup sugar
1 orange, peel cut into strips and juiced
1 to 2 tablespoons unsalted butter
1 small rib celery with leafy top, finely chopped
1/2 carrot, peeled and grated or finely chopped
1/4 onion, finely chopped
2 tablespoons dry sherry or white wine
3/4 pound ground turkey, 94 percent lean
Small pinch ground cloves
A few grates fresh nutmeg
Kosher salt and freshly ground black pepper
3/4 cup fresh breadcrumbs
2 tablespoons milk
1/2 large beaten egg
2 tablespoons chopped hazelnuts, toasted
2 tablespoons pine nuts, toasted
2 tablespoons finely chopped fresh flat-leaf parsley
1 tablespoon chopped fresh rosemary
1 tablespoon finely chopped fresh thyme
4 to 5 leaves sage, very thinly sliced
Olive oil, for drizzling

Steps:

  • Preheat the oven to 400 degrees F.
  • Place the cranberries in pot with the sugar, orange peel and juice and 1/2 to 1 cup water. Bring to a boil, then reduce the heat a bit and let it bubble away until the cranberries burst and form a sauce; remove the orange peels. Let cool to room temperature or chill.
  • Melt the butter in a small skillet over medium heat and cook the celery, carrot and onion until very tender, 10 minutes. Add the sherry and cook to evaporate, then turn off the heat and let cool.
  • Place the turkey in a bowl and season with the cloves, nutmeg and some salt and pepper. Moisten the breadcrumbs with the milk and squeeze off the excess, then add to the meat along with the egg. Add the hazelnuts, pine nuts, parsley, rosemary, thyme, sage and cooled vegetables and mix to combine. Form 4 miniature loaves and place on a parchment-lined baking sheet. Bake until cooked through, 20 to 30 minutes.
  • Serve individual meatloaves with the cranberry sauce on the side.

TURKEY CORN CHILI

1 tablespoon (1 turn around the pan in a slow stream) extra-virgin olive oil
1 medium onion, chopped
1 large bell pepper, red or green, chopped (use up leftover pepper strips from crudite tray if you have them)
1 jalapeno pepper, seeded and chopped
1 bay leaf, fresh or dried
1 1/2 pounds light and dark meat cooked turkey meat, diced
1 1/2 to 2 tablespoons (a palm full) chili powder
1 1/2 to 2 tablespoons (a palm full) ground cumin
1 teaspoon to 2 teaspoons (several drops) cayenne pepper sauce
Coarse salt
2 cups frozen corn kernels or leftover prepared corn
1 (32-ounce) can chunky style crushed tomatoes
2 cups prepared chicken stock or broth, paper container or canned
2 scallions, white and greens, chopped

Steps:

  • Heat a deep pot over medium high heat. Work close to the stove for your chopping. Add oil to your pot, 1 turn of the pan, and add vegetables as you chop them.
  • Add bay leaf and cook vegetables 5 minutes, stirring frequently, reducing heat if veggies start to stick. Stir in diced turkey meat and season with chili powder, cumin, and cayenne sauce. Season with a little salt, to taste. Add corn, tomatoes, and broth. Combine your chili well, adjust seasonings, reduce heat to medium low, and simmer for 7 to 10 minutes. Garnish chili with chopped scallions.

1 1/3 cups Orange sherbet
1 slice orange, 1/4-inch thick

Steps:

  • Place one clean, dry, room temperature glass (or two smaller ones) in the freezer ahead of time and remove when ready to prepare.
  • Place orange juice and orange sherbet in blender container and mix to the consistency of a milkshake.
  • Pour mixture into frosted glass, and garnish with orange slice.
  • Serve with straw and long-handled spoon.
  • (Preparation time does not include time to frost glass in freezer).

1 pint vanilla ice cream
1 liter carbonated lemon-lime beverage or 1 liter lemon lime seltzer water
1 lime, for garnish (optional)

Steps:

  • For each freeze, in a blender combine 3 scoops orange sherbet and 1 scoop vanilla ice cream.
  • Add 1/4 liter lemon lime soda or lemon lime seltzer and 4 ice cubes to the blender.
  • Set blender top in place and blend on high setting until frothy and smooth.
  • Pour into fountain or tall glass and garnish glass rim with a round of lime and a straw. Repeat with remaining ingredients.
