WW CORE MONGOLIAN BEEF
Weight Watcher Core Plan recipe. Serves 4, 1.25 points per serving. Great when served over brown rice.

Steps:
- In a medium bowl, mix together 1 tablespoon soy sauce, 1 tablespoon cornstarch, and minced garlic.
- Stir in beef strips.
- Let stand for at least 10 minutes.
- In a separate small bowl, mix together water, soy sauce, 2 1/2 teaspoons cornstarch, splenda, and red pepper; set aside.
- Heat 1 tablespoon of olive oil in a skillet over high heat.
- Cook and stir beef in hot olive oil for 1 minute; remove, and set aside.
- Heat remaining tablespoon of olive oil in the same pan.
- Saute carrots and white part of green onions for 2 minutes.
- Stir in green portion of the onion, and saute for 1 minute.
- Stir in sauce mixture and beef.
- Cook and stir until sauce boils and thickens.

- Saute mushrooms and onions in olive oil with garlic. Add spinach and cook until liquid has reduced.

These are always a good pick for bake sales, school treats, picnics, etc. It's a slightly "lighter" (lower in fat) than other whoopie pie recipes.

- Preheat oven to 425. Lightly coat cookie sheets with nonstick cooking spray.
- Whoopie Pies: In a mixing bowl, beat sugar and oil until crumbly. Add eggs and beat well. In separate bowl, combine flour, cocoa, baking soda and salt.
- Gradually beat flour mixture into sugar mixture. Add milk and mix together well.
- With lightly lightly floured hands, roll dough into 1 1/2" balls. Place balls 2" apart onto cookie sheets lightly sprayed with nonstick cooking spray. Flatten balls slightly with bottom of lightly greased flat-bottom glass.
- Bake at 425 for 5-6 minutes or until tops are cracked. Cool for 3 minutes before removing to wire racks to cool.
- Filling: In a mixing bowl, beat together butter and confectioners' sugar. Beat in milk and extract until fluffy.
- Pipe filling using pastry bag (or spread w/ knife) on to flat bottom of cooled whoopie pie and top with another whoopie pie to make a sandwich.

Steps:
- Heat oil. Add rice and cook until golden and toasted. Add and lightly saute onion, bell pepper, and garlic.
- Put salt, 1/2 cup of tomatoes (undrained) and broth in a blender. Process till smooth.
- Add liquid from blender to the rice mixture slowly. You can drain the rest of the tomatoes and add them to the rice at this point if you want extra tomato.
- Bring to a boil, cover, turn heat to low, and simmer until rice is tender, about 1 hour. (Or however long brown rice needs to simmer - my package says 1 hour.)
- Don't remove the lid during the cooking process.
- If you don't have fresh garlic, you can add 1/2 teaspoon of garlic powder to the blender.

- Preheat the oven to 425.
- spray two 8 or 9-inch round cake pans with nonfat cooking spray
- Line the bottoms of each pan with circles of parchment paper.
- To make polenta, put the water, cornmeal, salt, and seasonings into a large microwavable casserole dish or 1-quart measure.
- Cook at full power for 4 minutes.
- Stir well and cook again at high power for 2 more minutes.
- Stir again and cook at high power for another 2 minutes.
- Remove from the microwave, stir in the olive oil, and beat with a spoon until completely smooth.
- Spread the polenta evenly in the bottom of the two pans.
- Place the pans in the oven and bake for 12 minutes.
- While the crust is cooking, prepare your toppings.
- Sauté the vegetables lightly in a non-stick pan until onion begins to soften.
- After 12 minutes, take the crusts out of the oven and invert them onto a large baking sheet, side by side.
- They should fall right out of the pan with the parchment paper stuck to them. Peel away the parchment.
- Spread each crust with pizza sauce (don't use too much or they will be soggy) and top with veggies and vegan sausage.
- Sprinkle with chopped garlic.
- Return to the oven for about 10 minutes, until toppings look done.
- Lift off the baking sheet carefully using a large spatula and your hand--they are not sturdy like regular pizza, so be careful not to let your toppings slide off.
- Cut into fourths and serve.

QUICKEST CHOCOLATE PIE (WW CORE STYLE)
I came up with this "pie" recipe when I was craving some chocolate while on the Weight Watchers Core plan and plain old pudding wouldn't quite do it. Since this pudding is the only chocolate thing on the entire core list, I decided to work with it. Not everything included is core, but in the amounts listed below (1 serving worth), they are 0 points (I calculated each separately). If you eat more than 1 serving, I guess it wouldn't be free. You could always use different flavors of pudding of course - cheesecake would be good, or what about banana cream with banan slices? So many options!

- Mix 1 box of pudding with milk. Whisk for 2 minutes and let stand for 5 minutes or refrigerate until you are ready to eat your pie.
- Spoon 1/4 of pudding mixture into bowl. Crumble 1/2 graham cracker over the pudding. Top with 2 tablespoons Cool Whip Free. (Repeat 3 more times if you want 4 separate servings - or save the rest of the pudding for tomorrow.).
