"This is such a great salad," says Mina De Kraker in Schaumburg, Illinois. "It's elegant enough for special occasions but couldn't be easier or quicker to make." Soy sauce, ginger and a dash of curry add wonderful flavor!

Number Of Ingredients 12

1 cup cubed cooked turkey breast
1/4 cup seedless red grapes, halved
3 tablespoons chopped celery
4 teaspoons chopped pecans
4 teaspoons chopped water chestnuts
DRESSING:
3 tablespoons mayonnaise
1-1/2 teaspoons dried minced onion
1 teaspoon red wine vinegar
1/2 teaspoon reduced-sodium soy sauce
1/4 teaspoon ground ginger
Dash curry powder

Steps:

  • In a small bowl, combine the turkey, grapes, celery, pecans and water chestnuts. In another small bowl, combine the dressing ingredients. Pour over turkey mixture; toss to coat. Chill until serving.

This is a great, fast recipe for those nights that you have little time but want a balanced meal. Add beans or olives, if that is what you like. We can't find taco salad shells here, so if you have them where you are, try those. If you don't like raw onions, cook the onions with the ground turkey.

1 (1 ounce) packet taco seasoning mix
½ cup chopped green bell pepper
4 cups mixed salad greens and fresh herbs
2 cups tortilla chips
½ cup shredded Mexican cheese blend
⅓ cup chopped onion
½ cup fresh salsa
1 tablespoon sour cream

Steps:

  • Cook turkey in a skillet over medium heat until completely browned, 5 to 7 minutes; season with taco seasoning mix. Add green bell pepper; cook and stir until pepper is tender, about 5 minutes.
  • Arrange salad greens onto 2 plates. Top greens with tortilla chips, cheese, and onion. Spoon turkey over the each salad. Top with salsa and sour cream.

1 tablespoon madras curry powder
1 lemon, juiced
1/2 cup mayonnaise
2 cups 1/2 inch diced turkey breast meat
2 pears, peeled and cut 1/2 inch dice
3 scallions, sliced
Salt and black pepper
2 romaine lettuce hearts, washed, dried, and cut into large chiffonade

Steps:

  • Mix the curry with the lemon juice, to dissolve. Mix in the mayonnaise. Fold in with the turkey, pears, and scallions. Season. Serve on a bed of romaine leaves.

¾ pound cooked turkey meat
2 stalks celery
2 green onions
½ red bell pepper
3 tablespoons mayonnaise
2 tablespoons prepared Dijon-style mustard
1 tablespoon cider vinegar
1 teaspoon white sugar
¼ teaspoon salt

Steps:

  • Place cooked turkey meat, celery, green onions and red bell pepper in a blender or food processor. Finely chop using the pulse setting.
  • Transfer the turkey mixture to a medium bowl. Mix in mayonnaise, prepared Dijon-style mustard, cider vinegar, white sugar and salt. Cover and refrigerate 8 hours, or overnight, before serving.

  • In a large bowl combine coleslaw mix and turkey. Remove seasoning packet from noodles; reserve for another use. Crumble noodles; add to cabbage mixture. Pour dressing over salad; toss to coat. Gently stir in the orange sections.

ANNIE'S TURKEY SALAD



Annie's Turkey Salad image

This recipe can be made with leftover turkey, or a turkey breast. It is my great-grandmother's recipe. The cook time will not include the baking of the turkey, just making the salad. Keeping the salad somewhat chunky is part of what makes it good. No food processors, please. I serve this on a bed of red leaf lettuce and garnish with red and green seedless grapes and pecan halves. Cubed jellied cranberry sauce is very good with it, so I place that on the plate around the salad. Serve with assorted crackers or breads.

6 eggs
6 cups cooked turkey meat
1 (16 ounce) jar sweet pickles, chopped
1 ½ (10 ounce) jars mustard-mayonnaise blend
¾ cup mayonnaise

Steps:

  • Place eggs in a medium saucepan and cover with cold water. Bring water to a boil and immediately remove from heat. Cover and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool, peel and chop.
  • In a large bowl, thoroughly mix the eggs, turkey, pickles, prepared sandwich and salad sauce and mayonnaise. Chill in the refrigerator approximately 3 hours before serving.

  • Preheat oven at 550 degrees.
  • After seasoning turkey, cook for 30 minute on 550.
  • Turn oven down to 450 degrees and cook for 1 1/2 hours.
  • Do not open the oven at all during this cooking time and the turkey is cooked complete (providing you follow the directions). It really doesn't matter how big or how small the turkey actually is. It will be fully cooked as long as the directions are followed and the oven door remains closed during the cooking process!
