GYUDON (JAPANESE BEEF RICE BOWL)

Thinly sliced beef and tender onions simmered in a savory-sweet sauce, Gyudon is synonymous with comfort. It has been a staple in Japanese cuisine for over 150 years!

Number Of Ingredients 10

½ onion ((4 oz, 113 g))
1 green onions/scallions
½ lb thinly sliced beef (chuck or rib eye)
½ cup dashi (Japanese soup stock; click to learn more)
1 Tbsp sugar ((adjust according to your preference))
2 Tbsp sake ((substitute with dry sherry or Chinese rice wine; for a non-alcoholic version, use water))
2 Tbsp mirin ((substitute with 2 Tbsp sake/water + 2 tsp sugar))
3 Tbsp soy sauce
2 servings cooked Japanese short-grain rice
pickled red ginger (beni shoga or kizami beni shoga) ((to garnish))

Steps:

  • Gather all the ingredients. I usually put the thinly sliced beef in the freezer for 10 minutes because it's a lot easier to cut semi-frozen meat.
  • First, thinly slice the onion.
  • Next, cut the green onions diagonally into thin slices.
  • Then, take out the meat from the freezer. Cut the sliced meat into pieces 3 inches (7.6 cm) wide.
  • In a large frying pan (do not turn on the heat yet), add the dashi, sake, mirin, soy sauce, and sugar. Mix to combine.
  • Next, add the onion slices and spread them throughout the pan, separating the onion layers.
  • Then, add the meat on top of the onions. Separate the thin slices of beef so the meat covers the onions.
  • Cover the pan with a lid and start cooking over medium heat.
  • When the meat is cooked, skim off the scum and fat from the broth with a fine-mesh skimmer. Turn down the heat to simmer and continue cooking, covered, for 3-4 minutes.
  • Sprinkle the green onions on top and cook covered for another minute. If you like to add beaten eggs, you can add at this step (or refer to my Tanindon recipe).
  • In a large donburi bowl, add the steamed rice and drizzle the remaining sauce on top.
  • Put the beef and onion mixture on top. If you'd like, drizzle the remaining sauce on top. Top with the pickled red ginger. Enjoy!

How to make simple and quick yakiniku beef bowl. (焼き肉丼) Thinly sliced cuts of beef fried in an easy Japanese style BBQ sauce served on white rice and topped with scallions and an egg yolk. (Doesn't include time to cook rice) Serves 2.

2 tbsp soy sauce
1/2 tbsp mirin
1 tsp sugar
1 tsp honey
1 tsp garlic paste (or 1 crushed clove)
1 tsp ginger paste (or grated fresh ginger)
1/2 tbsp sesame oil
1/2 tbsp white sesame seeds
1 tsp chilli powder
1/2 tsp black pepper
250g meat (preferably beef, see note)
2 bowls of cooked rice (approx 330g cooked - 150g before cooking)
Chopped green onion to garnish
Soft boiled egg / raw egg yolk (pasteurized) optional

Steps:

  • Prepare 2 bowls of rice.

Quick Sukiyaki Style Beef Donburi image

This is adapted from the Just Bento Cookbook, by Makiko Itoh. Her recipe uses enoki and shitake mushrooms, and twice the sugar that I've called for here. I love this over brown rice in a bento box, but it's equally good straight from the pan over a bowl of whatever rice you love. While I've listed this as one serving, I have a fairly modest appetite and will serve this as two servings.

1 ounce snow peas, trimmed
1 teaspoon vegetable oil
1 green onion, white part only thinly sliced (save the green part to garnish another dish)
2 cremini mushrooms, thinly sliced
3 ounces beef sirloin, very thinly sliced (look for sukiyaki sliced beef at an asian market)
1 1/2 teaspoons sugar
1/4 cup dashi
2 tablespoons soy sauce
1 tablespoon mirin
1 tablespoon sake
1 cup cooked brown rice
shichimi pepper, to taste

Steps:

  • Bring a very small saucepan of water to a boil. Add the snow peas and cook for 1 minute, until the color turns very bright. Drain and set aside.
  • In a small skillet, heat the oil. Add the onion, and saute until it starts to soften.
  • Add the mushrooms, and saute for 3 to 4 minutes, until they start to soften.
  • Add the beef and sugar, stir to combine all of the ingredients, and cook until the beef starts to brown.
  • Add the dashi, soy sauce, mirin, and sake; and cook for another 3 to 4 minutes over high heat.
  • ***If using in a bento, place the meat mixture in a bowl and allow to cool before packing in the box on top of the rice. Garnish with the blanched snow peas and shichimi pepper.
  • If serving immediately, place the cooked rice in a deep bowl, then top with the meat mixture and some of the cooking liquid. Place the snow peas on top and sprinkle with the shichimi pepper.

1 ½ cups prepared dashi stock
¾ cup soy sauce
¾ cup mirin
¼ cup white sugar
8 ounces shirataki noodles
2 tablespoons canola oil
1 pound beef top sirloin, thinly sliced
1 onion, thinly sliced
1 tablespoon canola oil
2 stalks celery, thinly sliced
2 carrots, thinly sliced
5 green onions, cut into 2 inch pieces
4 ounces sliced fresh mushrooms (button, shiitake, or enoki)
1 (14 ounce) package firm tofu, cut into cubes

Steps:

  • Combine dashi, soy sauce, mirin, and sugar in a bowl and set aside.
  • Soak noodles in boiling water for 1 minute. Drain and rinse under cold water.
  • Heat 2 tablespoons canola oil; cook and stir beef in the hot oil until no longer pink, 2 to 3 minutes. Drain and set aside.
  • Heat 1 tablespoon canola oil in the skillet; cook and stir onion, celery, carrot, and mushrooms until softened, about 4 minutes. Stir in green onions, and dashi mixture, noodles, beef, and tofu. Bring to a simmer. Divide hot sukiyaki among four bowls and serve.
