STUFFED CABBAGE
Steps:
- For the sauce: Heat oil, then cook onions and garlic until soft. Add 8 cups water and stir, then add tomato puree, sugar, raisins, salt, pepper and citric acid and bring to a boil. Simmer for 30 minutes.
- For the filling: Meanwhile, mix beef, eggs, onion, peppers, rice, garlic powder, salt, pepper and 1/2 cup water in a bowl by hand until well blended. Work in breadcrumbs until mixture is firm. Roll the meat into logs approximately 2 inches by 1 1/2 inches. Refrigerate while preparing cabbage leaves.
- For cabbage leaves: Preheat the oven to 400 degrees F.
- Fill a large pot halfway with water and bring to a boil. Place entire cabbage in pot, core-side down, until outer leaves are softened and easily removed. Remove the outer leaves, then replace cabbage in water until next leaves can be removed. Continue in this manner until you have about 30 leaves.
- Lay a few leaves flat, overlapping them, to make a piece big enough to enclose a ground beef log inside. Place a ground beef log on top of the leaves. Roll the leaves up from the bottom, turn the sides in and continue to roll up. Repeat with next leaves. Place on cookie sheet until all logs are rolled.
- Transfer rolled leaves to a 12-by-10-inch baking dish and pour the sauce over the top. Bake, 1 hour 30 minutes.

- Blanch the cabbage leaves by immersing them in a pot of boiling water for 1 minute; drain and pat the leaves dry.

- Preheat oven to 350.
- Spray 13 x 9 pan with Pam.
- Mix Tomato soup, 1/2 soup can of water and diced tomatoes together in a bowl until blended.
- Place a layer of chopped cabbage on bottom of pan (about 1/2).
- Put 1/2 of chopped onions over cabbage.
- Crumble 1/2 of raw Ground Sirloin over onions and cabbage.
- Season with Salt, Pepper and Garlic Powder.
- Sprinkle 1/2 of Uncooked rice over this layer.
- Pour 1/2 of Tomato mixture over this layer.
- Repeat layers, ending with Rice and tomato mixture on top.
- Cover with foil.
- Bake for 1 hour covered, uncover and bake until liquid is reduced to your personal taste.
- We like ours with some juice.
- Served with fresh baked bread and butter, great comfort food on a cold (for Florida) night.

- Bring a large (10-12 quart) pot of water to a boil. Remove cabbage core with a sharp knife. Using tongs, place head of cabbage in simmering water and cook for six minutes. Turn cabbage over and cook another six minutes, until leaves are just tender. Gently remove from the pot, place in a bowl, and set aside until cool enough to handle, about ten minutes. Gently remove leaves of cabbage. Slice off tough stem at the bottom outer leaves of each cabbage leaf. (You can chop any remaining cabbage and place in pot of sauce). While cabbage is simmering, combine ground meat, rice, grated onion, ¼ cup tomato paste, garlic powder, salt and pepper in a small mixing bowl. Place, covered, in fridge until ready to fill cabbage. (You can make the filling mixture up to 24 hours before filling cabbage leaves). In a Dutch oven heat evoo over medium heat. Add onions and sauté until softened. Add garlic and saute two minutes. Add remaining tomato paste, crushed tomatoes, apricot preserves, beef broth, salt and beef bones (if using), bring to a boil, lower heat and simmer for twenty minutes. Once sauce is simmering, prepare cabbage rolls: Place ¼ cup of ground meat filling towards the bottom end of 1 cabbage leaf and roll upwards so meat is covered by cabbage. Fold left and right corners toward the center and continue to roll until sealed. Repeat with remaining meat and cabbage leaves. Gently lay cabbage rolls, seam side down, into simmering sauce and simmer for 1 ½ hours in a covered pot. You can also bake the stuffed cabbage in a covered pot or baking dish, for 1 ½ hours in a preheated 350°F oven. Serve hot immediately or store, covered, in the fridge for up to 48 hours or in the freezer for two months. CABBAGE PREP NOTE: You can also prep cabbage leaves for stuffing by freezing the head of cabbage overnight in the freezer. Remove frozen cabbage and place in large bowl, cover with plastic wrap and thaw out in fridge, another few hours. Once cabbage is defrosted, proceed with recipe.

- For the sauce, heat the olive oil in a large saucepan, add the onions, and cook over medium-low heat for 8 minutes, until the onions are translucent. Add the tomatoes, vinegar, brown sugar, raisins, salt, and pepper. Bring to a boil, then lower the heat and simmer uncovered for 30 minutes, stirring occasionally. Set aside.
- Meanwhile, bring a large pot of water to a boil.
- Remove the entire core of the cabbage with a paring knife. Immerse the head of cabbage in the boiling water for a few minutes, peeling off each leaf with tongs as soon as it s flexible. Set the leaves aside. Depending on the size of each leaf, you will need at least 14 leaves.
- For the filling, in a large bowl, combine the ground chuck, eggs, onion, breadcrumbs, rice, thyme, salt, and pepper. Add 1 cup of the sauce to the meat mixture and mix lightly with a fork.
- Preheat the oven to 350 degrees F.
- To assemble, place 1 cup of the sauce in the bottom of a large Dutch oven. Remove the hard triangular rib from the base of each cabbage leaf with a small paring knife. Place 1/3 to 1/2 cup of filling in an oval shape near the rib edge of each leaf and roll up toward the outer edge, tucking the sides in as you roll. Place half the cabbage rolls, seam sides down, over the sauce. Add more sauce and more cabbage rolls alternately until you ve placed all the cabbage rolls in the pot. Pour the remaining sauce over the cabbage rolls. Cover the dish tightly with the lid and bake for 1 hour or until the meat is cooked and the rice is tender. Serve hot.
QUICK STUFFED CABBAGE
I got this recipe from my friend, Debbie Rivera, way back in the 70's. She and I lost touch but her recipes live on!! She was a great good cook and she gave me quite a few recipes. This one is an easy and fast version of stuffed cabbage with all of the flavor and none of the tedium!! I like it like that!!

- 1. Mix the ground beef with cooked rice, salt, pepper, and 2 Tbsp of water to moisten the meat mixture
- 2. make meat rolls with 1/4 C of meat mixture for each one -- shaped like really fat cigars -- I suppose you could make simple meat balls too -- up to you -- but cabbage rolls are usually longish like the fat cigar shape.
- 3. Layer: CABBAGE, MEAT, CABBAGE, MEAT, CABBAGE for stove top in 6qt pot OR ALTERNATELY: CABBAGE, MEAT, CABBAGE, IN RECTANGULAR BAKING DISH
- 4. Another alternative: to save time you can simply layer the cabbage, meat, cabbage without even making rolls -- it all tastes the same!!
- 5. Pour on the tomatoes, the tomato sauce, and the water
- 6. Cooks well in a crock pot for about 3 hours -- just make sure the meat is done. Can also cook on stove top or in oven for 1 hour or until the meat is done.
- 7. TIME SAVING ALTERNATIVE: You can cut down on the cooking/prep time if you eliminate the rice, and use 1 package cole slaw, and 2 lbs of frozen prepared meat balls. Italian style is best. Just throw in the tomato sauce and cook until the cabbage is tender and the meat is heated. I throw the frozen meat balls into the crock pot being sure to not touch the sides of the crock pot. Just make sure they are "insulated" with cabbage. Cook on high for about 3 hours or until done. Can cook all day on low. Enjoy!!
OLD-FASHIONED STUFFED CABBAGE
Steps:
- Gather the ingredients.
- In a large saucepan, combine the ground beef with the onion and 2 cloves of the garlic; cook and stir to break up the meat until the beef is browned and the onion and garlic are tender; drain well and set aside.
- In a large bowl, mix together the beef mixture, the cooked rice, mustard, egg, and salt and pepper until combined.
- Cut out the core end of the cabbage and remove and discard some of the exterior leaves. Then carefully remove 8 whole perfect leaves . Soak the leaves in hot water in a large bowl until they are limp and pliable.
- Chop half of the remaining cabbage and add this to the beef and rice mixture. Roll up about 1/4 cup of the meat mixture in each cabbage leaf. Reserve any remaining meat mixture. At this point, preheat the oven to 350 F.
- Then, in the same large skillet, sauté 2 cloves of garlic in the olive oil until tender, about 2 to 3 minutes.
- Add the tomato puree, diced tomatoes, bay leaves, salt, and pepper. Simmer this sauce for 15 minutes, stirring frequently. Then remove and discard the bay leaves.
- Place the stuffed cabbage rolls in a Dutch oven or large casserole. Top the rolls with any remaining meat mixture. Pour the tomato sauce mixture over all.
- Cover the casserole and bake for 80 to 90 minutes or until the cabbage rolls are tender.
- Serve the stuffed cabbage with the sauce. Enjoy.

- Combine sauce ingredients; set aside. Line a medium bowl with cheesecloth, allowing 6 inches to overhang edges of bowl. Place cabbage in bowl with core facing up. - In a cast iron skillet on high heat add the ground beef.
- Season the beef with kosher salt and black pepper.
- Brown the beef well and crumble it into large crumbles.

- Wash the cabbage and separate the leaves. In a large sausepan boil the leaves until soft, remove the cabbage from the heat and drain.
- Put the mince meat in a large bowl, add two tbs of olive oil in the mix, then brake the crispbakes and add them as well. Finely chop the onions and add them to the mix also. Using your hands mix the ingredients together.
- Pour some olive oil to a frying pan, enough to cover the base of the pan. Once heated add your mince and stir untill your mince becomes a lighter colour. Remove from the heat.
- Once you have taken the mince of the heat add the rice and the dill to the mix, mix the ingredients together using your hands. Take the cabbage leaves and start putting some of your mix in the centre of each leaf and make into a little parcel, repeat this procedure untill all your leaves are filled with the mix.
- Once your parcels are ready, in a large pan stuck them together starting from the sides and building towards the cenre of the pan one on top of the other. Once your pan is covered with your stuffed parcels add water and some olive oil and cover with a large plate which should be placed upside down. Bring to the boil and leave them for 45min, adding a little bit of water when needed.
- Whilst boiling take a large bowl and put in the 2 egg yolks and the juice of one large lemon, beat the mixture with a fork, fill two cups of juice from your pan and add the as well in the mix. Once ready pour slowly and carefully on top of your stuffed parcels.

Shape the beef mixture into a 2-inch log running parallel to the work surface edge. Fold the outer sides of the leaf over the filling and in toward the center. Roll up the leaf, pressing it tightly around the filling. Place the cabbage roll, seam-side down, on the tomato sauce mixture in the baking dish. Repeat with the remaining cabbage leaves and beef mixture.
- Top the cabbage rolls evenly with the remaining tomato sauce mixture. Cover the baking dish with foil. Bake until an instant-read thermometer inserted in the center of a roll registers 160°F, about 1 hour. Garnish with parsley, if desired.

- In the meantime, separate your cabbage leaves one from the other. If you end up having some leftover in the end, you will just use them on top as a blanket for the rolls. You are going to want to cut out the stem at the bottom where it is the toughest in a V shape.
