Thanks to canned fruits and packaged cake mix, this extra-easy recipe offers old-fashioned goodness. -Sue Poe, Hayden, Alabama

2 cans (21 ounces each) strawberry pie filling or fruit filling of your choice
1/2 cup butter, softened
3 ounces cream cheese, softened
2 teaspoons vanilla extract
2 packages (9 ounces each) yellow cake mix

Steps:

  • Pour pie filling into a greased 13x9-in. baking dish. Bake at 350° for 5-7 minutes or until heated through. , Meanwhile, in a small bowl, cream butter and cream cheese until light and fluffy. Beat in vanilla. , Place cake mixes in a large bowl; cut in cream cheese mixture until crumbly. Sprinkle over hot filling. Bake 25-30 minutes longer or until topping is golden brown.

4 cups strawberries, cleaned and sliced
1 cup all-purpose flour
1/2 teaspoon baking powder
1 cup sugar
1 egg, beaten
1/4 cup butter, in cubes

Steps:

  • Pre-heat oven to 375°F.
  • Spread the sliced strawberries evenly in an 8 or 9 inch square baking dish.
  • In a medium sized bowl, mix together the flour, baking powder and sugar.
  • Add the egg, and mix (a fork works best) till crumbly and the dry ingredients are completely incorporated.
  • Spread this over the berries.
  • Dot with the butter cubes.
  • Bake for 45-50 minutes, until the top is golden and the berries are bubbling.
  • Cool slightly before serving.

1 large egg

3 cups fresh strawberries, cut in half lengthwise
1/4 cup all-purpose flour
1/4 cup sugar
1/4 cup butter or 1/4 cup margarine, chilled

Steps:

  • Beat 1/4 cup softened butter at medium speed with an electric mixer; gradually add 3/4 cup sugar, beating well.
  • Add egg and vanilla, beating well.
  • Combine 1 1/4 cup flour, baking powder, and salt; add to butter mixture alternately with milk, beginning and ending with flour mixture.
  • Spoon mixture into a greased 8-inch square baking dish.
  • Arrange strawberries on top, cut side down.

1/4 cup cold unsalted butter, cut into small pieces
1 large egg, lightly beaten
3 tablespoons whole milk
