This is a quick and delicious side-dish to serve with your Asian themed meal. Or, add chicken, pork, shrimp, etc. to make it a meal in itself.

2 garlic cloves, minced
1 tablespoon fresh gingerroot, minced
1/4 cup low sodium soy sauce
3 tablespoons rice vinegar
1/4 cup peanut oil
3 tablespoons sesame oil
1 dash hot pepper sauce
1/2 green bell pepper, julienned
1/2 red bell pepper, julienned
1/2 yellow bell pepper, julienned
4 green onions, sliced diagonally
2 cups snap peas, sliced diagonally
2 tablespoons sesame seeds, lightly toasted
2 (8 ounce) packages fresh udon noodles

Steps:

  • In a jar with a tight fitting lid, combine the garlic, ginger, soy sauce, rice vinegar, peanut oil, sesame oil and hot pepper sauce. Close the lid, and shake vigoroulsy to blend. Set aside to let the flavors blend.
  • Bring a large pot of water to a boil. Add udon noodles, and cook until tender, about 3 minutes. Drain, and place in a serving bowl.
  • In a microwave-safe bowl, combine the peppers with green onions and peas. Heat in the microwave until warm, but still crisp.
  • Add to the noodles in the bowl, and pour dressing over all.
  • Toss to coat, then sprinkle with sesame seeds.
  • Toasting sesame seeds: Toast sesame seeds in a dry skillet over medium heat. Shake pan or stir occasionally until lightly browned and fragrant, about 3 minutes.

Udon noodles get their flavor here from a toasted sesame seed sauce.

Number Of Ingredients 8

1 pound udon noodles
3 tablespoons toasted sesame oil
1/2 cup unhulled sesame seeds
1/4 cup soy sauce
6 tablespoons mirin (Japanese cooking wine)
2 teaspoons rice-wine vinegar
1 teaspoon black sesame seeds (optional)
2 scallions, white and light-green parts only, thinly sliced

Steps:

  • Bring a stockpot of water to a boil. Stir in the noodles, and cook until al dente, about 6 minutes or according to package instructions. Remove from heat, and drain. Transfer noodles to a serving bowl, and toss with 1 tablespoon sesame oil. Set aside.
  • Gently toast unhulled sesame seeds in a small skillet set over low heat until just fragrant, about 2 minutes. Transfer seeds to a bowl to cool.
  • Place toasted sesame seeds, soy sauce, mirin, the remaining 2 tablespoons sesame oil, and the rice-wine vinegar in the jar of a blender; process until smooth and creamy. Pour dressing over reserved noodles, and toss to combine. Sprinkle with black sesame seeds, if using, and scallions. Serve immediately.

28 ounces fresh udon noodles
1 pound chicken tenderloins
2 tablespoons oil for cooking
2 stalks green onions - chopped, green and white parts separated, divided
1 ½ tablespoons grated fresh ginger root
5 cloves garlic, minced
1 (12 ounce) package frozen stir-fry vegetables
4 tablespoons oyster sauce
2 tablespoons sweet soy sauce (kecap manis)
2 tablespoons soy sauce
1 tablespoon sesame oil
3 tablespoons toasted sesame seeds

Steps:

  • Soak the udon noodles in warm water to separate.
  • Meanwhile, remove tendon from the tenderloins with a sharp knife. Place tenderloins in a food processor and pulse. You don't want big pieces, or ground chicken, but finely chopped.
  • Heat oil in a wok over medium heat until shimmering. Add white parts of green onions, ginger, and garlic. Cook for 30 seconds. Add the chicken and cook and stir until no longer pink in the center, 7 to 10 minutes. Add stir-fry vegetables. Cook until heated through, about 3 minutes.
  • Drain the noodles, and add the noodles to the stir-fry mixture.
  • Combine oyster sauce, sweet soy sauce, soy sauce, and sesame oil in a bowl. Pour sauce over stir-fry mixture and gently mix in order to avoid breaking the noodles. Garnish with toasted sesame seeds and the green ends of the green onions.
