EASY RYE SANDWICH ROLLS



Easy Rye Sandwich Rolls image

Delicious rolls for any type sandwich.

1 tablespoon active dry yeast (11 grams)
3/4 cup water (6 ounces) ((110°F))
pinch granulated sugar
3/4 cup kosher dill pickle juice (6 ounces) ((110°F))
1 cup medium or light rye flour (106 grams)
1 cup white whole wheat flour or regular whole wheat flour (113 grams)
2 cups bread flour, divided (240 grams)
1-1/2 teaspoons fine sea salt (9 grams)
1 tablespoon light brown sugar (18 grams)
1/4 cup oil (2 fluid ounces) ((canola, vegetable, safflower))
1 egg (, beaten with a teaspoon of water)
desired seeds

Steps:

  • Add the warm water and yeast to a large bowl with a pinch of sugar and set aside.
  • In a medium bowl, stir together the rye flour, the whole wheat flour, 1/2 cup of the bread flour, the salt, and the sugar.
  • Add those dry ingredients and the warm dill pickle juice to the yeast mixture and beat well for 1 to 2 minutes until the mixture is stringy but smooth.
  • Cover and set aside for 20 minutes.
  • Stir in the oil, then add the remaining 1-1/2 cups of bread flour, 1/2 cup at a time. When the dough is so stiff that you can't stir in anymore flour, start kneading it in by hand, either in the bowl or on a countertop.
  • Knead for 3 to 5 minutes until the dough is smooth; don't add any more flour as that will make the rolls dry.
  • Lightly oil a clean bowl, add the dough and turn it over to oil all the surfaces then cover the container, and let the dough rise until doubled, about 30 minutes.
  • Line a large baking sheet with parchment paper and preheat the oven to 375°F.
  • Turn the dough out onto a lightly oiled surface and divide into 16 equal pieces; if you have a scale, they'll weigh about 2 ounces each.
  • Round into smooth balls and place on the prepared sheet pan.
  • Cover with a tea towel and let the rolls rise until they've doubled in size, about 45 minutes, and when you poke a finger into the side of a roll the dough doesn't immediately spring back.
  • Gently brush the risen rolls with the egg wash then liberally sprinkle with your desired topping.
  • Bake for 18 to 20 minutes, until an instant-read thermometer inserted into the middle of the rolls reads 190°F to 200° F.
  • Remove the rolls from the oven, and set the pan on a cooling rack for 5 minutes, then set the rolls directly on the rack to cool.
  • To freeze, double wrap in plastic.

QUINCY'S YEAST ROLLS

I've finally tried this recipe and tweaked it enough to get it reasonably close. These are the closest I've seen to my favorite rolls in places like Quincy's, Grandy's, etc. It's a nice soft squishy yeast roll, perfect with any meal. To clarify the directions since one reviewer mentioned that they had a problem with their first batch: Make sure that your machine's dough cycle includes the rising time! I thought everyone's did, but apparently not. (My own personal machine mixes up the ingredients and then there's a total rise time of a little over an hour (closer to 1.5 hours). So, if you think your ABM just mixes things up but doesn't allow for rising time, add a 2 hour (approx) rise time between steps 1 and 2. If your machine's dough cycle DOES have a built in rising time, then you're all set, and you can follow the instructions exactly, no need for extra rising time.

  • Place all ingredients in above order in bread machine.
  • After dough cycle completes, remove and shape as rolls, placing them in a pan lined with parchment paper.
  • Let rise for 30 minutes.
  • Brush tops with butter prior to baking (I use about 2 tbl spoon melted margarine).
  • Bake 20 to 25 minutes at 350 degrees until golden brown, on the highest rack possible in your oven.
  • Brush the tops with honey butter to give it a slightly sweet taste, as soon as you get them out of the oven. Now eat, and enjoy!

1 tablespoon sugar
3/4 cup warm water (110° to 115°)
2-1/2 cups biscuit/baking mix

Steps:

  • Dissolve yeast and sugar in warm water. Stir in biscuit mix and turn out onto a lightly floured surface. Knead until smooth and elastic, about 5 minutes. , Divide and shape dough into 24 small balls. Place on greased baking sheet. Cover and let rise in a warm place until doubled, about 30 minutes. , Bake at 400° until golden brown, 10-15 minutes.

3 cups all-purpose flour
2 tablespoons sugar
1 package (1/4 ounce) active dry yeast
1 teaspoon salt
1 cup water
2 tablespoons butter
1 large egg, room temperature

Steps:

  • In a large bowl, combine 2 cups flour, sugar, yeast and salt. In a saucepan, heat water and butter to 120°-130°. Add to dry ingredients; beat until blended. Add egg; beat on low speed for 30 seconds, then on high for 3 minutes. Stir in enough of the remaining flour to form a stiff dough. Do not knead. Cover and let rise in a warm place until doubled, about 30 minutes., Stir dough down. Fill 12 greased muffin cups half full. Cover and let rise until doubled, about 15 minutes., Bake at 350° until golden brown, 15-20 minutes. Cool for 1 minute before removing from pan to a wire rack. Brush tops with melted butter. Freeze option: Freeze cooled rolls in airtight containers. To use, microwave each roll on high until warmed, 30-45 seconds.

No kneading is needed for this fragrant, dense bread dough. The ingredients are quickly mixed together, similar to quick-bread batters, and then baked, making these loaves speedy work.

4 cups rye flour
1 cup all-purpose flour
1 tablespoon coarse salt
2 teaspoons baking powder
1/2 teaspoon baking soda
3/4 cup untoasted sunflower seeds
3 tablespoons sesame seeds, toasted
2 tablespoons flaxseed
1/2 teaspoon cumin seeds, lightly crushed
4 ounces (1 stick) unsalted butter, chilled and cut into small pieces, plus more for pans
2 cups plain whole-milk yogurt
1/2 cup whole milk
1/4 cup honey
2 large eggs
2 tablespoons mixed seeds (sunflower, sesame, flax, and cumin), for sprinkling

Steps:

  • Preheat oven to 350 degrees. Place a baking sheet on center rack. Butter four 6-by-3-by-2-inch loaf pans, line with parchment, and butter parchment.
  • Mix flours, salt, baking powder, baking soda, and seeds. Cut butter into flour mixture with a pastry cutter or rub in with your fingers, until the mixture resembles coarse crumbs.
  • Whisk together yogurt, milk, honey, and eggs. Make a well in center of flour mixture, and pour in yogurt mixture. Stir well to combine (batter will be sticky). Spoon batter into pans, smoothing the tops. Scatter mixed seeds on top of batter.
  • Transfer pans to baking sheet, and bake until loaves are slightly cracked and golden brown, about 1 hour. (A skewer inserted into centers should come out clean.) Let cool in pans for 15 minutes. Turn out onto wire racks, and let stand for 2 hours.

6 tablespoons butter, melted
2 teaspoons active dry yeast (or 1 envelope active dry yeast)
1 cup warm water
1 tablespoon sugar
1 egg, beaten
2 teaspoons salt
1 1/4 cups rye flour
1 1/2 cups whole wheat flour
3/4 cup white flour
2 tablespoons caraway seeds
kosher salt, for sprinkling

Steps:

  • Line a cookie sheet with parchment paper and set aside.
  • Butter a large bowl and set aside.
  • In a large bowl combine yeast, water, sugar, egg and 3 tablespoons butter and mix on medium speed using a dough hook for one minute.
  • Reduce mixer to low and add salt, flours and caraway seeds. Increase speed to med high and beat until dough comes together (10 minutes).
  • Turn dough onto a lightly floured board and knead until smooth.
  • Transfer dough to buttered bowl and turn to grease all sides and then cover with plastic wrap and/or a towel. Let rise in a warm place until double (1 hour).
  • Turn dough onto floured board and cut into 12 equal pieces and then roll pieces into balls.
  • Place balls on prepared cookie sheet and let rise for one hour.
  • Preheat oven to 350°F.
  • Cut an "x" in the top of each roll.
  • Bake for 30-40 minutes or until golden.
  • Transfer rolls to cooling rack and brush each roll with 3 tablespoons melted butter and then sprinkle with salt.
