QUICK AND EASY, THICK AND CREAMY RICE PUDDING
This stuff tastes just like Tapioca pudding! I wanted to make rice pudding, but didn't want to make a huge batch. Also, I wanted to start with already cooked rice and have no eggs or evaporated milk on hand. This is a VERY simple adaptation, low-fat, and turns out beautiful and creamy. This recipe can be quite easily doubled or even tripled if desired, just expect longer cooking time.

Steps:
- Combine rice, milk, sugar, vanilla, and salt in medium sauce pan.
- Put on medium-high heat and bring to light/moderate boil. Let boil for about 20 minutes until liquid has cooked down a bit and starts to thicken.(Stir often and be sure to watch so it doesn't boil over!) A little "skin" may form on top. This is what you want- it adds to the creaminess:).
- In small bowl, combine cornstarch and water. Pour into rice mixture and stir. It should thicken up fairly quickly. If it doesn't thicken immediately, don't worry. Just keep at medium heat and stir frequently until it is of desired consistency.
- Pour into bowls and serve immediately. You may top with cool whip if desired.

My wife - an undisputed authority on rice pudding - told me that this is the best rice pudding she's ever had, despite the fact that she doesn't like raisins. I do, however, so I'm keeping them in.

- Bring two cups of water to a boil. Stir in rice and reduce heat to Low. Simmer for 20 minutes, covered, stirring occasionally until the water is absorbed.
- Stir half-and-half, brown sugar, cinnamon, and salt into the cooked rice. Cook on medium heat, stirring frequently to prevent sticking and clumping. Continue for about 15 minutes, until thick and creamy.
- Stir in egg, skim milk, and raisins and cook for another 5 minutes.
- Remove from heat and stir in butter and vanilla extract.

- Using a double boiler, put water in the bottom and heat and boil. In the top of the boiler, put 3 cups of water. When both start boiling, put the top pan on the bottom pan, and add the rice to the boiling water in the top pan.
- When boiling again, put cover on and low boil for 40 minutes. You may have to check half way through cooking and add more boiling water to the bottom pan. After the 40 minutes, add more boiling water to the bottom. Add the margerine, and the condensed milk to the rice. Stir until well blended. Cook 20 minutes longer uncovered till thick. Take off heat and add vanilla and raisens if desired.

- Combine rice, water and salt in 3-quart saucepan.
- Bring to a vigorous boil. Reduce heat, cover and simmer until all water is absorbed, about 3 minutes.
- Combine sugar and cornstarch.
- Add milk, sugar mixture and raisins to rice.
- Heat to boiling; boil 1 minute, stirring constantly.
- Remove from heat. Stir in butter and vanilla.
- Slowly stir about 1 cup of the hot rice mixture into egg yolks in bowl.
- Stir into remaining mixture in saucepan.
- Cook over medium heat, stirring frequently, just until mixture starts to bubble.
- Serve warm or chilled. Garnish with cinnamon and nutmeg.
