1/4 lb thinnly sliced prosciutto ham
6 ounces arugula leaves
1/4 lb gruyere cheese

Steps:

  • Use a peeler, make Gruyere cheese curls.
  • take a slice of Prosciutto, put some Arugula salad greens on top, and add some Gruyere, roll it up.
  • Repeat with all slices of Prosciutto.
  • I split wide slices of Prosciutto length wise to make narrow 1 inch strips, to make smaller neater looking rolls easy for finger food or use with toothpicks.

You need:
1/4 cup pine nuts
About 20 thin slices of good-quality prosciutto
1 small bunch arugula
1/4 pound gorgonzola
1/4 cup currants

Steps:

  • Spread the pine nuts on a baking sheet and bake at 350°F until they turn golden brown. (I do mine in the toaster oven.) You'll want to keep a close eye on these because they go from golden brown to burned very quickly, as I've learned on three or four occasions. Transfer them to a small bowl and let them cool.
  • Cut each slice of prosciutto in half, crosswise. Don't worry if they're not perfect. Top each half-slice with a small piece of arugula, a dab of gorgonzola, a few pine nuts, and few currants. Then roll them into little mini horns.
  • Arrange on a platter and serve.

20 paper-thin slices prosciutto
4 ounces fresh baby arugula (about 4 cups)
12 ounces Gorgonzola cheese, crumbled
3/4 cup dried currants

Steps:

  • Working with 1 slice of prosciutto at a time, cut prosciutto crosswise into 3 rectangles. Space prosciutto pieces 2 inches apart on work surface. Arrange 3 arugula leaves side by side atop each prosciutto piece, allowing tops to extend 1 inch over 1 long side of prosciutto. Top each with about 1 teaspoon cheese. Press generous 1/2 teaspoon currants into cheese atop each prosciutto piece. Starting at 1 short end of each prosciutto piece, roll up tightly, jelly-roll style. Transfer to platter. (Can be made 4 hours ahead. Cover rolls tightly and refrigerate.)

A crowd pleasing main dish or impressive side for large groups or intimate dining. Creamy habanero cheese sauce with chopped apples to balance the spice. Finished under the broiler with crushed fresh ground pepper kettle chips on top. This is easily my most requested recipe.

1/2 cup butter
1/2 cup flour
1 1/2 cups milk
1/2 cup shredded habanero cheese (pepperjack can substitute)
1 cup shredded cheddar cheese or 1 cup colby-monterey jack cheese
1 -2 cup crushed kettle chips
pasta, of your choosing I recommend large shells
2 apples, diced
2 slices bacon (optional)
cajun seasoning

Steps:

  • Melt butter in medium sized saucepan over low-medium heat.
  • Once butter is melted, combine flour and stir until well incorporated. About 1-2 minutes.
  • Add milk and wait 3-4 minutes for the sauce to warm through.
  • Add 1/2 of the cheese and stir for 2-3 minutes.
  • Add remainder of cheese and stir 2-3 additional minutes.
  • At this point, the cheese sauce should be melted and creamy. If not, keep it over low-medium heat and stir occasionally. Add any additional milk as needed to adjust for desired consistency.
  • Cook pasta according to package, drain and place in 10 inch cast iron skillet.
  • If using peppered bacon, it should be ready at this point. Chop it and mix it with cheese sauce.
  • Mix chopped apples in with pasta and pour cheese sauce over, gradually mixing as you pour.
  • Crumble Kettle brand Fresh Ground Pepper Kettle Chips over the dish and place under broiler on high until they begin to brown.
  • Serve and enjoy!
