- Preheat the oven to 350 degrees.
- In a bowl combine the melted butter, almond flour, sweetner, and vanilla extract until a soft dough forms.
- Spray a pizza pan or baking sheet lightly with cooking spray or parchment paper to make it easier to slice and remove.
- Carefully press the crust into an even layer. Tip: I place a silicone baking sheet on top of the crust and press or roll the dough into an even layer and then carefully, slowly peel the silicone off the dough. My crust is between 10-11 inches in diameter.
- Bake the crust 6-7 minutes until lightly browned and completely set. BE CAREFUL NOT TO OVERCOOK. Cooking time may vary slightly depending on how thick you press your crust.
- Allow crust to cool.
- In a food processor, blender or with a hand mixer combine the cream cheese, sweetner, cream, almond milk and vanilla and blend or mix until smooth.
- Spread the cream cheese frosting on the crust and top with fruit

- For the crust: Preheat the oven to 350 degrees F. Spray a 10- to 12-inch tart pan or pizza pan with nonstick cooking spray.
- In a medium bowl, whisk together the flour, baking powder and salt. In a large mixing bowl, cream together the butter and sugars until smooth using a handheld mixer. Add in the egg and vanilla and mix until incorporated. Slowly incorporate the flour mixture into the creamed butter, and mix until blended. Remove the dough from the bowl and press it into the prepared pan. (You may need to dust your hands with some flour to prevent the dough from sticking to them; it is a wet dough when it comes together.) Bake until the edges just start to brown, 10 to 12 minutes. Remove from the oven and let cool.
- For the spread: In a large mixing bowl, beat the cream cheese, confectioners' sugar, vanilla, lemon zest and salt until smooth. Spread evenly on the cooled crust.
- For the glaze: Add the marmalade, 2 tablespoons water and the herbes de Provence to a small skillet and cook over medium heat until loosened and warm.
- To assemble: Arrange the fresh fruit in the desired pattern on top of the pizza. Brush the fruit with the glaze. Slice and serve.

Steps:
- Preheat oven to 350 F.
- Line a pizza pan with a precut circle of parchment paper and set aside.
- In a large bowl cream together sugar, butter and cream cheese just until combined.
- Mix in eggs, vanilla extract and almond extract if using.
- Mix in flour, baking soda, baking powder, and salt until a dough forms.
- Knead the dough a few times if needed to incorporate the dry ingredients better.
- Press dough evenly into prepared pan.
- Chill in the freezer for 1 hour or in the fridge for 3 hours or overnight. (Don't skip this step or the cookie will spread as it bakes. The dough MUST be super chilled. I always do the fridge overnight)
- Bake for 12-15 minutes or until edges are lightly golden. (Do not over bake. It's perfect if the cookie is slightly undercooked because this makes for a chewy cookie once it is cooled)
- Let cool completely.
- To make the cheesecake spread, add heavy whipping cream, 1/2 cup powdered sugar, and vanilla into a bowl.
- Mix until fluffy cream forms with stiff peaks. Set aside.
- In a large bowl mix the cream cheese and 1/4 cup powdered sugar.
- Very gently mix in the whipped cream just until it is well combined with the cream cheese.
- Spread cheesecake mixture evenly over cooled cookie crust.
- Refrigerate until firm (about 3 hours. I usually stick it in the freezer to speed up this time)
- Decorate with desired fruit.
- Store in the refrigerator.
