SAUTéED YELLOW SQUASH AND ZUCCHINI

1 1/2 tablespoons olive oil
1 tablespoon unsalted butter
1 yellow onion, thinly sliced into half moons
2 cloves garlic, minced
2 medium zucchini, sliced into 1/4-inch-thick rounds
2 medium yellow squash, sliced into 1/4-inch-thick rounds
1 teaspoon Italian seasoning
Kosher salt
Freshly ground black pepper

Steps:

  • Heat the oil and butter in a large skillet over medium heat. Add the onions and cook, stirring occasionally, until just softened, about 5 minutes. Add the garlic and cook, stirring occasionally, for 1 minute. Add the zucchini, squash, Italian seasoning and a generous pinch of salt. Cook, stirring occasionally, until the zucchini and squash are tender and beginning to brown in some spots, about 10 minutes. Season with salt and pepper. Serve warm.

2 cups distilled white vinegar
3 tablespoons kosher salt
2 tablespoons yellow mustard seeds
2 teaspoons red chile flakes
6 sprigs fresh dill
4 cloves garlic, thinly sliced
3 medium zucchini (about 2 pounds), sliced into 1/2-inch-thick rounds
1 small red onion, halved and sliced into thin half-moons

Steps:

  • In a medium saucepan over medium-high heat, bring the vinegar, salt, mustard seeds, chile flakes and 3 cups water to a simmer. Cook until the salt has dissolved, about 5 minutes.
  • Divide the dill, garlic, zucchini and onions evenly between 2 quart-size mason jars.
  • Pour the hot liquid into the mason jars to cover the ingredients and let cool to room temperature, about 1 hour. Serve immediately or cover with lids and store in the refrigerator for up to a week.

1 cup apple cider vinegar
1/2 cup water
1/4 cup sugar
2 teaspoons pickling spice

Steps:

  • Toss the zucchini, onion, and kosher salt together in a bowl, place the mixture in a colander or strainer and let sit for two hours to drain off any extra liquid.
  • Place the zucchini and onions into a heat proof bowl or large measuring cup.
  • Bring the cider vinegar, water, sugar, and pickling spice to a boil and pour it over the zucchini mixture. Let cool and then refrigerate for up to a week.

¼ cup salt
2 ½ pounds young yellow squash and zucchini, sliced into rounds
1 green bell pepper, seeded and sliced into strips
2 small onions, thinly sliced
2 ¼ cups white sugar
2 cups distilled white vinegar
2 teaspoons mustard seed
1 teaspoon ground turmeric
1 teaspoon celery seed

Steps:

  • In a large non-aluminum pot, combine the squash, bell pepper, and onions. Cover with salt, and let stand for 2 hours to release the liquids. Stir occasionally.
  • Just before the 2 hours are up, combine the sugar, vinegar, mustard seed, turmeric and celery seed in a saucepan. Bring to a boil. Drain the salty liquid from the vegetables. Pour the spice brine over the vegetables, and let stand for 2 more hours.
  • Bring to a boil once again, and simmer for about 5 minutes. Ladle into 1 pint sterile jars, filling with the liquid to within 1/4 inch of the top. Wipe rims with a clean towel, and run a thin spatula around the inside of the jar to remove air bubbles. Seal with lids and rings. Process for 10 minutes in a simmering water bath to seal completely.

These are similar to refrigerator pickles except they are zucchini! It's brilliant and delicious! The zucchini stay crisp to the bite even after marinating. Pair them with potatoes and steak for an amazing dinner. My husband came up with this idea when trying to figure out what else we could do with the massive amounts of zucchini in our house this time of year. We think you'll love these pickled zucchini! 2 - 2 1/4 lb zucchini (4 medium (green zucchini, yellow squash, or light green Mexican zucchini will work))
3 cloves of garlic (halved)
2-3 bay leaves
6-8 pepper corns
1/4 cup chopped fresh parsley
1/4 cup chopped fresh dill
3 cups of boiling hot water
2 Tbsp olive oil
1/2 cup white vinegar (5% acidity)
1/3 cup granulated sugar
1 Tbsp salt (we used sea salt, non-iodized)
1/2 gallon jar with lid or heat-proof bowl with tightly fitting lid

Steps:

  • Steam sterilize your clean jar: fill it with 1 cup boiling water, cover with lid and swirl boiling hot water inside the jar (use oven mitts to hold the jar and swish carefully so you don't burn your hands or drop the jar (do it over the sink; just in case). Drain the water completely.
  • In the bottom of your clean jar, add 3 halved cloves of garlic, 2-3 bay leaves, and 6-8 peppercorns.
  • Slice zucchini into 1/3" thick rings, discard the ends. Layer zucchini slices tightly, sprinkling dill and parsley between each layer. Pack the zucchini down with a clean cooking utensil if needed. Top with any remaining dill and parsley.
  • Combine all of your marinade ingredients and stir until sugar and salt are dissolved. Carefully pour the hot syrup over the layered zucchini.
  • Cover tightly with lid and let the jar cool to room temperature on the counter then refrigerate overnight. From the time you pour in the water, it should marinate a minimum of 12 hours. Stays good in the fridge for 5-7 days.

The other day I made a recipe I have done with cucumbers forever with a zucchini that was sitting on the counter. It was great! Then I tried onion and bell pepper, also great. After a little research I found that this can also be frozen well. I have written it with numerous spice variations so it can be a go to recipe. Choose what you like or make up your own.

2 zucchini, sliced very thin (or other abundant veggie)
1 cup sugar (can reduce to as little as 1/4 cup)
salt
1/2 cup white vinegar (more or less, cover the cucumbers)
1/4 cup dill weed, chopped, fresh (or 1 tbs dry)
2 teaspoons garlic, chopped
1 teaspoon dry mustard
1 teaspoon turmeric
1 teaspoon celery seed
1 teaspoon cinnamon
1 -2 teaspoon serrano chili, chopped (jalapeno or other ok)
1 teaspoon ginger (triple if fresh chopped)
1 teaspoon red pepper flakes

Steps:

  • Mix sugar, salt, vinegar and chosen spice.
  • Add zucchini (or other veggies). Be sure veggies are covered, if not adjust.
  • Let the flavors develop for at least 3 hours in the fridge.
  • This keeps very well in the fridge.
  • If you are doing a big batch, consider freezing after the 3 hours.
  • If you do a bunch of small zip locks or container you will be able to take just enough out at one time.
  • If in zip locks, you can lay them out to freeze and then put a bunch in a larger zip lock for easy handling in the freezer.
  • Remember to mark them, especially if you do a bunch of different spice mixes.
  • If you make cucumbers, test freeze them. I am not sure they would freeze well.

I've frozen the whole mix in plastic storage bags, too, with great results. I love these with almost anything...best of all in the middle of winter!!! Kids also eat this up--at one of my daughter's birthday parties, it was the first snack to go. My dad gave me the recipe, so I have no idea where it's from...

3 cups zucchini, sliced about 1/4 inch thick (or thinner, I also use crookneck and pattypans in the mix)
1/2 cup onion, chopped (I prefer red onions.)
1 large red bell pepper (or orange, yellow, etc.)
1 tablespoon salt
1 cup sugar
3/4 cup white vinegar
3/4 teaspoon mustard seeds
3/4 teaspoon celery seed
1/4 teaspoon ground mustard

Steps:

  • Mix squash, onion, and sweet pepper in a big bowl.
  • Mix with salt. Cover and refrigerate for 1 hour. Drain.
  • Combine sugar, vinegar, mustard seed, celery seed, and ground mustard. Boil.
  • Add squash mixture. Return to boiling; remove from heat.
  • Spoon mixture into 2 clean pint jars. I just use tupperware.
  • Cool 30 minutes.
  • Cover and refrigerate at least 24 hours before serving.
  • Store in refrigerator up to 1 month or freeze forever :).
