BIG POT OF BEANS

Big Pot of Beans image

Chances are good you have some dried beans on hand, and that is a great thing. Especially since one basic recipe works for so many kinds, from red beans to white cannellini to black turtle beans. Choose whichever you like, but bear in mind: Sometimes, the best bean is the one already in your pantry.

Provided by Melissa Clark

Categories     beans

Time 1h

Yield 6 to 8 servings

Number Of Ingredients 7

1 pound any dried beans
Salt
Olive oil, as needed
Aromatics, such as peeled garlic cloves, a halved onion or shallots, a celery stalk or a carrot
Dried or fresh herbs, such as thyme, sage, oregano or rosemary sprigs, or a bay leaf or two
A hunk of cured sausage, bacon, ham, smoked duck or pork or a Parmesan rind (optional)
Chopped fresh herbs or celery leaves, red-pepper flakes, sliced scallion or red onion, flaky sea salt, for serving (optional)

Steps:

  • Rinse the beans, then soak them in salted water (it should taste like the sea) for anywhere from 4 hours to 12 hours. If you don't have time, you can skip this step.
  • Drain beans and put them in a pot or electric pressure cooker. If cooking in a regular pot, add enough water to cover the beans by 2 to 3 inches. If using a pressure cooker, use less water, more like 1 1/2 to 2 inches. Add a drizzle of oil and whatever aromatics and herbs you like. Add enough salt to the cooking water to make it taste like the sea.
  • If using a regular pot, simmer the beans for anywhere to 30 minutes to 2 to 3 hours, depending on what variety you used, how old they were and whether or not you soaked them. Check on them periodically, adding more water if the level gets too low (as in, lower than the beans). For the pressure cooker, the timing is anywhere from 5 minutes at high pressure to 50 minutes. Let the pressure release naturally.
  • Garnish with fresh herbs or celery leaves, sliced onion, if you like, a drizzle of oil, and a sprinkle of red-pepper flakes and sea salt.

QUICK BBQ BEANS

Quick BBQ Beans image

This is very quick and simple to make. If we are having company, I can double the recipe without adding a lot of time making this recipe.

Provided by Judy-Jude

Categories     Beans

Time 25m

Yield 2-3 serving(s)

Number Of Ingredients 8

1 (16 ounce) can baked beans, undrained (I use B&M)
1/4 cup barbecue sauce (I use Open Pit)
1 tablespoon butter
1/4 cup onion, chopped
2 slices bacon, cut into match stick lengths
1 clove garlic, minced
salt and pepper
1 tablespoon horseradish, reserve for sauce

Steps:

  • In a saute pan, heat butter, add bacon, onion and garlic.
  • Saute until onion and garlic is soft, not brown.
  • Add barbeque sauce and simmer on low for 10 minutes.
  • With slotted spoon, remove the bean mixture to serving bowl.
  • By using the slotted spoon, it will allow enough of the sauce to remain with the beans and leave plenty in the saute pan for the sauce.
  • With remaining sauce in saute pan, add 1 TB.
  • horseradish and simmer until hot.
  • Serve on the side to drizzle over steak and we also enjoy this with ham steak.
  • We serve this with ham or steak, hot rolls and cole slaw.

EASY, QUICK AND TASTY BASIC BEANS (CROCKPOT)

Easy, Quick and Tasty Basic Beans (Crockpot) image

This is the easiest, fastest, tastiest way to prepare beans. I grew up in a Mexican family and needless to say, beans are a staple of our diet. My stepmom has been making us beans like this for years. This can be done with pinto or black beans & is the perfect thing to have on hand for quick, easy and inexpensive weeknight meals. These beans are healthy and loaded with tons of protein and fiber. You can easily refry these by mashing these in a pan with a little heated oil. I usually prepare a crockpot of beans on Monday and then have them all week in burritos, on tostadas, in bean bowls with chicken or beef....there are so many things that can be done with them. I know that the amount of salt sounds like a lot but if you use less, the beans wont have any flavor...I learned this through experience!

Provided by NutritionGirly

Categories     Black Beans

Time 8h5m

Yield 12 cups, 24 serving(s)

Number Of Ingredients 4

2 lbs pinto beans (or black beans)
3 tablespoons salt
3 garlic cloves, whole but smashed
1/2 onion

Steps:

  • Rinse the beans in a colander.
  • Pour beans into the crock pot and cover with water. Allow the beans to soak a few hours or overnight. Note: If you are short on time the beans do not have to be soaked but I think that it helps with the cooking.
  • Add salt, garlic and onion.
  • Add any water necessary to fill the crock pot.
  • Cover and cook on low 8 hours or on high 4-5 hours.
  • Eat and enjoy.
  • Will make approx 12 cups of beans (24 1/2 cup servings).
