1 lb. Italian sausage (ground )
1/2 medium onion (diced)
3 cloves garlic (pressed)
28 oz tomatoes (crushed with basil)
14 oz tomatoes with italian herbs (diced )
2 tbsp tomato paste
2 tbsp water
1 tbsp Dried Italian Herbs
1 tbsp sugar
Salt and pepper (to taste)

Steps:

  • Brown the Italian sausage, onion and garlic in a large pot or dutch oven over medium heat, breaking up the meat with a wooden spoon as it cooks.
  • Stir in the crushed tomatoes, diced tomatoes, tomato paste, water, italian herbs and sugar. Bring the mixture to a light boil and reduce heat to a simmer.
  • The longer you let the mixture simmer the more flavorful it will become. Simmer at least 10 minutes. Serve over freshly cooked pasta or in lasagna. Enjoy!

1 onion, chopped
1 ¼ pounds ground beef
2 tablespoons Italian seasoning

1 splash red wine

Steps:

  • Heat olive oil in a large skillet over medium-high heat; saute onion in hot oil until softened, about 5 minutes. Season onion with Italian seasoning; continue to saute until the herbs are fragrant, about 3 minutes more.
  • Break beef into small pieces and add to the skillet; cook and stir until browned and crumbly, 5 to 7 minutes.

2 tablespoons oil (I'm using olive oil)
2 pounds ground meat of your choice, such as beef, pork, turkey, chicken, lamb (I'm using beef)
1 onion, diced (I'm using yellow onion)
2 cloves garlic, minced
1/4 cup tomato paste
3/4 cup liquid of your choice, such as beef stock, chicken stock, water or wine (I'm using red wine)
One 28-ounce can tomato product (I'm using crushed tomatoes)
2 tablespoons oregano (if you have it)
Salt and pepper
1 pound dry pasta (I'm using rigatoni)
3 tablespoons grated hard cheese (I'm using Parmesan)

Steps:

  • Heat a large saucepan over medium heat and add the oil. When hot, add the meat and cook, without stirring, until browned, 3 to 5 minutes. Break it up with a wooden spoon, then add the onion and garlic and cook, stirring, until starting to soften, about 2 minutes. Add the tomato paste and cook for 2 to 3 minutes. Add the wine and bring to a simmer. Add the crushed tomatoes and oregano and season with salt and pepper. Simmer until thickened and the flavors come together, about 1 hour.
  • About 20 minutes before the sauce is done, bring a large pot of water to a boil and salt liberally. Drop in the pasta, give it a stir and cook until al dente according to the package instructions. Drain the pasta and add it to the sauce. Remove from the heat, toss in the cheese and serve.

Steps:

  • Bring a large pot of salted water to a boil to cook the pasta.
  • Heat the oil in a large skillet or a dutch oven and add the ground beef. Season with salt and pepper. Cook on high heat for 3-5 minutes until the meat is browned. Set the meat aside.
  • Coarsely chop the onion, carrots and celery. Place them in a food processor and pulse several times until the vegetables are uniformly chopped into very small pieces. Press the garlic through a garlic press. (Or you can finely mince the onion and celery and grate the carrots on the small holes of a box grater.)
  • Add the vegetables to the same skillet you used to cook the ground beef, season with salt and pepper, and cook for 8-10 minutes, until the vegetables are softened and starting to turn golden. (Add a little water to the skillet if the vegetables start to stick before cooking through all the way.)
  • Add the crushed tomatoes and tomato paste, if using. Season once again with salt and pepper and dry herbs. Add the browned meat. Bring to a boil, reduce to a simmer, and cook, covered, for about 10-15 minutes. Add the cream, if using, and the fresh herbs.
  • Meanwhile,cook the pasta according to your liking. Drain the pasta, reserving about a cup of pasta water.
  • Mix the sauce with the pasta and add some Parmesan cheese. Add some of the reserved pasta water, if you need to loosen it up a bit. You may want to use more or less pasta, depending on how much sauce you like with your pasta.
  • Garnish the pasta with more of the Parmesan cheese.

2 pounds sausage
3 tablespoons olive oil
2 large yellow onions, diced
2 green bell peppers, seeded and diced
6 cloves garlic, minced
1 cup white wine or stock (your choice)
Two 28-ounce cans crushed tomatoes
One 24-ounce jar good store-bought marinara sauce (you can use another jar if you like the sauce to be more saucy than meaty)
One 15-ounce can crushed tomatoes
One 6-ounce can tomato paste
2 tablespoons sugar
2 teaspoons kosher salt
1 teaspoon ground oregano
1 teaspoon ground thyme
1/4 teaspoon crushed red pepper, optional
4 bay leaves
1/4 cup finely minced fresh parsley or 3 tablespoons parsley flakes, plus more for serving
1 whole rind from 1 wedge Parmesan, optional
1/2 cup grated Parmesan, optional, plus more for serving
2 pounds spaghetti, cooked al dente and tossed with olive oil, for serving

Steps:

  • In a large pot over medium-high heat, brown the ground beef and sausage until totally browned. Remove the meat from the pot with a slotted spoon and put it into a bowl. Set aside.
  • Discard any grease in the pot, but do not clean the pot. Drizzle in the olive oil. When it is heated, throw in the onions and bell peppers. Stir it around for 1 1/2 minutes, and then add the garlic. Stir and cook for an additional minute.
  • Pour in the wine and allow it to bubble up and reduce for about 1 1/2 minutes. Add the crushed tomatoes, marinara sauce and tomato paste. 1 lb medium pasta shell
1 cup part-skim mozzarella cheese, shredded

Steps:

  • Coat a large nonstick skillet with nonstick cooking spray; heat over medium-high heat and add crumbled ground beef, peppers, onion and garlic.
  • Cook for 8 minutes, stirring occasionally.
  • Stir in tomatoes, sugar, salt and black pepper.
  • Cover and simmer on medium-low for 15 minutes, stirring occasionally.
  • While sauce is simmering, cook pasta following package directions.
  • Drain.
  • Spoon sauce over pasta.
  • Top with shredded cheese and serve.

2 teaspoons olive oil
1 medium yellow onion (diced (about 1 heaping cup))
4 cloves garlic (minced)
2 pounds ground beef chuck (sirloin or round (your choice))
2 teaspoons italian seasoning
1/4 teaspoon basil
2 (15 ounce) can tomato sauce
1 (8 ounce) can tomato sauce
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1/2 teaspoon sugar

Steps:

  • In a deep sided 12-inch skillet, heat 2 teaspoons olive oil over medium-low heat.
  • Add in the onion and a pinch of kosher salt. Cook until soft and translucent, about 8 minutes.
  • Then stir in the garlic and cook 1 to 2 minutes before adding in the ground beef.
  • Increase the heat to medium and use a wooden spoon to break up the beef and cook until browned. Use a spoon to remove the fat from the pan and discard.
  • Season the ground beef mixture with Italian seasoning and basil. Pour in the sauce and stir in the salt, pepper and sugar.
  • Simmer for 20 minutes on low heat before serving.

  • Cook the pasta until al dente. Drain well and add to a large serving bowl with the sauce. Serve with cheese sprinkled over the top.
