- Preheat oven to 350°F (180°C).
- In a measuring cup, beat the eggs until smooth. Set aside.
- In a greased muffin tin, place your desired combination of fillings into each muffin cup.
- Season each cup with salt and pepper.
- Pour the beaten eggs into each muffin cup until the liquid almost reaches the top.
- Bake for 20 minutes, until set.

- Preheat the oven to 350 degrees F (175 degrees C). Grease a 12-cup muffin tin.
- Place green onions and bell peppers into a large mixing bowl. Add eggs, bacon, milk, garlic powder, onion powder, salt, and pepper. Sprinkle Cheddar cheese into the bowl and whisk ingredients together until incorporated.
- Pour mixture equally into the prepared muffin cups.
- Bake in the preheated oven until a toothpick inserted into the center of a muffin comes out clean, about 30 minutes. Let cool slightly before serving.

I made this up one morning with a little help from Zaar chef Latchy. It's a cute and filling breakfast that can be easily adapted to any number of ingredients or tastes.

Steps:
- Grease two ramekins or other small oven-proof dishes with a little butter.
- Cover the bottom of each with a layer of potato, followed by a layer of mushroom, some gorgonzola crumbled over the mushrooms, and half the spring onions.
- Beat one of the eggs with a tablespoon of the cream, then pour over one of the ramekins.
- Repeat with the other egg, cream and ramekin.
- Grind some salt and pepper over the top, if desired.
- Bake under a hot grill, on one of the upper shelves of your oven, until the egg is golden on top and starting to bubble, about five minutes.
- Serve with toast.

- Combine flour and salt; cut in butter until crumbly. Gradually add 3-5 tablespoons ice water, tossing with a fork until dough holds together when pressed. Wrap and refrigerate 1 hour., Preheat oven to 450°. On a lightly floured surface, roll dough to an 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim crust to 1/2 in. beyond rim of plate; flute edge. Line unpricked crust with a double thickness of heavy-duty foil. Bake 5 minutes; remove foil. Divide the egg mixture among biscuit-lined muffin cups, using about 2 tablespoons for each. , Bake at 375° for 18-20 minutes or until a knife inserted in the center comes out clean. - Preheat oven to 400 degrees F.
- Spray a regular sized muffin tin with cooking spray.
- Break a piece of bacon in thirds and cover bottom of muffin tin, it's fine that it comes up along the sides, and fine if the bottom isn't fully covered.
- Bake in oven 2 minutes.
- Pull out of oven and crack an egg in each section.
- Place salt and pepper on egg to taste.
- Put 1 Tablespoon shredded cheese on egg.
- Put 1 Tablespoon of milk on top of cheese.
- Bake for 15 -20 minutes or until the egg is set the way you like it.
