SIMPLE TURKEY DRESSING



Simple Turkey Dressing image

Bread, celery, onions, and chicken broth come together for a simple and traditional turkey dressing recipe. No need for boxed mixes with this recipe!

12 cups dried bread cubes
5 stalks Celery including leafy tops
1 large Onion (white, yellow, or red)
1/2 cup Butter
1 1/2 teaspoons ground or rubbed Sage (poultry seasoning can be substituted)
4 cups chicken broth (or water)

Steps:

  • Place bread cubes into a large bowl and set aside.
  • Place butter into a large skillet and melt over low heat.
  • Clean celery, reserving as much of the leafy tops as possible while discarding any dried out and brown tops. Place into skillet with butter.
  • Clean onion and cut into large dice. Place into the skillet with celery.
  • Turn heat up to medium.
  • Cook celery and onions until the celery begins to turn a brighter green.
  • Add sage and chicken broth.
  • Bring to a boil, then reduce heat to medium and simmer for 10 minutes. The celery and onions should still be slightly crunchy.
  • Scoop out all of the celery and onions and place into the bowl with the bread pieces.
  • Dump about half of the liquid in the pan into the bread pieces.
  • Mix well until there is no liquid in the bottom of the bowl.
  • Add the rest of the liquid and again stir until there is no liquid left in the bottom of the bowl.
  • The mixture should be fairly moist with little to no dry bread pieces.
  • If there are dry bread pieces, add 1 cup of water to the skillet and bring it to a boil, stirring well to catch any leftover bits of goodies left in the pan. Dump this over the dressing and mix until all water has been absorbed. If there are still dried pieces of bread left, I would not recommend adding more liquid.
  • Spray a baking dish with baking spray and place dressing into the dish
  • Bake the dressing at 350 degrees F until the edges are browned and crispy, about 30 to 45 minutes.

2-1/4 cups chicken broth
1/2 cup butter, cubed

DRESSING:
1 loaf (1 pound) sliced bread
1 pound bulk pork sausage
1/2 cup butter, cubed
4 cups thinly sliced celery
3 cups thinly sliced carrots
1/2 pound fresh mushrooms, chopped
1/2 pound cubed fully cooked ham
2 cups green onions
2 cups chopped pecans
1 large tart apple, chopped
1 cup chopped dried apricots
1 tablespoon rubbed sage
2 teaspoons dried marjoram
1 teaspoon dried rosemary, crushed
1 teaspoon salt
1/8 teaspoon ground nutmeg
1 cup egg substitute
1 turkey (16 to 18 pounds)
1 cup chicken broth

Steps:

  • In a small saucepan, combine the broth, butter and salt; bring to a boil. Add herbs; set aside. , Toast bread; cut into 1/2-in. cubes. Place in a bowl. In a skillet, cook sausage over medium heat until no longer pink; remove with slotted spoon and add to bread. Add butter to drippings; saute the celery, carrots, mushrooms, ham and onions for 15 minutes. , Add to bread mixture; stir in the nuts, fruit and seasonings. Add egg substitute and 3/4 cup basting sauce; mix lightly. , Stuff turkey with about 8 cups dressing. Skewer openings; tie drumsticks together. Place on rack in roasting pan. Baste with some of remaining basting sauce. , Bake, uncovered, at 325° for 5 to 5-1/2 hours or until a thermometer reads 180° for the turkey and 165° for the stuffing, basting every 30 minutes. When turkey begins to brown, cover lightly with foil. , Add broth to remaining dressing; toss to coat. Place in a greased 2-1/2-qt. baking dish; refrigerate. Remove from the refrigerator 30 minutes before baking. Cover and bake at 325° for 1 hour; uncover and bake 10 minutes.

1 skinless boneless turkey breast, about 1-1/3 pounds (PERDUE Fit 'n' Easy suggested)
1 1/4 teaspoons poultry seasoning
salt and pepper
6 tablespoons butter, divided
1/2 cup chopped onion
1 (6 ounce) package turkey stuffing mix or 1 (6 ounce) package chicken

Steps:

  • With a sharp knife, cut a deep pocket in side of breast. Rub all over with poultry seasoning, and salt and pepper to taste.
  • In large, nonstick skillet over medium heat, melt 4 tablespoons butter. Add onion and saute 2-3 minutes, until softened. Prepare stuffing mix following package directions adding onion and butter mixture.
  • Preheat oven to 350 degrees. Stuff breast and secure with toothpicks. Place any remaining stuffing in a greased, shallow roasting pan; place breast on top. Dot top of breast with remaining 2 tablespoons butter. Bake 35-40 minutes, until turkey is lightly browned and meat thermometer inserted in thickest part registers 170 degrees F.
  • To serve: remove toothpicks and slice turkey.

  • Preheat the oven to 325 degrees F. Pull the neck and giblets out of the cavity; ditch the liver and save the rest of the giblets for gravy. Dry the turkey with paper towels, then season inside and out with salt and pepper. 6 tablespoons butter
2 1/2 cups onions, finely chopped
6 tablespoons butter
3 tart apples, peeled, cored and chopped
1 lb pork sausage
3 cups cornbread, coarsely crumbled
3 cups whole wheat bread, coarsely crumbled
3 cups sourdough bread or 3 cups French bread, coarsely crumbled
1 1/2 teaspoons dried thyme
1 teaspoon dried sage
salt, to taste
black pepper, freshly ground, to taste
1/2 cup fresh parsley, chopped
1 cup pecans, chopped
2 eggs, lightly beaten
chicken stock or turkey broth, to moisten

Steps:

  • Melt 6 tablespoons butter in a large frying pan. Add onions. Cook over medium heat until onions are quite soft and tender, about 15 minutes. Transfer onions and butter to a large mixing bowl. Set aside. Melt another 6 tablespoons butter in the same frying pan. Add apple. Cook over medium heat, until lightly colored but not mushy. Transfer apples and butter to mixing bowl with onions.
  • Crumble sausage into frying pan. Cook over medium heat, until lightly browned. With a slotted spoon, transfer sausage to mixing bowl. Reserve fat. Add remaining ingredients, except eggs and stock, to mixing bowl. Mix well. Add eggs. Mix. Add enough stock to bowl to make a moist, but not runny, mixture. Add fat to stuffing if desired. Stuff a 20-lb. turkey. If cooking dressing separately from turkey, pour fat over dressing in casserole. Bake at 325 degrees Fahrenheit for 45 minutes, or until nicely browned and cooked through.

½ cup unsalted butter, softened
salt and freshly ground black pepper to taste
1 ½ quarts turkey stock
8 cups prepared stuffing

  • Preheat oven to 325 degrees F (165 degrees C). Place rack in the lowest position of the oven.
  • Remove the turkey neck and giblets, rinse the turkey, and pat dry with paper towels. Place the turkey, breast side up, on a rack in the roasting pan. Loosely fill the body cavity with stuffing. CLASSIC EASY TURKEY STUFFING

This is an easy basic stuffing recipe, that will easily stuff a 12-14 pound turkey, I have stuffed a large roasting chicken also with this recipe. If you have any remaining stuffing just bake in a small buttered baking dish, or you may wish to bake the complete stuffing recipe in a casserole dish in a 325 degree oven, covered for about 25-30 minutes then uncover and bake for about 10-15 minutes more, or until lightly browned on top. For this recipe two (1 pound) loaves of bread is enough, I just use two 400-gram loaves, make certain that the bread is a couple days old but not mouldy, or you can place it in the refrigerator overnight to help firm up for slicing. Now to this basic stuffing you can add in raisins, water chestnuts, pecans etc. If you are serving this to a crowd and baking it in the oven, I suggest to double the ingredients and bake in two separate casseroles. Please use only butter for this stuffing. This is very good, and a recipe that you will use time and again! Just a suggestion, make up an extra unbaked stuffing mixture, it will freeze well in containers or freezer bags to serve later. To reheat, thaw and bake in a greased dish, rather than in the bird at 325°F until golden brown on top.

1/4-1/2 lb bacon, chopped
3/4 cup butter
3 stalks celery, chopped
2 medium onions, chopped

2 teaspoons poultry seasoning (to taste) or 2 teaspoons rubbed sage (to taste)

1 cup low sodium chicken broth (you might use more than 1 cup)
1 1/4 cups dried cranberries (optional but really good to add)

Steps:

  • In a large frypan fry the bacon until crisp; (do not drain the drippings) remove and crumble; set aside.
  • Add 3/4 cup butter (no less than 3/4 cup!) to the bacon drippings and melt.
  • Add in chopped celery, onions and garlic; sauté until tender.
  • Add HALF of the bread cubes to the butter; stir to coat, and keep stirring with a wooden spoon until the bread cubes are lightly browned and the butter is absorbed.
  • Transfer to a large bowl (or finish in the frypan, if you have a large enough frypan to hold all ingredients) and add in remaining bread cubes, salt, pepper and poultry seasoning or sage (if using).
  • Add in crumbled bacon and the cranberries or other ingredients that you choose to use; mix to combine.
  • Drizzle with the chicken broth (mixing with a wooden spoon) until you have reached the desired moistness, you might have to add in more than 1 cup, but do not add in too much or your bread will become too "soggy".
  • Immediately stuff the turkey, and cook.
  • **NOTE** the flavor of the stuffing will vary depending on ingredients and type of bread used.
